EASY SWANSON CHICKEN NOODLE SOUP
I found this recipe in a recent AARP magazine and thought I would give it a try. It was so very easy and I wanted to archive it here for furture use and for my daughter if she ever wants to know how to make it. Make it easy on yourself and buy a rotisserie deli chicken and shred that.

Steps:
- Mix broth, black pepper, carrot, celery onion & garlic powder in saucepan.
- Heat to a boil.
- Stir in noodles and chicken.
- Cook over medium heat 10 minutes or until noodles are done.
- Sprinkle with dried dill or parsley.
- ORIENTAL VARIATION; add a little fresh grated ginger, crushed garlic clove, a shot of soy sauce and some crushed red pepper. Don't use broad noodles use linguine or spaghetti.
- MEXICAN VARIATION; stir in some salsa and garnish with chopped cilantro.

- Heat the broth, black pepper, carrot and celery in a 2-quart saucepan over medium-high heat to a boil.
- Stir the noodles and chicken into the saucepan. Reduce the heat to medium. Cook for 10 minutes or until the noodles are tender.
- Asian Soup: Add 2 green onions cut into 1/2-inch pieces, 1 clove garlic, minced, 1 teaspoon ground ginger and 2 teaspoons soy sauce. Substitute uncooked curly Asian noodles for egg noodles.
- Mexican Soup: Add 1/2 cup Pace Chunky Salsa, 1 clove garlic, minced, 1 cup rinsed and drained black beans and 1/2 teaspoon chili powder. Substitute 2 corn tortillas (4 or 6-inch) cut into thin strips for the noodles, adding them just before serving.
- Italian Tortellini Soup: Add 1 can (about 14 1/2 ounces) diced tomatoes, drained, 1 clove garlic, minced, 1 teaspoon dried Italian seasoning, crushed and 1 cup spinach leaves. Substitute 1/2 cup frozen cheese tortellini for egg noodles. Serve with grated Parmesan cheese.

GERMAINE SWANSON'S CHICKEN SOUP

Steps:
- Place onion directly on a gas burner or under an electric broiler, and roast it, turning with tongs, until it is lightly browned on all sides.
- Cut the ginger in half lengthwise. Using a side of a heavy cleaver or chef's knife, smash ginger all over. This will release its full flavor.
- Skin chicken bones, and rinse well. Place bones, onion, ginger and spices in a large soup pot. Add 3 gallons of water, and bring to a boil over high heat. Lower heat to medium-low, and simmer for 3 hours, skimming foam and fat off the surface with a slotted spoon until the stock becomes clear and is reduced by half.
- Strain stock through a fine sieve, and discard the solids. Refrigerate overnight. Next day, remove all fat from the surface.
- Bring stock to a boil, and cook 5 minutes; then, add sugar and salt, and serve.
