LEEK AND MUSHROOM MANICOTTI image

Yield 10 manicotti

Number Of Ingredients 7

ricotta cheese, small package
leeks, 2 medium sized
mushrooms, 10
lasagna sheets, 10
tomato sauce, 1 cup
bechamel sauce, 1 1/2 cups
parmesan cheese, grated

Steps:

  • slice leeks thinly slice mushrooms thinly saute leeks in butter until nearhy softened add mushrooms and continue to saute let vegetables cool, then mix with ricotta spread tomato sauce in bottom of casserole dish roll cheese into lasagna sheets, and place in casserole dish after all manicotti are in, spread bechamel sauce and top with grated cheese cover with foil pop into a pre-heated 350 degree oven for 30 minutes (check for bubbling) peel off foil and broil until cheese is bubbly
