This fresh and tangy salad dressing is low in calories (just 60 per serving) and in fat (5 grams per serving). It also does double duty-it's great as a dip with vegetable crudites.

3/4 cup 2-percent Greek yogurt
2 tablespoons rice vinegar
2 tablespoons olive oil
1/2 cup chopped fresh chives (from a small bunch)
1/2 cup chopped fresh parsley
1 small garlic clove
Kosher salt and freshly ground black pepper

Steps:

  • Combine the yogurt, 2 tablespoons water, rice vinegar, olive oil, chives, parsley, garlic and 1/2 teaspoon each salt and pepper in a blender or food processor and blend until smooth. Cover and chill for 30 minutes before serving. The dressing will keep, refrigerated, for up to 3 days.

If you've been following my recipes, you'll know that I may be responsible for Boursin being packed into your fridge. Once I discovered this French-style garlic herb cheese went way beyond the charcuterie board and was such a special ingredient for cooking, I started using it in many of my recipes. And the crowd went wild. Now you'll save on costs and make something so comparable, you'd swear it was the same thing.

2 8-ounce bricks of cream cheese, at room temperature so it's softened (see Jeffrey's Tips)
2 sticks (8 ounces) salted (or unsalted) butter, at room temperature so it's softened (see Jeffrey's Tips)
1/4 cup grated Parmesan cheese
3 cloves (1 tablespoon) garlic, minced or pressed
1 teaspoon dried parsley flakes
1 teaspoon dried dill weed
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning

Steps:

  • Add all the ingredients to a large mixing bowl. Take a silicone, rubber or wooden mixing spoon or spatula and mix together, folding it over until well combined with even seasoning distribution. (NOTE: You can also use a hand mixer if that's easier but I find that familiar consistency is best achieved when mixed by hand.)
  • Once done, you can either serve immediately with crackers or in a recipe (like my Sausage & Shells) or store for later. If storing for later, keep the cheese in the large mixing bowl with a lid on top or divide into 4-5 small ramekins for pre-measured portions (each ramekin will be equivalent to about one 5.2-ounce package of Boursin). Cover with plastic wrap if placing in the fridge where it will last up to a month.

There's nothing better than homemade herb cream cheese! Packed with fresh herbs, it's an easy appetizer or spread for bagels.

1 8-ounce package cream cheese, softened
1/4 cup chopped chives, or half chives and half fresh basil or dill
1/2 teaspoon garlic powder
1/2 teaspoon dried dill
1/4 teaspoon kosher salt
1 to 2 tablespoons Greek yogurt or sour cream or 1/2 tablespoon milk, to soften (optional)

Steps:

  • Make sure the cream cheese is softened. Leave it out at room temperature for 1 hour, or place it on a plate in the microwave, cook 5 seconds, flip over the block of cheese and cook another 5 seconds. (If it's not room temperature at this point, cook another few seconds, but air on the conservative side.)
  • Chop the herbs. Mix everything together in a bowl, adding a little Greek yogurt, milk or sour cream 1 tablespoon at a time if you'd like a fluffier, more spreadable texture (we used 1 tablespoon Greek yogurt).
  • Make whipped cream cheese by adding 1/2 tablespoon milk and whipping the cream cheese in a food processor or stand mixer. Then add the chopped herbs and pulse until combined.

2 tablespoons unsalted butter, softened
1 small garlic clove, quartered
1/4 teaspoon kosher salt
1/4 cup chopped parsley leaves
1 tablespoon chopped chives
Crackers or toasts (for serving)

Steps:

  • Combine cream cheese, butter, garlic, and salt in the bowl of a food processor. Pulse until smooth. Add parsley and chives and pulse a few times until well combined. Pack mixture into a small bowl, ramekin, or glass jar. Cover and chill at least 30 minutes. Serve with crackers or toasts.

One 10-ounce log goat cheese
3/4 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano

2 teaspoons lemon juice
2 tablespoons beer, such as Heist Brewery Hive Five

Steps:

  • Add the goat cheese, basil, garlic powder, onion powder, oregano, salt, thyme and pepper to a stand mixer fitted with the beater attachment. Mix on low speed until you have a smooth, blended paste, about 3 minutes. Scrape down the sides of the mixer bowl and mix again. With the mixer on low speed, slowly pour in the lemon juice and beer; mix until all of the liquid is absorbed. Scrape down the sides of the bowl and mix one last time to ensure all the ingredients are fully incorporated and evenly dispersed.

1 quart plain yogurt
2 tablespoons finely chopped fresh parsley leaves
1 1/2 teaspoons ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Combine all of the ingredients in a medium mixing bowl. Put 4 layers of cheesecloth in a fine mesh sieve set over a large bowl or plastic container. Add the yogurt and cover with the cheesecloth overhang. Put a small plate directly on the cheesecloth and top with a 16-ounce can. Refrigerate for 1 hour. The desired consistency is that of Greek yogurt or thick sour cream. Store in the refrigerator, in an airtight container, for up to 10 days.

GARLIC-HERB YOGURT CHEESE

White pepper is milder than black, allowing the flavors of the herbs and yogurt to shine, but if you don't have it in your pantry, use black pepper to taste. The whey that drains out of the yogurt is a source of protein, calcium, potassium, and riboflavin. Freeze it in ice-cube trays to blend into fruit shakes and smoothies, or enjoy it (unfrozen) lightly sweetened, over ice.

1 quart homemade yogurt or store-bought plain low-fat yogurt
3 tablespoons finely chopped fresh chives
2 tablespoons chopped fresh flat-leaf parsley leaves
1/2 teaspoon minced garlic
3/4 teaspoon coarse salt
1/8 teaspoon freshly ground white pepper, or more to taste
Carrots and endive, trimmed, for crudites
Baguette slices, for serving

Steps:

  • Fold a large piece of cheesecloth twice to form a 4-layer, roughly 18-inch square. Place in a sieve set over a large bowl, and spoon yogurt into center. Gathering the 4 corners, tie a piece of kitchen twine just above yogurt to form a tight bundle. Let yogurt (still in sieve over bowl) drain in refrigerator at least 8 hours and up to 24 hours.
  • Cut open cheesecloth. Transfer yogurt cheese to a bowl; set whey aside for another use. Stir chives, parsley, garlic, salt, and pepper into yogurt cheese. Serve with crudites and bread.

2 cups nonfat plain yogurt
1 scallion, cleaned and finely minced (1 tablespoon)
1 tablespoon chopped parsley
1 small clove garlic, peeled, crushed and finely chopped ( 1/2 teaspoon)
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt

Steps:

  • Place yogurt in a fine strainer set over a bowl, and refrigerate for 8 hours to allow moisture to drain out.
  • Discard the liquid, and place the yogurt in a mixing bowl. Add the remaining ingredients. Mix well.
  • Transfer the mixture to a piece of plastic wrap about 10 inches long, and roll it into a log about 5 inches long and 1 1/2 inches thick. Refrigerate until ready to serve.
  • Serve the cheese with toast, crackers or bread. It is good served as part of a salad accompaniment; arrange chunks on each plate, or spread on small toasts or untoasted baguette slices.
