These crisp cauliflower chips are low in carbs and can be made in either the oven or your air fryer. Plus, they require just cauliflower, Parmesan cheese and seasonings to make! Swap out the Italian seasoning for ranch seasoning or your favorite spice blend for a different flavor profile.

2 cups riced cauliflower (12 ounces; see Tip)
1 ⅓ cups finely grated Parmesan cheese
½ teaspoon dried Italian seasoning
½ teaspoon ground pepper
¼ teaspoon salt

Steps:

  • Position racks in top and bottom third of oven; preheat to 375°F. (Alternatively, see Air-Fryer Version below.) Line 2 large rimmed baking sheets with parchment paper; coat with cooking spray.
  • Place cauliflower in a large microwave-safe bowl. Microwave on High, uncovered and stirring halfway through, until tender, about 2 minutes. Place the cauliflower in a clean kitchen towel (or paper towels); squeeze out as much liquid as possible. Place the cauliflower in a medium bowl; add Parmesan, Italian seasoning, pepper and salt; stir until combined.
  • Using a leveled tablespoon, portion mounds of cauliflower mixture 2 inches apart on the prepared baking sheets. Using a lightly greased bottom of a measuring cup or glass, press each portion into a circle about 1/8 inch thick.
  • Bake both pans, rotating them halfway through, until the chips are golden brown and crisp, about 20 minutes. Transfer to a paper-towel-lined plate; let cool completely, about 20 minutes.

Roast cauliflower with garlic, thyme and rosemary until golden and tender.

1 head cauliflower (about 2 pounds), trimmed and cut into florets
1/4 cup extra-virgin olive oil
5 garlic cloves, roughly chopped
2 teaspoons roughly chopped fresh thyme
1 teaspoon chopped fresh rosemary
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Toss the cauliflower with the olive oil, garlic, thyme and rosemary on a rimmed baking sheet until well coated. Sprinkle with 1 teaspoon salt and several grinds of pepper and toss again.
  • Roast, stirring occasionally, until golden and tender, about 20 minutes.

GARLIC HERB CAULIFLOWER RICE

Cauliflower rice is a versatile and healthy side dish. For the best tasting riced cauliflower, it needs help from other flavors. In this herby version, we kick up the flavor with butter, lots of fresh herbs, fresh lemon juice, and garlic. For some extra crunch and texture, I love stirring in some roasted sliced almonds. You can leave these out or substitute other nuts.

Number Of Ingredients 8

1 medium head cauliflower or 16 ounces store-bought cauliflower rice
1/2 cup sliced almonds
2 tablespoons butter or substitute extra virgin olive oil
2 cloves garlic, minced
1/4 teaspoon fine sea salt
Freshly ground black pepper, to taste
3/4 cup chopped fresh herbs like parsley, dill, cilantro, and basil
1 tablespoon lemon juice or more to taste

Steps:

  • To turn a head of cauliflower into rice, there are two options. Use a food processor or use a box grater.
  • If using a food processor, cut the head of cauliflower into medium chunks and remove the core. Working in batches, add the cauliflower to the bowl of a food processor and pulse until the cauliflower is broken down into very small bits that resemble rice (see photo above).
  • If using a box grater, cut the head of cauliflower into quarters and remove the core. Use the medium-sized holes to grate each quarter into small bits resembling rice.
  • Optional step, for the best cauliflower rice, before cooking, transfer the riced cauliflower to a clean dish towel and press to remove excess moisture.
  • Add the almonds to a large skillet over medium heat. Stir the almonds around the pan until they are fragrant and lightly toasted, about 3 minutes. Keep a close eye on the nuts since they do toast quickly. Transfer the toasted almonds to a bowl and save for later.
  • Return the skillet to the heat and add the butter. When the butter is melted and bubbling, stir in the garlic. Cook the garlic, stirring it around the pan, until fragrant, about 30 seconds.
  • Add the cauliflower rice, salt, and a few grinds of black pepper. Cook, stirring every once and a while, until the cauliflower rice is crisp-tender and starts to turn light brown in places, 7 to 10 minutes.
  • Take the skillet off of the heat, and then stir in the fresh herbs, lemon juice, and toasted almonds. Taste then adjust with additional salt, pepper or lemon juice.

