3 sprigs rosemary, leaves picked and finely chopped
3 cloves garlic, smashed and finely chopped
Pinch crushed red pepper flakes
Extra-virgin olive oil, plus high quality finishing oil, for garnish
2 (20-ounce) porterhouse steaks or other large steaks with a bone
Kosher salt, plus coarse sea salt, for garnish

Steps:

  • In a small bowl, combine the rosemary leaves, garlic, crushed red pepper and enough olive oil to make a loose paste. Slather the steaks with the mixture and sprinkle them generously with salt. Let the steaks hang out outside the fridge to come to room temperature.
  • Preheat the grill to medium-high. Use a wire grill brush to loosen any crud and soot. Wipe the grill down with an oiled side towel to pick up any bits of loosened crud.
  • Put the steaks on a hot spot on the grill to get a great sear and really create BROWN FOOD! Once both sides of the steak are really nice and brown, move the steak to a cooler part of the grill to allow the steaks to cook to desired temperature. About 5 to 6 minutes on each side for medium-rare.
  • Remove the steaks from the grill and let rest for 5 to 10 minutes.
  • Cut the steak off the bone, slice across the grain and divide among 4 serving plates. Drizzle the steak with a little big fat finishing oil and a sprinkling of sea salt.

1 flank steak (or skirt steak)
1 shallot, roughly minced
6 garlic, roughly minced
6 tablespoons olive oil
2 tablespoons fresh rosemary, chopped
2 teaspoons kosher salt
fresh black pepper

Steps:

  • Marinade: Combine the shallot, garlic, olive oil and rosemary in a food processor. (roughly chop the ingredients before as the food processor will leave uneven chunks).
  • Poke about 20 holes in the steak with a fork and repeat on the other side.
  • Sprinikle the steak on both sides with 2 tsp kosher salt (or 1 tsp of table salt) Spread the marinade on both sides of the steak and refrigerate for 1 - 24 hours.
  • Heat grill for about 10 minutes. Clean and re-season the grill with olive oil.
  • With a papertowel, remove as much of the marinade as possible. (otherwise the garlic, shallot and rosemary would burn). Grind some fresh pepper over the steak.
  • Sear 4 - 6 minutes on the first side. Turn and cook 3 - 4 minutes on the other side. Watch carefully as it can burn quite easily. With a paring knife, cut a small slit in the middle and check for doneness. Move to a cooler part of the grill and continue until rare.
  • Remove from the grill while still pink -- cover with tinfoil and let sit for 5 minutes. (the steak will continue cooking while in the resting stage.
  • Cut the steak across the grain.

Some mornings you're looking at a package of round steaks or some other tough cut that NEEDS a marinade. And you've got 5 minutes before you have to walk out the door so there isn't time to measure out a lot of ingredients for something complexly seasoned. This marinade will make the cut because its almost as easy as the bottled kind. But you won't feel shortchanged at dinner time because it tastes like more work than it really is. Also good on chicken.

1/2 cup white wine
1 teaspoon minced garlic (or 1 clove garlic put through the press)
1 teaspoon dried rosemary
1/4 cup vegetable oil (I prefer olive oil)

Steps:

  • Mix all ingredients in a plastic, zipper bag.
  • Add steaks or chicken pieces and squash around to make sure that all surfaces are coated. Seal bag, removing as much air as possible.
  • Marinate, refrigerated, for 6-8 hours (flip bag halfway through if you have the opportunity.
  • Grill or broil meat according to your usual preference.
  • Note -- I use any sort of white wine that I happen to have on hand. The flavor will vary slightly but it will be good regardless of whether you used white zinfandel, Riesling, Chablis, or ?

  • For steak:
  • Combine first 5 ingredients in glass baking dish. Add steak and turn to coat. Season generously with pepper. Cover and refrigerate steak overnight, turning occasionally.
  • For peppers and onions:
  • Heat oil in heavy large skillet over medium-high heat. Add onions and sauté 4 minutes. Add peppers and sauté until beginning to soften, about 8 minutes. Add marjoram and dried red pepper. Season to taste with salt and pepper and stir 2 minutes. Remove from heat.
  • Bring steak to room temperature. Preheat broiler 5 minutes. Remove steak from marinade; pat dry. Transfer marinade to heavy small saucepan. 6 tablespoons olive oil
6 medium cloves garlic, minced or pressed through a garlic press (about 2 tablespoons)
1 medium shallot, minced (about 3 tablespoons)

1 flank steak (about 2 pounds), patted dry with paper towels
2 teaspoons kosher salt

Steps:

