Number Of Ingredients 9

1 garlic clove, peeled and halved
14 slices French bread (3/4 inch thick)
4 medium tomatoes, seeded and diced
1/4 cup chopped red onion
2 tablespoons olive oil
1 tablespoon minced fresh basil
1/4 teaspoon salt
1/8 teaspoon pepper
14 fresh basil leaves

Steps:

  • Rub cut side of garlic over one side of each slice of bread. Place bread garlic side down on an ungreased baking sheet. Bake at 350° for 5 minutes on each side or until lightly browned. , In a large bowl, combine the tomatoes, onion, oil, minced basil, salt and pepper; spoon about 2 tablespoons onto each piece of toast. Top each with a basil leaf.

It was submitted by Rachel Garcia. The beauty of this brushetta is that it is a hint of garlic but basically is just a fresh garden tomato taste. If you are a garlic person don't just rub the bread with it but mince it in as well. This brushetta will appeal to a wide variety as it is not overly spicy. 1 clove garlic, minced
1/4 cup fresh basil chopped fine
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon salt, to taste

1 baguette
Olive oil and fresh garlic for toasting

  • Mix all ingredients and let stand at room temperature for 2 hours. Serve on toasted sliced of baguette or french bread!!

Number Of Ingredients 6

2 medium-sized ripe tomatoes, diced
5 large basil leaves, chopped
2 medium garlic cloves, minced
3 tablespoons olive oil
1 french baguette loaf, sliced on the diagonal
Asiago cheese, shredded to melt on top

Steps:

  • Preheat oven to 425 degrees. Line baking sheet with bread slices & toast. In the meantime, combine tomatoes, basil, garlic & olive oil. Add salt & pepper to taste. Pull bread from oven and spoon tomato mixture on individual toasts, distributing evenly. Springle shredded Asiago on top of tomato mixture (quanity to personal liking). Toss back in oven until Cheese melts. Hint: the finer the shredding of the cheese, the quicker it melts--keeping the tomatoes & basil fresher.
