4 boneless, skinless chicken breasts (, 14 ounce)
1/2 cup Philadelphia garden vegetable cream cheese
1/2 teaspoon minced garlic
2 scallions (finely chopped)
1/4 cup pine nuts (toasted)
salt & pepper (to taste)
2 Tablespoon Dijon mustard
1 Tablespoon honey

Steps:

  • Preheat oven to 450°F (232°C). In a medium bowl, mix cream cheese, garlic, scallions and toasted pine nuts. Set aside.
  • Blot chicken breasts with a paper towel. With a sharp knife, make a horizontal cut halving the chicken breasts, but leave one side attached. Spread the chicken breasts open so that they lie flat.
  • Place a generous tablespoon in the middle of each chicken breast. Reclose the chicken breast and pinch closed.
  • In a small bowl, mix the mustard and honey. Brush on the top of each chicken breast. Place the chicken breasts on a flat foil-lined baking sheet. Roast for 20-25 minutes or until internal temperature reaches 165°F(74°C).

This Stuffed Chicken Recipe is no ordinary stuffed chicken breast! The first cut into the chicken produces a juicy burst of hot lemon-herb butter and makes the chicken so juicy and flavorful. The easy version of the classic Chicken Kiev. Excellent stuffed chicken recipes!

3 chicken breasts ((large - 12 oz each breast), boneless skinless)
1/2 tsp sea salt (or to taste)
1/4 tsp black pepper to taste
2 eggs (beaten)
1/2 cup all-purpose flour
2 cups Panko bread crumbs
Extra light olive oil or canola oil to sautee
6 Tbsp unsalted butter (room temperature)
1 large garlic clove (minced)
1 Tbsp lemon juice (plus more to drizzle finished chicken)
2 Tbsp chopped fresh parsley
1/2 tsp sea salt
1/2 tsp black pepper

Steps:

  • In a medium bowl, combine all Lemon Garlic Butter ingredients and mash them together a fork. It takes about 2 minutes of mashing for the lemon juice to incorporate into the butter.
  • Using a sharp knife, cut chicken breasts in half lengthwise, keeping both halves equal thickness and size. Cut a slit into each chicken breast to create a pocket about 2"wide by 3" long or as large as you can get it without cutting through the chicken breast.*
  • Place 1 Tbsp of the butter filling into each chicken pocket then close to seal and push over the top of the chicken breast to disperse butter. Pinch the opening to seal then season both sides of stuffed chicken breasts with salt and pepper.
  • Set up 3 plates for breading: In the first plate, pour 1/2 cup flour. In the second large bowl, beat together 2 eggs. In the third large bowl, pour 2 cups panko crumbs. Dredge stuffed chicken in flour, shaking off excess then dip in beaten egg, allowing excess egg to drip back into the bowl. Finally, dip chicken into bread crumbs, turning to coat well. Transfer breaded chicken to a large platter or baking sheet.
  • Heat a large, deep, heavy bottomed pan or dutch oven over medium heat and add 1/4" light olive oil. Once oil is hot (350˚F or sizzling when a bread crumb is added), place breaded chicken into the oil in 2 batches so chicken is not crowded and sautee 4 minutes per side, carefully turning with a spatula.** Transfer cooked chicken to a paper towel lined plate.
  • To serve: sprinkle lightly with salt if desired, garnish with fresh chopped parsley and serve with lemon wedges to squeeze fresh lemon juice over chicken.

8 boneless, skinless chicken breast halves
1 (8 ounce) package cream cheese, cut into 1/2 inch slices
1 (8 ounce) package Cheddar cheese, cut into 1/2 inch slices
1 cup milk
1 ½ cups Italian seasoned bread crumbs
½ cup grated Romano cheese
1 tablespoon minced garlic
¾ cup butter, melted
2 tablespoons lemon juice
½ teaspoon garlic salt, or to taste
½ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly coat a large, shallow baking dish with oil.
  • Butterfly each breast by slicing in half horizontally through the center, cutting almost but not completely through. Place one slice each of Cheddar and cream cheese in the center of each breast. Close again as if placing between the pages of a book. Set aside.
  • Pour milk into a shallow bowl. In a separate bowl, combine breadcrumbs and Romano cheese. Carefully dip each breast first in milk, then in breadcrumb mixture, patting lightly to firmly coat. Place breasts side by side in a single layer in pre-oiled baking dish, tucking edges under to seal.
  • Melt butter in a small saucepan over medium heat. Stir in lemon juice and garlic, and drizzle evenly over chicken. Season breasts with garlic salt and paprika, if using.
  • Bake in preheated oven for 30 minutes, or until no longer pink in center and juices run clear.

Steps:

  • Preheat oven to 375°F (190°C).
  • In a bowl, add the butter, garlic, and parsley and mix until fully combined.
  • Shape butter into a log and wrap in plastic wrap. Freeze for 15 minutes.

4 chicken breasts
4 cloves garlic (sliced)
½ cup grated mozzarella cheese
½ cup grated parmesan cheese (divided)
4 tablespoons unsalted butter (room temperature)
2 teaspoons Italian seasoning (divided)
1 cup all-purpose flour
3 eggs (beaten)
2 cups Panko breadcrumbs
Salt and pepper (to taste)

Steps:

  • Preheat the oven to 375°F.
  • In a small bowl, stir together the garlic, mozzarella, ¼ cup parmesan, butter, and 1 teaspoon Italian seasoning until well mixed.
  • Cut about a 3-inch wide pocket into the thick side of each chicken breast (almost to the other side, but do not cut all the way through).
  • Stuff ¼ of the cheese filling into each chicken breast and secure it with toothpicks. Set aside.
  • Get out 3 shallow bowls for the breading station. In one bowl, mix the flour with a pinch of salt and pepper. Put the eggs in the second bowl. Mix the breadcrumbs, ¼ cup parmesan, 1 teaspoon Italian seasoning, salt, and pepper together in the third.

  • Cook the chicken until golden brown on both sides, about 3-4 minutes per side. Transfer the skillet to the oven and bake for about 20 minutes or until the chicken is 165°F at the thickest point.
  • Remove from the oven, let rest for 5 minutes, and serve.
