1 package (3 ounces) lemon gelatin
1 package (3 ounces) orange gelatin
3 cups cubed pound cake (1-inch cubes)
2-1/4 cups whipped topping
2 tablespoons sugar
1/8 teaspoon ground cinnamon
6 maraschino cherries with stems

Steps:

  • Prepare gelatins separately according to package directions. Pour into separate ungreased 9x5-in. pans. Refrigerate until set. Cut into 1-in. cubes. , In each of six 1-1/2-cup parfait glasses or dessert dishes, layer 1/4 cup cake cubes, 1/3 cup cubed orange gelatin, 3 tablespoons whipped topping, 1/3 cup cubed lemon gelatin, 1/4 cup cake cubes and 3 tablespoons whipped topping. Combine sugar and cinnamon; sprinkle over whipped topping. Top with a cherry.

4 cups pomegranate juice
One 1-ounce box (four .25-ounce envelopes) unflavored gelatin
1/2 cup pomegranate seeds
1/2 cup halved grapes
1 quart Greek yogurt
1 1/2 cups sliced strawberries
1 1/2 cups blueberries

Steps:

  • Heat 3 cups of the pomegranate juice in a small saucepan until hot. Add the remaining cup of pomegranate juice to a large bowl and sprinkle the gelatin packets over the juice. Let sit for 1 minute. Add in the hot juice and stir until the gelatin is completely dissolved. Pour the mixture into a 9-by-13-inch pan. Sprinkle with the pomegranate seeds and grapes and refrigerate until fully set, at least 3 hours or overnight.
  • Put the Greek yogurt in a large bowl and whip with an electric mixer until fluffy. Cut the pomegranate gelatin into 1 1/2-inch cubes. Layer the gelatin, whipped yogurt, sliced strawberries and blueberries in 8 parfait or juice glasses.

LEMON GELATIN PARFAITS

The lemon gelatin might sound like nothing more than lemon-flavor Jell-O (and you can certainly use lemon Jell-O if you want to save a little money and a tiny bit of effort over juicing lemons or buying lemon juice), but in this case "authentic" is also "easy," and the real flavor of lemon is much nicer than the artificial flavor used in Jell-O and other brands.

3 3/4 cups cold water, divided
3 (1/4 ounce) envelopes unflavored gelatin
1 1/2 cups sugar, plus
3 tablespoons sugar, divided
1 1/2 cups fresh lemon juice (from about 9 lemons)
1 teaspoon grated lemon zest
yellow food coloring (optional)
3/4 cup heavy cream
1 sprig of fresh mint (to garnish) (optional)
lemon zest, curls (to garnish) (optional)
lemon slice (to garnish) (optional)

Steps:

  • Put 1/2 cup of the water in a small bowl, sprinkle the gelatin over it and stir. Let soften for 2 minutes. Meanwhile, in a medium saucepan combine the remaining 3 1/4 cups of water, 1 1/2 cups of the sugar, the lemon juice and the lemon zest and bring to a boil. Remove from heat and add the softened gelatin, stirring for 1 minute or more to dissolve all lumps. Stir in a few drops of food coloring, if desired.
  • Pour into a heat-safe medium-size bowl, let cool, cover with plastic wrap and refrigerate until firm (at least 6 hours).
  • Just before serving, whip the cream with the remaining 3 tablespoons of sugar, until it holds stiff peaks.
  • Fill goblets or sundae glasses halfway with gelatin, top with half of the whipped cream, then fill with more gelatin and top with remaining whipped cream. Garnish with mint sprigs, lemon zest curls or slices and serve.

Homemade Blackberry Gelatin & Chilled Blackberry Parfaits image

From Bon Appetit, August 1998. Make the gelatin at least one day ahead so that it has time to set. For a sophisticated dessert, layer the blackberry gelatin with sweetened vanilla whipped cream and a few sweetened blackberries in parfait glasses or wine glasses. If only making gelatin, will serve four.

6 cups fresh blackberries or 6 cups frozen blackberries
1 cup white grape juice
1 cup sugar
1/2 teaspoon freshly grated lemon zest
7 tablespoons white grape juice
5 teaspoons unflavored gelatin
3 cups blackberries
4 tablespoons sugar
sweetened vanilla whipped cream

Steps:

  • Puree blackberries in processor. Pour puree into fine strainer set over 4-cup measuring cup. Press on solids to extract as much as possible. Discard solids remaining in strainer. Measure 3 cups puree (reserve any remaining puree for another use).
  • Stir 1 cup grape juice, sugar and lemon zest into blackberry puree.
  • Pour remaining 7 tablespoons grape juice into small saucepan. Sprinkle gelatin over; let stand until gelatin softens, about 10 minutes. Stir gelatin mixture over medium-low heatuntil gelatin dissolves, about 1 minute (do not boil).
  • Gradually whisk warm gelatin mixture into puree mixture. Transfer to 8x8x2-inch glass baking dish. Cover and refrigerate overnight. (Can be made 2 days ahead. Keep chilled.
  • Variation: Blackberry Parfaits.
  • Mix 3 cup blackberries and 4 T sugar in medium bowl. Let stand at room temperature at least 1 hour and up to 3 hours, tossing occasionally.
  • Spoon generous 1/4 cup blackberry gelatin into each of 8 parfait glasses or wine glasses. Top with a few sweetened blackberries. Spoon about 1/3 cup sweetened vanilla whipped cream over. Repeat layering. Top with a few more berries. Serve.

PEAR AND SWEET WINE GELATIN PARFAITS



Pear and Sweet Wine Gelatin Parfaits image

Jell-O has been glimmering and shimmering since 1897, and it took America by storm during the 1920s: That was the era for molded salads and desserts. Jell-O has been a staple in the American pantry since then, and in 1997, in celebration of its hundred-year anniversary, the company brought out a sparkling white grape flavor that is mixed with seltzer rather than water, giving it an appealing spritz. Here we've added sweet Muscat wine, too.

Yield Makes 6 servings

Number Of Ingredients 6

1 6-ounce package sparkling white grape-flavored Jell-O
1 1/4 cups sweet Muscat wine (such as Quady Essensia) or other sweet dessert wine
1/2 cup water
2 1/2 cups seltzer or club soda
2 large ripe pears, peeled, cored, chopped
Fresh mint sprigs (optional)

Steps:

  • Place Jell-O in large bowl. Bring 1 cup Muscat and 1/2 cup water to boil in medium saucepan. Pour over Jell-O in bowl; stir until dissolved, about 2 minutes. Cool to room temperature, whisking occasionally. Stir in seltzer (mixture will be foamy). Refrigerate until Jell-O is set, at least 6 hours or overnight. Mix chopped pears and remaining 1/4 cup Muscat in small bowl. Spoon half of Jell-O into 4 wine goblets or parfait glasses, dividing equally. Top with pear mixture, then remaining Jell-O. Garnish with mint sprigs, if desired.
