6 ounces cream cheese, softened
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 cup shredded Colby-Monterey Jack cheese
3/4 cup shredded Italian cheese blend
1 tube (11 ounces) refrigerated breadsticks
1 large egg, lightly beaten
1/2 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 375°. In a small bowl, beat cream cheese, garlic powder and onion powder until blended. In another bowl, toss Colby-Monterey Jack cheese with Italian cheese blend., On a lightly floured surface, unroll breadstick dough; press perforations to seal. Roll dough to a 12x8-in. rectangle; cut dough lengthwise in half., Spread each 12x4-in. rectangle with half of the cream cheese mixture to within 1/4-in. of edges. Sprinkle each with half of the combined cheeses; roll up jelly-roll style, starting with a long side. Pinch seam to seal. Cut rolls into 1-in. slices., Place beaten egg and Parmesan cheese in separate shallow bowls. Dip a cut side of each slice in egg, then in Parmesan cheese; place slices in greased mini muffin cups, cheese side up., Bake until golden brown, 17-20 minutes. Serve warm.

Ingredients: For the garlic butter:, 100g butter, at room temperature, 3 garlic cloves, crushed, 10g parsley leaves, finely chopped, 1/4 tsp salt, 75g mozzarella, grated, , For the muffins:, 2 eggs, lightly whisked, 250ml whole milk, 4 tbsp sour cream, 3 tbsp

For the garlic butter:
100g butter, at room temperature
3 garlic cloves, crushed
10g parsley leaves, finely chopped
1/4 tsp salt
75g mozzarella, grated
For the muffins:
2 eggs, lightly whisked
250ml whole milk
4 tbsp sour cream
3 tbsp reserved garlic butter, melted
400g self raising flour
1 tsp baking powder
1/2 tsp salt
250g grated cheddar/mozzarella
25g parmesan, grated

Steps:

  • Make the garlic butter: Put the butter, garlic, parsley and salt into a small bowl and mix well. Reserve 3 tablespoons for later. Add the grated cheese and combine, then arrange on a sheet of clingfilm and roll up into a tight sausage about 3 centimetres thick. Put into the fridge for 2 hours. Make the muffins: Put the eggs, milk, sour cream and melted garlic butter into a mixing bowl and use an electric mixer to beat well. Add the flour, baking powder and salt, then use a spatula to mix in the grated cheddar/mozzarella. Preheat the open to 200C/180C fan and generously butter a 12-hole, deep muffin tin. Fill each hole 1/3rd full of muffin mixture. Unwrap the garlic butter and slice into 12 pieces. Place one in the middle of each muffin, then spoon the remaining mixture on top. Sprinkle with parmesan then bake for 15 mins until golden brown and cooked through.
