1 lb ground beef (or 1/2 lb Beef, 1/2 lb Pork)
1/2 cup fine dry breadcrumb
1 tablespoon butter
2 medium onions
1 tablespoon minced fresh parsley
2 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon rosemary
1/2 teaspoon nutmeg
3 tablespoons flour
2 slices bacon
4 tablespoons butter
1 large carrot
1 cup beef broth
2 tablespoons sour cream
1 tablespoon flour (for thickening) or 1 tablespoon cornstarch (for thickening)

Steps:

  • Preheat oven to 375°F.
  • Grease or spray baking dish that will hold your loaf with room around the edges for veggies.
  • In large bowl, gently mix Ground Meat and Breadcrumbs until combined.
  • Peel and dice on 1 Onion , heat 1 Tbsp of Butter in hot skillet, add diced Onion and Parsley , sauté until Onion is golden brown.
  • Beat Eggs in large shallow container; add Salt, Pepper, Rosemary and Nutmeg to Egg and mix. Pour Onion/Parsley mixture and Egg mixture over Ground Meat, knead together until uniformly mixed.
  • Mold meat mixture into loaf; roll in Flour until coated on all sides.
  • Lay Bacon slices in the middle of small casserole dish, set floured Loaf on top of Bacon.
  • Peel and slice Carrot and second Onion, pour Broth into casserole dish; scatter sliced Carrot and Onion around Meatloaf.
  • Heat 4 Tbsp Butter in warm skillet.
  • Pour hot Butter over meatloaf and place dish in preheated oven.
  • Bake 1 hour (or until cooked through (at least 160 degrees - no pink should be left), basting often With 5-10 minutes cook time remaining, spread Sour Cream over Meatloaf.
  • Remove dish from oven, move meatloaf to serving dish.
  • Stir Flour or Cornstarch into the juice remaining in pan to make sauce, return to oven to thicken or transfer mixture to a pot which can go on your stove top.
  • Slice and serve while hot.

1 1/2 cups chopped onions (divided)
2 slices white bread, trimmed and diced
2 tablespoons chopped parsley
3/4 lb ground beef
3/4 lb ground pork
1 egg, beaten
2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1/2 cup dry breadcrumbs
3/4 cup hot beef broth

Steps:

  • Melt 2 tablespoons of the butter in a skillet; saute half the onions 5 minutes.
  • Mix in the diced bread and parsley; saute 2 minutes.
  • Combine this mixture with the beef, pork, egg, salt, and pepper.
  • Mix well and shape into a loaf; sprinkle with the bread crumbs.
  • Melt the remaining butter in a baking pan.
  • Place the loaf in it and add the broth and remaining onions.
  • Bake in a 375°F.

My husband loves kraut and meat loaf, so we tweeked a couple ingredients from one we found in the newspaper and came up with one we really like.

1 (10 ounce) can sauerkraut, drained
2 cups soft cubed rye bread
3/4 cup chopped onion
1/2 cup milk
1 teaspoon caraway seed
1/2 teaspoon pepper
2 lbs ground beef (you can use half beef and 1/4 veal and 1/4 pork if you prefer)

Steps:

  • Mix all ingredients together and place in abaking 8" x 10" baking dish.
  • Bake at 350 degrees for 1 1/2 hours.
  • Serve with baked potato or homemade noodles.

1/2 lb ground lean pork
1 medium onion, chopped
3 tablespoons breadcrumbs
3 tablespoons cold water
2 large eggs
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon prepared mustard
2 tablespoons chopped parsley
3 peeled hardboiled egg
4 slices bacon (cube 2 strips; cut 2 strips in half)
4 tablespoons vegetable oil
1 cup beef broth
1/4 cup hot water
1 teaspoon cornstarch
1/4 cup water
1/2 cup sour cream

Steps:

  • Mix together ground meats, onion, bread crumbs, 3 Tablespoons cold water, and eggs.
  • Flavor with salt, praprika, mustard, and parsley.
  • Blend ingredients thoroughly.
  • Flatten out meat mixture in the shape of a square; about 8 X 8 inches.
  • Arrange whole hard-boiled eggs in a row along the middle of the meat.
  • Fold sides of meat pattie over the eggs.
  • Shape meat carefully into a loaf, resembling a flat bread loaf.
  • Cook cubed bacon in a Dutch oven about 2 minutes.
  • Carefully add the vegetable oil, and heat.
  • Place meatloaf in the Dutch oven and cook until browned on all sides.
  • Cut remaining bacon strips in half and arrange over the top of the meatloaf.
  • Place in uncovered Dutch oven in a preheated 350°F oven for about 30-45 minutes.
  • While meat is baking, gradually pour hot beef broth over the top of the meatloaf; brush occasionally with pan drippings.
  • When done remove meat to a preheated platter and keep it warm.
  • Add 1/4 cup of hot water to pan and scrape all particles from the bottom.
  • Bring to a gentle boil.
  • Mix cornstarch with 1/4 cup water and add to pan.
  • Cook until bubbly and thick.
  • Remove from heat and stir in sour cream.
  • Reheat to warm (do not boil).
  • Season with salt and pepper if desired.
  • Serve the sauce (on the side), separately.

