Steps:
- Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until tender yet firm to the bite, 4 to 5 minutes. Drain; keep warm.
- Melt 2 tablespoons butter in skillet over medium heat. Add shrimp; cook and stir occasionally until shrimp are opaque and cooked through, 3 to 4 minutes. Transfer to a warm plate with a slotted spoon.
- Cook garlic in skillet, stirring constantly for 1 minute. Add remaining butter, extra virgin olive oil, tomato and basil. Stir in shrimp.
- Serve over cooked pasta and garnish with additional chopped fresh basil

- Preheat oven to 350°F.
- Season shrimp with salt and pepper. Heat oil in a large nonstick skillet over moderately high heat until hot but not smoking and sauté shrimp 1 minute per side. Transfer shrimp to a baking dish and bake in middle of oven until just cooked through, about 7 minutes.
- While shrimp bakes, add garlic to skillet and cook, stirring, over moderate heat 15 seconds, then stir in wine, juice, and tomatoes. Boil, stirring occasionally, until liquid is reduced by two thirds. Swirl in butter and basil over low heat and season with salt and pepper.
- Serve shrimp with sauce.

GRILLED CEDAR PLANK SALMON WITH GARLIC BASIL BUTTER
This is by far my FAVORITE way of preparing salmon. I first tried it at McGraths Fish House, then duplicated it at home. You can normally find a cedar plank at your local grocery store in the seafood department.

Steps:
- Soak your cedar plank in water for 20 minutes, flipping over halfway through soak time.
- While the plank is soaking, mix together butter, basil and minced garlic cloves, spread on salmon.
- Salt and pepper to taste.
- Heat your grill to low, or the right setting for your grill for fish.
- Take your cedar plank out of the water and place the salmon on top of the plank. Place it on the grill and cook for 20-40 minutes depending on how thick your salmon is.Grill with the lid closed.
- During the cooking time, if the plank catches on fire, spray it with water.
- Salmon is done cooking, when it flakes easily with a fork.
- *Note: Whenever I make this it normally takes around 30-45 minutes to cook on the grill. I constantly check it to make sure the plank doesn't burn & the salmon doesn't over cook.
- Make sure you have water on hand to spray the cedar plank with, so it doesn't catch on fire.

I got this recipe off of another site but modified it quite a bit to suit our tastes. It is very easy and will certainly impress company or make a nice dish for a romantic meal! The key is to use fresh herb in this dish. Serve with a good crusty bread, green salad and a nice white wine.

- Cover the chicken with plastic wrap and pound each piece to an even thickness, about one inch or so in the thickest parts (this just helps it cook faster and more evenly). Remove the plastic and sprinkle each piece of chicken generously with sea salt and freshly ground pepper. Prep the tomatoes, garlic, and basil and set aside. Make the pasta according to package directions. Heat the olive oil in a large heavy skillet until a drop of water sizzles across the top. Add the chicken and pan-fry for several minutes on each side The goal here is to get the chicken cooked AND get a nice browning on the outside. When the chicken is done, set aside. Give the oil a few minutes to cool, add the tomatoes, and return to heat (if you add the tomatoes to the hot oil it will be a splatter-fest). Simmer to cook the tomatoes down into a chunky-sauce-like-mixture. Add the garlic and butter and stir to combine until the butter is melted. Add the chicken back in to soak in the sauce for a few minutes. Just before serving, stir in the basil. Top servings of pasta with the chicken and the sauce.
