1 1/2 lbs ground turkey or 1 1/2 lbs lean ground beef
1 (10 ounce) package frozen chopped spinach, thawed,drained
1 cup quick oats or 1 cup old fashioned oats, uncooked
1/2 cup finely chopped onion
1/2 cup shredded carrot
1/3 cup nonfat milk
2 egg whites or 1 egg, lightly beaten
1 1/2 teaspoons Italian herb seasoning
1 teaspoon salt (optional)
1/4 teaspoon black pepper

Steps:

  • Heat oven to 350 degrees.
  • Combine in a large mixing bowl the turkey or beef, the spinach, which has been squeezed to drain, the oats, onion, carrots, egg, milk, herbs (mixture of oregano, basil and thyme), salt and pepper.
  • Use a three-tined kitchen granny fork or wooden mixing fork to blend the meat ingredients.
  • Pat into a 9x5-inch loaf pan that has been sprayed with a no-stick oil product, or shape into a loaf and place in the middle of a 13x9-inch baking pan.
  • Bake 1 hour or until a thermometer registers 170 degrees and the center is no longer pink.
  • If substituting beef for turkey, bake 50 to 55 minutes and thermometer should register 160 degrees internal temperature (tip not touching baking dish).
  • Let loaf stand out of the oven for 5 minutes before slicing.

The oatmeal and chili sauce were inspired by another recipe I found on RecipeZaar, but I added an assortment of vegetables to add color, texture, flavor, and nutrition. I like to use the Uncle Sam oatmeal because it contains flax seeds and wheat flakes along with the oats, but you can use any rolled oats or instant plain oatmeal you have on hand.

1 lb ground turkey breast
1 (1 1/4 ounce) packet instant plain oatmeal
1/4 cup skim milk
1 teaspoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1/2 cup shredded zucchini, excess water squeezed out
1/2 cup shredded carrot
3 button mushrooms, chopped
1/2 cup fresh spinach, chopped, excess water squeezed out
1 tablespoon Worcestershire sauce
1/4 cup chili sauce
salt and pepper

Steps:

  • Preheat oven to 350°.
  • Empty packet of oatmeal into a small bowl and add milk. Set aside.
  • Heat olive oil in a small sauté pan. Add onion and garlic and sauté until soft.
  • Add rest of the vegetables and cook until soft and some of the liquid has evaporated.
  • In a mixing bowl, mix ground turkey, oatmeal mixture, chili sauce, Worcestershire sauce and sauteed veggies until well combined. Form into a loaf shape and place in a greased loaf pan or on a greased cookie sheet.
  • Bake at 350°F until internal temperature reaches 140°F Raise oven temperature to 450°F and bake until internal temperature reaches 180°, and the outside of the loaf forms a nice crust.

2 ½ pounds ground beef
2 eggs
½ cup Italian seasoned bread crumbs
1 teaspoon salt
1 teaspoon fresh cracked black pepper
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 Spanish sweet onion, chopped
1 (16 ounce) package shredded Cheddar cheese, divided
1 (8 ounce) can tomato sauce, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ground beef, eggs, bread crumbs, salt, and black pepper together in a large bowl. Add green bell pepper, red bell pepper, yellow bell pepper, and onion; mix. Spread the beef mixture into a 13x9-inch glass baking dish.
  • Make a trough in the middle of the meat mixture. Put 3/4 of the Cheddar cheese and half the tomato sauce into the trough. Fold the beef mixture around the cheese and sauce filling to form a loaf, pinching to seal. Loosely cover the meat loaf with aluminum foil.
  • Bake in preheated oven until the beef is cooked through and the cheese in the middle is melted, about 45 minutes. Remove and discard aluminum foil. Top meat loaf with remaining Cheddar cheese and tomato sauce. Continue baking until the cheese melts, about 15 minutes. Rest meat loaf 10 to 15 minutes before slicing to serve.

1 ½ pounds ground beef chuck
½ cup chopped onion
½ cup brown sugar
1 beaten egg
1 (15 ounce) jar chunky salsa
1 ½ cups dry bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Lightly mix the ground chuck, onion, brown sugar, egg, salsa, and bread crumbs in a bowl, and spoon into the prepared baking dish.

1/3 cup Colavita™ extra virgin olive oil
3 cloves garlic, minced
1 cup minced onion
3 medium zucchini, sliced into rounds
3 green peppers cut into strips
1 medium eggplant, diced
1 tablespoon dried oregano
3 tablespoons King Arthur™ Unbleached, All-Purpose Flour
1/4 teaspoon salt
Grinding black pepper
2 cups chopped tomatoes
1 pound ground beef
1/2 pound ground pork
1 teaspoon celery salt
1/4 teaspoon hot pepper flakes
1 tablespoon Worcestershire sauce
1 cup cooked rice
1/3 pound mozzarella cheese, shredded

Steps:

  • Heat the oil in a large saute pan, stir in the garlic and cook it until it softens but does not brown. Stir in the onions and continue cooking until the onions are soft. In a bowl toss together the zucchini, peppers, eggplant, oregano, flour, salt, and pepper. Stir into the onion mixture and cook 2 or 3 minutes. Spread the tomatoes over the top of the mixture, cover the pan and cook over simmering heat for 45 minutes. Uncover and cook until the mixture has thickened. Set aside. Mix the ground beef, pork, celery salt, pepper flakes, Worcestshire sauce and rice together in a bowl. Spread half of the zucchini mixture in a 1 1/2 quart casserole. Pat the meat mixture on top of the zucchini, then cover with the remaining zucchini mixture. Bake covered in a 350F for 30 minutes. Uncover, sprinkle the cheese over the top and continue baking an additional 20 minutes.

1/4 cup quick-cooking oats
3/4 cup finely chopped onion
1/2 cup finely chopped bell pepper

1/2 cup vegetable juice cocktail (like V8)
6 tablespoons liquid egg substitute
1 1/2 teaspoons crushed garlic
2 teaspoons dried parsley, finely crumbled (or use 2 tbsp. minced fresh)
1 teaspoon dried thyme (or marjoram)
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1/2 cup ketchup

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Place all ingredients (except ketchup) in a large bowl and mix well. Coat a 9 X 5 loaf pan with cooking spray and press the mixture into the pan to form a loaf.
  • Bake uncovered for 45 minutes, then spread the ketchup over the top and bake for 30 more minutes, or until a meat thermometer registers 160 degrees in the center.
  • Remove the loaf from the oven and let it rest 10 minutes before slicing and serving.
