4 pita breads (6 inches)
2 teaspoons olive oil
2 garlic cloves, minced
2 cups shredded part-skim mozzarella cheese
3 plum tomatoes, thinly sliced
1/4 teaspoon garlic powder
1 teaspoon Italian seasoning
Thinly sliced fresh basil, optional

Steps:

  • Place pita breads on an ungreased baking sheet; brush with oil. Top with garlic, 1 cup cheese, tomatoes, garlic powder and remaining cheese; sprinkle with Italian seasoning. , Bake at 425° for 10-12 minutes or until cheese is melted. Top with basil.

1/2 cup chopped zucchini
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
2 tablespoons chopped onion
2 tablespoons chopped carrot
1 garlic clove, minced
2 teaspoons butter
1/8 teaspoon Italian seasoning
1/8 teaspoon dried oregano
Dash pepper
1 prebaked mini pizza crust
1/3 cup chopped seeded tomato
1/3 cup shredded Italian cheese blend

Steps:

  • In a large skillet, saute the zucchini, peppers, onion, carrot and garlic in butter for 8-10 minutes or until tender. Sprinkle with Italian seasoning, oregano and pepper; toss to coat., Place the crust on an ungreased baking sheet or pizza pan. Spoon vegetable mixture onto crust to within 1/2 in. of edges. Top with tomato and cheese. Bake at 450° for 8-10 minutes or until cheese is melted.

6 pita breads
1 (6.5 ounce) can tomato sauce
1 (4 ounce) can sliced black olives, drained
1 ounce diced pimento peppers, drained
2 small tomatoes, thinly sliced
4 ounces shredded mozzarella cheese
4 ounces blue cheese, crumbled
1 pinch dried basil
1 pinch dried oregano
1 pinch crushed coriander seed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Warm pitas in the preheated oven or in a microwave for 1 minute, or until soft. Spread lightly with tomato sauce, pressing to flatten while spreading. Sprinkle with black olives, pimento peppers, tomatoes, mozzarella cheese, blue cheese, basil, oregano and coriander.
  • Spread the pitas on a large baking sheet and place in the preheated oven 8 minutes, or until the pita bread has reached desired crispness. Serve whole, or cut into slices.

1/3 cup button mushroom, thinly slice
1/3 cup zucchini, thinly sliced
1/8 teaspoon garlic powder
1/4 cup tomato sauce
1 fat-free whole wheat pita bread, 6-in diameter
2 tablespoons scallions, finely chopped
1 tablespoon fresh basil, slivered
1/4 teaspoon dried oregano
1 large pitted black olives, chopped
2 tablespoons fat free mozzarella cheese, shredded
1 tablespoon fat-free parmesan cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Place the mushrooms and zucchini in a large no-stick skillet, and coat with no-stick spray.
  • Cover and cook over med-high heat for 2 to 3 minutes, or until the mushrooms start to release their juice.
  • Remove the cover and cook, stirring occasionally, for 1-2 minutes, or until the mushrooms and zucchini are golden.
  • Stir in the garlic powder and 2 tbsp tomato sauce. Set aside.
  • Place the pita bread on a baking sheet. Bake for 1 minute to crisp.
  • Remove from the oven and spread remaining tomato sauce.
  • Spoon on mushroom mixture.
  • Sprinkle the scallions, basil, oregano, olives, mozzarella, and Parmesan.
  • Bake for 8-10 minutes, or until cheese is melted and golden.

1 pita bread (6 inches in diameter)
2 to 4 tablespoons pizza sauce or pasta sauce
1 small zucchini, chopped (1 cup)
2 tablespoons chopped onion
2 roma (plum) tomatoes, chopped (1/2 cup)
2 tablespoons sliced ripe olives
1/4 teaspoon salt
1/8 teaspoon dried basil leaves
1/4 cup shredded mozzarella cheese (1 ounce)

Steps:

  • Split pita bread around edge with knife to make 2 rounds. Spread pizza sauce on bread halves; place on small microwavable plates.
  • Place zucchini and onion in 2-cup microwavable casserole. Microwave uncovered on High 2 minutes 30 seconds to 3 minutes or until tender. Stir in tomatoes, olives, salt and basil.
