BACON WRAPPED PORK ROAST
A savory pork roast that fills the entire home with an appetizing aroma. This dish is perfect for holidays, special dinners, and is so simple to make it can be served on any day for any occasion! The roast is not only pleasing to the taste, but it's appearance is sure to impress any guest. This dish does take a bit to cook, but the end result of slowly roasting the pork will be worth the wait!

Steps:
- Preheat oven to 375 degrees.
- If pork loin is thick, cut it in half vertically so that there are 2 long, but thinner pieces of meat.
- With a knife, poke small but deep holes all throughout the meat
- Insert sliced garlic pieces into these holes.
- Season meat with salt and pepper.
- Wrap bacon slices all around the meat, making sure that no part of the loin is exposed. Bacon slices should be wrapped closely together. For two pieces of roast, it should take about a pack of bacon.
- Finely chop fresh thyme and sprinkle over meat.
- Sprinkle savory over roast.
- Take a large pan and pour in oil and wine, mixing them together.
- Place roast in pan and cover with aluminum foil (do not poke holes).
- Bake the covered roast for 2 1/2 hours, occasionally lifting cover to check liquid levels. Add water to pan as wine and oil diminishes.
- After 2 1/2 hours, remove aluminum foil from pan and continue to cook roast for an additional 30 minutes. This will cause the bacon to become crispy. Add a little wine or water during the last 30 minutes. The end result will be a crunchy outside, with a tender, juicy inside.
- Slice and serve with mashed potatoes, using the juices from the pan as a gravy.
CHEF JOHN'S GARLIC-STUDDED ROAST PORK
Garlic-studded, herb-rubbed pork shoulder is such a great cut of meat. I cooked it in a pan without liquid, without covering it, and without cooking it at a really low temperature. I didn't want it to be falling apart and wet; I wanted it to be solid, chewy and crusty.

- Preheat oven to 325 degrees F (165 degrees C).
- Cut about 6 holes per side into pork roast with a sharp knife and insert garlic clove halves into the holes. Rub roast with 1 tablespoon olive oil. Season all sides of roast with kosher salt and a generous amount of black pepper, Italian seasoning, rosemary, and cayenne pepper. Place into a roasting pan.
- Roast in the preheated oven for 3 hours. Turn off the oven with roast inside and leave it to rest for 1 hour. Refrigerate meat overnight.
- Cut cold pork into 1/2-inch-thick slices. If any garlic appears on the cut surface of the meat, pick it out so it doesn't burn. Season slices with salt.
- Heat 1 tablespoon olive oil in a heavy skillet over medium-low heat and sear pork slices in the hot oil until browned and crusty, about 10 minutes per side.
- Toss lettuce with tomatoes in a bowl and drizzle with red wine vinegar; toss again to coat.
- Heat beans in a saucepan over low heat. Layer about 1/3 cup white beans into a large, shallow soup plate; top beans with a slice of pork shoulder and about 1/4 cup lettuce mixture.

BACON-WRAPPED PORK ROAST WITH POTATOES AND ONIONS

- Preheat the oven to 400 degrees F.
- Coat the pork with olive oil and sprinkle with salt and pepper. Arrange the parsley and sage leaves along the top of the roast.
- Lay the bacon horizontally in a roasting pan, with the strips touching. Set the pork roast in the center of the pan and fold the bacon over to wrap the roast.
- Add the potatoes and onions to the pan, to border the roast. Transfer to the oven and roast until the bacon is crisp and the pork reaches an internal temperature of 140 degrees F on an instant-read thermometer, about 1 1/2 hours.
- Transfer the roast to a cutting board and rest for 10 to 15 minutes. Slice and serve with the potatoes and onions.
GARLIC-STUFFED PORK ROAST WITH GLAZE
For even more flavor after seasoning the roast cover and refrigerate overnight -- for best results use a meat thermometor for this, stuff the roast with as many cloves as desired, I say the more the better! --- NOTE if you prefer lots of glaze, use 1 cup sugar, 2 tablespoons cornstarch, 1/2 cup vinegar, 1/2 cup water and 1/4 cup soy sauce, cook as directed.

- Make small slits all over in the roast then stuff whole or half garlic cloves into each slit.
- Rub the roast with olive oil.
- In a small bowl combine the sage with salt, pepper, garlic powder and cayenne pepper; rub the roast all over with the spice mixture.
- Place the roast in a roasting pan, then let sit out on the counter for a few hours.
- Preheat oven to 325 degrees F.
- Set oven rack to middle position.
- Roast for about 3 hours or until the internal temperature reaches 145 degrees F (the temperature will rise more after removing from the oven).
- For the glaze: while the roast is cooking in a small saucepan combine the sugar with cornstarch, vinegar, water and soy sauce; bring to a simmer over medium heat stirring occasionally.
- Cook until bubbly and thickened.
- Brush the roast 3-4 times during cooking.
- The last 30 minutes of cooking pour the remaining glaze over the roast.
- Allow the roast to sit for about 10 minutes before slicing.

Buy a pork loin roast that measures about 9 inches long and is between 4 and 5 inches in diameter. Oscar Mayer Naturally Hardwood Smoked Bacon is our winning thin sliced bacon. Do not use thick cut bacon here. The peaches needn't be thawed before making the sauce. The pork needs to cure for at least an hour before cooking. With regards to wrapping the roast in bacon, make sure the roast is completely covered by the bacon strips. Layout the bacon strips on a cutting board to match the length of the roast. Bring the ends of the strips of bacon up and around the sides of the roast. As the meat cooks, the bacon slices will fuse together and adhere to the roast.