MOM'S MEATLOAF (GERMAN FALSCHE HASE)

Meatloaf served with green beans and mashed potatoes is a tried and true family pleasing comfort meal. Serve extra catsup at the table. I usually double the recipe and make two loaves in order to have extra for meatloaf sandwiches the next day. YUM! Recipe is from my mother who learned it from my Oma, growing up. P.S. My Mother's Bean and Carrot Salad made ahead is a nice side with the meatloaf sandwiches.

1 1/3 lbs ground beef (I like it with ground round)
2 eggs
3 tablespoons onions, finely chopped
salt and pepper, to taste
1 slice white bread, torn into 1/2 inch chunks
1/8-1/4 cup milk
1 slice bacon, uncooked, cut crosswise into narrow strips (1/4-inch x 1-inch slivers)
1 tablespoon fine breadcrumbs (generous, a grated hard roll, oats or wheat germ will do)
1 tablespoon catsup (generous)

Steps:

  • Preheat oven to 400 degrees F.
  • Soak white bread in enough milk to make a mush, set aside.
  • Mix together ground beef, eggs, onion, salt and pepper; blend well.
  • Add bread/milk mixture to the meat mixture.
  • Pat meat into a loaf shape and place onto baking sheet with a lip to catch drippings (line the pan with foil for easy cleanup).
  • Press bacon slivers gently into top of loaf with pointed tip of a knife.
  • Spoon catsup generously (use more or less, to taste) on top of meatloaf, then sprinkle with fine breadcrumbs (the fine breadcrumbs will help catsup from running off).
  • Bake for 50-60 minutes, until the meat is nicely browned and topping is caramelized.
  • Leftovers make scrumptious sandwiches the following day, so you may wish to double the recipe and make two loaves! My go-to bread for meatloaf sandwiches is Homepride butter-top white (while DH prefers whole-grain); spread with a little catsup and serve sandwiches with sides of My Mother's Bean and Carrot Salad (make ahead).

1 (16-ounce) can sauerkraut, drained
2 eggs, lightly beaten
1/2 cup milk
1/2 cup chopped onion
1 teaspoon caraway seeds
1/2 teaspoon ground pepper
2 tablespoons ketchup or chili sauce
2 pounds lean ground beef

Steps:

  • Preheat oven to 350°. In a large bowl, combine all ingredients except meat and mix well. Add ground beef and mix thoroughly. Pat into a thick, flat loaf approximately 10 inches long and 8 inches wide and place on a rack in a greased or foil-lined 9x13-inch pan. Bake 1 1/4 hours, or until nicely browned. Let stand 10 minutes before slicing.

3/4 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
1/4 cup chopped scallions or 1/4 cup onion
1/4 cup chopped fresh parsley, dried parsley is ok
1 beaten egg
1 1/2 teaspoons salt
1 1/4 teaspoons pepper
1/4 cup fresh breadcrumbs, which are soaked in
beef bouillon (liquid Bovril, Magi,etc.,1/2 bouillon cube and 1/4 cup water OR 1/2 teaspoon Bovril and 1/4 cup wate)
1/4 teaspoon rosemary, crushed
1 pinch nutmeg (1/8 teaspoon or less)
1/4 lb bacon
4 tablespoons butter
4 tablespoons flour
3 cups water
sherry wine (to taste)
milk
salt and pepper

Steps:

  • In a bowl, combine the meat, scallions, parsley, salt and pepper, crumbs, rosemary, nutmeg, and eggs.
  • Mix well.
  • Shape into a loaf.
  • Place half the raw bacon strips across bottom.
  • DO NOT push bacon into the meatloaf; only"place" it on top or bottom.
  • Place loaf in roasting pan.
  • Top with rest of bacon strips.
  • Bake uncovered 1 to 1 1/2 hours at 350°F.
  • If bacon isn't crisp enough on top, return to oven at 450°F for another 5-10 minutes or so.
  • Then remove from oven and drain juices into heavy glass bowl.
  • Strain grease off the drippings, and save it.
  • Prepare gravy (Optional).
  • Gravy: Melt 4 Tablespoons butter in a small pot, and add 4 Tablespoons flour.
  • Stir well to a medium colored roux.
  • Quickly,add the drippings (reserved juices), and enough water"to make 3 cups"; a little at a time.
  • Add a little sherry wine, some Bovril (beef cube) flavoring, salt, pepper, and milk.
  • Simmer and whisk often while thickening.

MIDWESTERN GERMAN MEATLOAF

I clipped the original recipe from the newspaper many years ago. It is another from Marcia Adams. I've changed it a bit since then, but not much...it is hard to improve on anything by Marcia Adams.

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl combine all of the ingredients. (Go on - use your hands -- you can't make meatloaf any other way!).
  • Form meat mixture into a loaf and place into a casserole dish.
  • Bake for 50-60 minutes.
  • Nice with scalloped potatoes and steamed green beans.