1 small head cauliflower
2 to 3 tablespoons unsalted ghee
2 cloves garlic, grated
Kosher salt and freshly ground black pepper
3 tablespoons chopped dill, plus more for garnish
2 tablespoons minced chives, plus more for garnish
1 tablespoon finely chopped flat-leaf parsley, plus more for garnish

Steps:

  • Cut the cauliflower into large florets. Transfer to a food processor, in batches if necessary, and pulse until the cauliflower resembles rice. Pour into a medium bowl. You should have 3 1/2 to 4 cups of cauliflower rice.
  • Heat a large nonstick skillet over medium heat. Add the ghee and garlic; cook, stirring, until the garlic is golden and fragrant, 1 to 2 minutes. Next, add the cauliflower rice. Cook, stirring often, for 5 minutes. Once the cauliflower rice has softened and is lightly golden, remove from the heat and season with salt and pepper. Stir in the 3 tablespoons dill, 2 tablespoons chives, and 1 tablespoon parsley. Taste and add more salt and pepper, if desired.
  • To serve, scoop the cauliflower rice into a shallow bowl and garnish with more herbs and black pepper.

2 heads cauliflower
2 tablespoons olive oil
3 cloves garlic, chopped
½ cup sour cream
½ cup fresh chives, chopped
¼ cup fresh parsley
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Wrap cauliflower in a clean dish towel, then turn it upside down and bang it against the surface of your counter until you feel the cauliflower crack (be sure to rotate to break it up on all sides).
  • Pull florets off of stem and break the bigger florets into smaller pieces.
  • Bring a large pot of water to boil over high heat.
  • Add the cauliflower pieces to the pot and boil, covered, for 15-18 minutes.
  • Drain the cauliflower.
  • Mash the cauliflower with a fork until smooth.
  • Mix in remaining ingredients. Allow to cool for 5 minutes.

Over time I've tried so many different ways to cook the best oven chips & being a Yorkshire lad I eat a lot of chips! These are nice and simple, very quick to make and pack loads of flavour. Loved by everyone!

Potatoes (Maris Piper) 500g
Butter - 50g
Thyme (chopped) - 1 tbsp
Garlic Salt - 1 tsp
Garlic Granules - 2 tsp

Steps:

  • Preheat the oven to 180c/190c gas/fan. Cut the potatoes into large chips, there is no need to peel them. Once cut place them into a large pan of water and bring to the boil for approximately 10 minutes. Remove when soft, but do not allow them to break up. While they are heating place the butter close to the hob to allow it to melt.
  • Drain the chips and place In a large mixing bowl. cover with the butter and then sprinkle the Garlic Salt, Garlic Granules and thyme all over them. I toss them several times between the pan and the bowl to cover as much as possible.
  • Place the chips evenly on a baking tray and place is the oven.
  • Tip: While cooking I also place peeled cloves of garlic on the baking tray which is a lovely compliment to the chips - Enjoy!

1 large head cauliflower, separated into florets

Lemony Cauliflower With Garlic and Herbs image

There aren't many cauliflower salads as vivacious as this one, which is zipped up with plenty of lemon, herbs, garlic and one minced jalapeño. It is best made a day or two ahead, which gives all the ingredients a chance to mingle, and the raw cauliflower time to soften and absorb all of the dressing's bright, complex flavors. Although this salad needs no other seasonings, you can add capers, sliced olives or crumbled feta here for even saltier tang. The pinch of red-pepper flakes here is optional, but especially good.

1 lemon, plus more lemon juice to taste
1 1/4 teaspoons fine sea salt, plus more to taste
1 large head cauliflower (about 1 3/4 pound), trimmed and cut into bite-size florets (about 8 cups)
1 jalapeño, finely chopped
2 scallions, whites and greens thinly sliced
1/2 cup chopped fresh dill or basil
1/2 cup chopped parsley, leaves and tender stems
3/4 cup extra-virgin olive oil
2 fat garlic cloves, finely grated or minced
2 teaspoons whole cumin or cracked coriander seeds
Large pinch of red-pepper flakes (optional)

Steps:

  • Finely grate the zest of the lemon into a large heatproof bowl, then halve the lemon and squeeze in juice. Stir in salt to dissolve it. Add cauliflower, jalapeño, scallions, dill and parsley and toss to combine. In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin, and cook until fragrant, about 1 minute. Stir in red-pepper flakes.
  • Pour mixture over cauliflower and toss well. Let cool completely, then cover and refrigerate for at least 8 hours and up to 48 hours to let the flavors mingle.
  • Toss well before serving, adding more salt or a squeeze of lemon to taste. For the best flavor, serve at room temperature.
