EDAMAME AND QUINOA LETTUCE WRAPS WITH SOY GARLIC CHILI SAUCE image

1 1/2 cups cooked quinoa
1 cup cooked, shelled edamame
1 medium red pepper, seeded and chopped
3 green onions, sliced thin
1/2 cup chopped fresh cilantro
1-2 shredded carrots
8-10 leaves of bibb, butter or green leaf lettuce, washed and dried
Sauce:
1/4 cup soy sauce
2 tablespoon rice vinegar
2 tablespoons water
1-2 tablespoons sweet chili sauce
1 tablespoon sesame oil (optional)
1-2 cloves minced fresh garlic

Steps:

  • 1. In a large bowl, combine the cooked quinoa, cooked edamame, red pepper, green onions, cilantro and shredded carrots together. 2. Combine the sauce ingredients together in an empty jar and shake well. 3. Mix about half the dressing over the quinoa mixture. Place a couple of tablespoons of the mixture in a lettuce cup, top with a little extra drizzle of sauce, wrap and enjoy!

10 ounces edamame, precooked
4 garlic cloves, minced
1/2 teaspoon sesame oil
1 tablespoon chili paste
1 tablespoon mayonnaise
2 teaspoons soy sauce
1 teaspoon flaked sea salt, to taste

Steps:

  • 1. In a small fry pan on medium low heat add the sesame oil and garlic. Sauté for several minutes until a golden brown, do not burn. Remove pan from heat and cool.
  • 2. In a medium bowl mix together the sautéed garlic, chili paste, mayonnaise and soy sauce.
  • 3. Steam edamame in a microwave safe bowl for 2 minutes. Add the warmed edamame to the garlic chili sauceand toss to coat. Season with sea salt and serve warm.