- Combine 4 teaspoons salt and sugar in bowl. Remove fat cap and silverskin from roast. Rub roast with salt-sugar mixture, wrap in plastic wrap, and refigerate for at least 1 hour or up to 24 hours.
- Bring peaches, 1 cup wine, 1/2 cup sugar, 1/3 cup vinegar, thyme sprigs, and 1/2 teaspoon salt to simmer in medium saucepan over medium-high heat. Reduce heat to medium and cook at strong simmer, stirring occasionally, until reduced to about 2 cups and spatula leaves trail when dragged through sauce, about 30 minutes. Remove from heat and discard thyme sprigs. Reserve 2 tablespoons of liquid portion of sauce (without peach segments) in small bowl for glazing. Cover and set aside remaining sauce.
- Meanwhile, adjust oven rack to upper-middle position and heat oven to 250 degrees. Line rimmed baking sheet with aluminum foil and spray with vegetable oil spray. Unwrap roast and pat dry with paper towels. Sprinkle with herbes de Provence and 1 teaspoon pepper.
- Arrange bacon slices on cutting board parallel to counter's edge, overlapping them slightly to match length of roast. Place roast in center of bacon, perpendicular to slices. Bring ends of bacon up and around sides of roast, overlapping ends of slices as needed.
- Place bacon-wrapped roast, seam side down, in center of prepared sheet. Roast until center of pork registers 90 degrees, 30 - 40 minutes. Remove roast from oven and increase oven temperature to 475 degrees.
- Brush top and sides of roast with reserved 2 tablespoons sauce. Once oven reaches temperature, return pork to oven and roast until bacon is well browned and meat registers 130 degrees, 15 - 20 minutes longer. Transfer roast to wire rack and let rest for 15 minutes.
- Stir mustard into sauce and rewarm over low heat. Transfer roast to carving board and cut into 1/2 inch-thick slices. Serve with peach sauce.

- For the pork: Put an oven rack in the lower 1/3 of the oven. Preheat the oven to 350 degrees F.
- In a small bowl, add the Dijon mustard, whole-grain mustard, honey, garlic, and rosemary and mix together until smooth. Arrange the pork in a 9 by 13-inch baking pan and spread the mustard mixture evenly over the pork. Starting on 1 side, lay a piece of bacon, lengthwise, on the pork. Lay another slice of bacon on the pork making sure to slightly overlap the first piece. Continue with the remaining bacon, until the pork is fully covered in bacon. Using 3 pieces of kitchen twine, secure the bacon in place. Roast for 1 hour. Cover the pan, loosely, with foil and roast for another 10 to 20 minutes until an instant-read thermometer inserted into the thickest part of the pork registers 160 degrees F. Remove the pan from the oven and transfer the roast to a cutting board. Cover the pan with foil and allow the pork to rest for 20 minutes. Remove the kitchen twine and slice the pork into 1/2-inch thick slices.
- For the salad: In a small bowl, whisk together the lemon juice and oil until smooth. Season with salt and pepper, to taste.
- Put the arugula on a large platter and drizzle with the dressing. Arrange the pork slices on top and serve.

- 1. Preheat oven to 450 degrees F. I was recently introduced to SUMAC THROUGH THE USE OF A RECIPE FOUND HERE AT JUST A PINCH. It is used in Mediterranean, Indian, & Lebanese cooking and often is substituted for Lemon or Vinegar. It can be added to marinades, soups dips, stews, salad dressings rice and various different casseroles. Need more Info then Google or Bing it. Since I ordered it, and have quite a bit, I decided to find new and creative ways to use it, and this is one of my first recipes using it.
- 2. Combine spices in a small bowl.
- 3. Stir to blend together.
- 4. Peel garlic cloves.
- 5. Cut into thin slivers.
- 6. Make deep gashes into pork roast with the tip of a sharp knife.
- 7. Insert garlic slivers into each gash. Make enough gashes and slivers to cover entire roast. Don't forget to push them deep into the roast. I am merely showing what it looks like when studded. But push them all in to permeate the roast.
- 8. Spray roast with non stick cooking spray, or you can use olive or canola oil, but since I used bacon, I chose to use the cooking spray.
- 9. Sprinkle blended spices over entire roast
- 10. Arrange bacon slices over entire roast. Then in a shallow pan like a jelly roll type line with foil, add a cooking rack and spray with non stick cooking spray.
- 11. Place prepared roast on baking rack. Then place in preheated oven and roast for 15 minutes. The smell is intoxicating. After it has cooked and rested I sliced it down into these THICK JUICY PIECES, AND THE BACON KEPT IT VERY MOIST.
- 12. REDUCE THE OVEN TEMPERATURE TO 350 degrees F. and continue to cook till internal temperature reaches about 155 degrees F. or about 1 1/2 hours, roast will continue to rise about 10 degrees after removing it from the oven. Cover loosely with aluminum foil and let rest at least 10 minutes to redistribute juices, BEFORE CARVING WITH KNIFE.
- 13. Prepare glaze by creating a creamy base by blending the mustard with the sherry, then adding the brown sugar, rum, corn syrup and butter. Then stir to blend and place over medium low heat, till mixture becomes thick and syrupy, about 10 to 15 minutes stirring to prevent sticking.
- 14. Glaze Roast and garnish with chopped chive if desired.