  • 1. Puree all marinade ingredients in blender until smooth, scraping down blender jar as needed. 2. Place steak on rimmed baking sheet or in large baking dish. Using dinner fork, prick steak about 20 times on each side. Rub both sides of steak evenly with salt and then with paste. Cover with plastic wrap and refrigerate at least 1 hour or up to 24 hours. 3. Using large chimney starter, ignite about 6 quarts (1 large chimney, or 2 1/2 pounds) charcoal briquettes and burn until covered with thin coating of light gray ash, about 20 minutes. Empty coals into grill; build two-level fire by arranging coals to cover one half of grill. Position grill grate over coals, cover grill, and heat grate for 5 minutes; scrape grate clean with grill brush. Grill is ready when coals are hot (you can hold your hand 5 inches above grate for just 2 seconds). 4. Using paper towels, wipe paste off steak; season both sides with pepper. Grill steak directly over coals until well browned, 4 to 6 minutes. Using tongs, flip steak; grill until second side is well browned, 3 to 4 minutes. Using paring knife, make small cut into thickest part of meat; if meat is slightly less done than desired, transfer steak to cutting board (meat will continue to cook as it rests). If steak is significantly underdone, position so that thinner side is over cool side of grill and thicker side is over hot side; continue to cook until thickest part is slightly less done than desired, then transfer steak to cutting board. 5.   • Broil steak to desired degree of doneness-- about 10 minutes per side for rare (125°F).
  • Transfer to platter and let it stand for 10 minutes.
  • Bring marinade to a boil.
  • Thinly slice steak across the grain.
  • Pour marinade over steak slices and serve (and/or serve marinade alongside).

½ celeriac (about 350g), peeled, halved, ends trimmed and spiralized into thick noodles, then cut to be the size of fries
1 tbsp olive oil
2 sprigs of rosemary , leaves picked and finely chopped
2 sirloin steaks (about 200g each)
150g sliced kale
30g butter , softened at room temperature
1 garlic clove , crushed
handful of parsley , finely chopped
zest of ½ lemon

Steps:

  • Heat oven to 200C/180C fan /gas 6. Mix the butter in a bowl with the garlic, parsley and lemon zest. Scrape out onto a piece of cling film, roll into a sausage and keep in the fridge until needed.
  • Toss the spiralized celeriac on a large baking tray in 1⁄2 tbsp oil, rosemary and some seasoning then spread out the celeriac, leaving enough room between the 'fries' so that they cook evenly. Roast in the oven for 20 mins until tender and crisped.
  • Heat a large frying pan over a high heat while you season the steaks. Once searing hot add the remaining oil and the steaks. Cook for 2 mins on each side for medium rare, then set aside on a plate to rest.
  • While the steak is resting, put the kale in a large microwaveable bowl with 50ml water. Cover then cook on high for 3-4 mins, or until wilted. Slice the butter into rounds. Serve on top of the steak and kale alongside the celeriac fries.

1/2 medium red onion, finely diced
2 cloves garlic, minced
6 plum tomatoes, coarsely diced
1/4 cup ketchup
2 tablespoons Dijon mustard
2 tablespoons dark brown sugar
6 tablespoons hoisin sauce
2 tablespoons cider vinegar
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon cayenne
1 tablespoon ancho chile powder
1 teaspoon pasilla chile powder
1 tablespoon Worcestershire
2 (2 1/2 pound) porterhouse steaks
Salt and freshly ground pepper, to taste
1/2 pound red potatoes B size, blanched
1/2 pound Yukon gold B size, blanched
1/2 pound purple potatoes B size, blanched
1/2 cup olive oil
2 tablespoons minced garlic

4 sturdy rosemary branches
1/3 cup lemon juice
1 teaspoon honey

Steps:

  • In a large saucepan, over medium high heat, place the oil, onions and garlic and heat them until browned. Add the tomatoes and cook for 15 minutes. Add the ketchup, mustard, sugar, hoisin sauce, vinegar, soy sauce, honey, cayenne, chile powders and Worcestershire sauce and cook 15 minutes. Puree the mixture in a food processor. Pour into a bowl and allow to cool at room temperature. This makes about 5 cups. Marinate the steaks in the hoisin barbecue sauce for 1 hour. Remove the steaks from the marinade and season with salt and pepper. Grill the steaks over a medium heat wood fire for about 5 minutes on each side while basting with the sauce.
  • Rosemary and Garlic Fingerling Potatoes: Split potatoes in half and place in medium size bowl. Add 2 tablespoons oil and the garlic. Season with salt and pepper. Strip the leaves, except at the top, of the rosemary. Mince 1 tablespoon of rosemary leaves and add to the potatoes. Starting with the thicker part of the rosemary stem, skewer the potatoes. Alternate 1 red, 1Yukon gold and 1 purple potato, dividing the potatoes equally among the 4 rosemary branches. Grill the skewered potatoes over medium heat for 25 minutes until skins blister. Remove from heat. Mix lemon juice, remaining oil, honey, and salt and pepper to taste and pour over the potatoes while they are still hot.

A common way to prepare flank steak is to marinate it in a bottle of Italian-style salad dressing. But while the resulting flavor can be interesting, the acid in the vinegar can ruin the texture, making the exterior mushy and gray. We wanted to develop a fresh, Mediterranean-style marinade without acid-a marinade that would really boost flavor without over-tenderizing the meat. We turned to the optimal method for cooking a flank steak-use a two-level fire (which lets you move the thin part of the steak to the cooler side of the grill once it is done), cook the steak only to medium-rare to keep it from getting tough, and let the steak rest before slicing to reduce the loss of juices. Now we could concentrate on developing and applying an acid-free marinade. Because fat carries flavor so well, we knew oil would be a key ingredient-the challenge was to infuse Mediterranean flavors (garlic, shallots, and rosemary) into the oil and then into the steak. We developed two key steps. First, we minced the aromatics and combined them with the oil in a blender to create a marinade paste. Next, we invented a novel "marinating" technique- prick the steak all over with a fork, rub it first with salt and then with the marinade paste, then let it sit for up to 24 hours. After marinating, the paste is wiped off to prevent burning, and the steak is ready for the grill. Our technique was so successful, we were free to create two more marinades-one with Asian flavors, and the other with a smoky-spicy kick.

