Easy peasy using storebought mayonnaise! A delicious mayo great for almost any savory sandwich or added to salad dressings or dips! Adapted from Better Homes and Gardens magazine((Sept. 2005). I'm not sure why the nutritional info says 900 some calories. The USDA says that 1/4 cup mayo = 229 calories, so don't worry.

1/2 teaspoon shredded lemon peel

3 egg yolks
1 tablespoon fresh lemon juice
1 1/2 teaspoons Dijon mustard
3 anchovy fillets, chopped
1 pinch sweet paprika
200 ml olive oil
1 tablespoon capers, rinsed, drained and chopped

Steps:

  • Place egg yolks, lemon juice, mustard, anchovies, garlic and paprika in a food processor.
  • Process until combined.
  • With motor running, gradually add about 150ml olive oil, 1 teaspoon at a time, processing well after each addition, until mixture starts to thicken.
  • Add remaining oil in a thin stream until incorporated and mayonnaise is thick and glossy.
  • Transfer to a bowl; add capers, season to taste and stir well to combine.

2 egg yolks, preferably free range
175ml rapeseed, sunflower oil or half sunflower, half olive oil
1-3 garlic cloves crushed (depending on how strong you want it)
¼ tsp Dijon mustard (optional)
½ tsp white wine vinegar (optional)

Steps:

  • Put the egg yolks in a mixing bowl and lightly whisk, then add the oil, a short drizzle at a time while continuing to whisk. This technique is important because the oil and egg will otherwise not emulsify. Mix in the garlic, mustard and vinegar, if using, and ¼ tsp salt. Taste and adjust the seasoning if needed. Will keep chilled in a jar for up to three days.

Basically a form of mayonnaise, intended to be served at room temperature or chilled, I make this condiment (or sauce base) with roasted garlic. It's creamy and garlicky and goes perfectly with both shellfish and roast beef.

6 garlic cloves, roasted
1 teaspoon canola oil
1 large egg
1 tablespoon lemon juice
1/2 teaspoon salt
1/8 teaspoon white pepper, ground
1/2 cup extra virgin olive oil
1 tablespoon capers

Steps:

  • In a 450-degree Fahrenheit (230-degrees Celsius) oven, roast the peeled cloves of garlic in canola oil. Wrap the garlic cloves and oil, tightly, in tin foil. To make the garlic cloves soft like butter, this will take between 30 and 40 minutes. To prevent scorching, add a half teaspoon of water to the tinfoil: this will keep it from browning, however, and the taste won't be quite the same. But it should protect the delicate garlic from burning.
  • In a blender, place the roasted garlic with the egg, lemon juice, salt, and white pepper. Starting at medium speed, blend for about a minute until the garlic has been fully incorporated into the blend.
  • Start with a few drops, rising to a drizzle, and add the olive oil. Keep blending for about 5 minutes until the aioli comes together into a thick, white sauce.
  • Remove to a small bowl and fold in the capers.
  • Serve chilled.

1 large head garlic
2 tablespoons olive oil, or as needed
salt and ground black pepper to taste
2 egg yolks
1 clove garlic, minced
¼ cup water
1 small lemon, juiced
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground cayenne pepper
1 cup extra-virgin olive oil, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut just below the tip side of the head of garlic, exposing all of the cloves, but keeping the head intact. Place the head of garlic in the middle of a sheet of aluminum foil. Pour olive oil liberally over the garlic and season with salt and pepper. Cover completely and wrap with aluminum foil, making a cup of sorts.
  • Bake in the preheated oven on the top rack, until golden brown and softened, about 45 minutes. Let cool for 10 minutes.
  • Squeeze the pulp out of the garlic into a glass mixing bowl. Add egg yolks, minced garlic, water, lemon juice, salt, black pepper, and cayenne pepper. Whisk the mixture until as smooth as possible, about 5 minutes.
  • Add olive oil in a continuous stream, whisking the entire time, until emulsified and mixture has a thickened consistency like mayonnaise.