Using tongs, flip steak; grill until second side is well browned, 3 to 4 minutes. Using paring knife, make small cut into thickest part of meat; if meat is slightly less done than desired, transfer steak to cutting board (meat will continue to cook as it rests). If steak is significantly underdone, position so that thinner side is over cool side of grill and thicker side is over hot side; continue to cook until thickest part is slightly less done than desired, then transfer steak to cutting board.
  • Loosely tent steak with foil; let rest 5 to 10 minutes. Using sharp chef's knife or carving knife, slice steak about 1/4 inch thick against grain and on bias. Serve immediately.

This recipe is a favorite with my family. The potato cakes made it fun and different, and the kids love to help make them.-Kristin Arnett

3/4 cup olive oil
3/4 cup soy sauce
1/3 cup balsamic vinegar
12 garlic cloves, minced
6 teaspoons dried rosemary, crushed
1 beef top sirloin steak (2 inches thick and about 3-1/2 pounds)
Salt and pepper to taste
POTATO CAKES:
3 pounds white potatoes (about 6 large)
12 green onions, chopped
2 eggs
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil, divided
ONIONS AND PEPPERS:
2 large onions, cut into 1-inch pieces
1/4 cup olive oil
2 medium sweet red peppers, cut into 1-inch pieces
1 medium green pepper, cut into 1-inch pieces
3/4 teaspoon dried marjoram
1/8 teaspoon dried red pepper flakes
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the first 5 ingredients. Pour half of the marinade into a shallow dish. Season steak with salt and pepper; add to dish and turn to coat. Cover and refrigerate overnight, turning occasionally. Cover and refrigerate remaining marinade for serving., For potato cakes, place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook until just tender, about 20 minutes. Drain and refrigerate until chilled. Peel and shred potatoes. Transfer to a large bowl; add green onions. In a small bowl, beat the eggs, cumin, salt and pepper; gently mix into potatoes. Form into round patties (about 2-1/2 in. diameter). Cover and refrigerate up to 6 hours., In a large skillet over medium-high heat, fry cakes in batches in 2 tablespoons oil for 8 minutes per side or until golden brown. Add remaining oil as needed., For onions and peppers, in a large skillet, saute onions in oil for 4 minutes. Add peppers; saute for about 5 minutes or until peppers begin to soften. Add marjoram and red pepper flakes. Season with salt and pepper; cook and stir 2 minutes longer. Remove from the heat and keep warm., Let steak stand at room temperature for 30 minutes. Discard marinade; pat steak dry. Broil steak 6 in. from the heat for 12 minutes on each side or until steak reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let stand for 10 minutes. Thinly slice steak across the grain; arrange on a serving platter with onions and peppers and potato cakes. Heat the reserved marinade and serve with steak.

¾ cup plus 7 Tbsp. olive oil, divided
½ cup 1" pieces rosemary sprigs
1½ lb. hanger or flank steaks, cut into four 6-oz. steaks
Kosher salt, freshly ground pepper
6 large garlic cloves, sliced
Coarse sea salt (such as Maldon)

Steps:

  • Heat ¾ cup oil and rosemary in a small saucepan over medium heat until oil begins to bubble and an instant-read thermometer registers 140 F, about 2 minutes. Let steep at room temperature for at least 2 hours or cover and chill overnight (the longer it steeps, the more flavorful it will be). Strain oil; discard rosemary. Set rosemary oil aside. Rub steaks with 1 Tbsp. olive oil; season generously with kosher salt and pepper. Heat 2 Tbsp. oil in a large heavy skillet over high heat until it begins to shimmer. Quickly sear steaks on all sides and transfer to a cutting board (they will still be quite rare; you'll finish cooking them shortly). Let rest for 10 minutes. Clean and dry skillet. Cook remaining 4 Tbsp. oil and garlic in skillet over medium heat, turning occasionally, until garlic is dark brown but not burnt, 3-4 minutes. Remove pan from heat; discard garlic. Transfer 2 Tbsp. garlic oil to a small bowl; reserve. Cut steaks against the grain into ½"-thick slices. Heat remaining garlic oil in skillet over medium heat until it shimmers. Add half of sliced steak to skillet and cook, turning once, until cooked to desired doneness, 1-2 minutes for medium-rare. Add 1 Tbsp. rosemary oil; toss. Transfer steak and oil to a platter. Repeat with reserved garlic oil, steak, and 1 Tbsp. rosemary oil. Sprinkle with sea salt and drizzle with more rosemary oil, if desired.
