GARDEN TURKEY BURGERS

These moist burgers get plenty of color and flavor from onion, zucchini and red pepper. I often make the mixture ahead of time and put it in the refrigerator. 1 cup old-fashioned oats
3/4 cup chopped onion
3/4 cup finely chopped sweet red or green pepper
1/2 cup shredded zucchini
1/4 cup ketchup
2 garlic cloves, minced
1/4 teaspoon salt, optional
1 pound ground turkey
6 whole wheat hamburger buns, split and toasted

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble turkey over mixture and mix well. Shape into six 1/2-in.-thick patties., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 165° and juices run clear. Serve on buns. Freeze option: Place patties on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a resealable plastic freezer bag; return to freezer. To use, grill frozen patties as directed, increasing time as necessary for a thermometer to read 165°.

1/3 cup plain low-fat yogurt
2 tablespoons low-fat mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/4 cup chopped fresh chives
2 tablespoons chopped fresh basil
Kosher salt and freshly ground pepper
1 1/2 pounds ground beef, preferably chuck
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
4 whole-wheat seeded buns, split
Red-leaf lettuce leaves, for topping
2 plum tomatoes, sliced
Alfalfa sprouts, for topping
1 avocado, halved, pitted and sliced

Steps:

  • Preheat a grill to medium high. Make the dressing: Puree the yogurt, mayonnaise, lemon juice, Worcestershire sauce, chives, basil, and salt and pepper to taste in a blender. Transfer to a small bowl, cover and refrigerate until ready to use.
  • Make the burgers: Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the buns, cut side down, until lightly toasted, about 1 minute.
  • Top the bun bottoms with the lettuce, tomatoes, burger patties, alfalfa sprouts and avocado. Drizzle with the dressing, then cover with the bun tops.

4 to 6 potatoes, French Fry cut
4 cups oil

Steps:

  • Pound the turkey and grill about 4 to 5 minutes on each side. Follow the directions on the box for the couscous. Slice and cut the vegetables and add them to the couscous. Place the oil in a wok or wide fry pan. Heat oil to 365 degrees. Rinse the potatoes in cold water and when the oil is very hot, add them to the oil and fry until golden brown.

My family has been trying to eat better. I am a diabetic and I also had open heart surgery to repair my Mitral Valve a few years ago, so we are trying to use more chicken and turkey in our diet. We really loved turkey burgers that we got in a fast food resturant, be we felt that we could do better at home. The problem was that the turkey burgers were really dry when we tried to make them ourselves. This recipe is the result of a lot of experimenting, until we found a way to make the burgers moister and not so heavy. Bread crumbs and an egg weren't enough so we added the vegetables and that did the trick.

1 lb lean ground turkey
1/2 medium onion
1 small bell pepper (red or green)
5 medium mushrooms
2/3 cup Italian seasoned breadcrumbs
2 teaspoons garlic, minced
4 teaspoons Worcestershire sauce
1 egg
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Mince the vegetables very fine, place in a medium bowl. Add the turkey, Worcestershire sauce, egg, bread crumbs and garlic. Mix well so that everything is incorporated. Divide into 6 patties. Place in fridge until ready to cook. Spray grill or skillet (cast iron works really well, but any skillet will do), with cooking spray. Cook patties until the internal temperature reach 165 degrees when a meat thermometer is place in the side of the patty and goes to the middle of the meat. Remove from heat and let rest 5 minutes.

2 pounds lean ground beef or turkey
1 cup basil leaves, finely minced
1 fresh red chili pepper, finely minced
3 1/2 tablespoons olive oil
Salt, to taste
2 tablespoons balsamic vinegar
1 large green zucchini, cut into 1-inch-thick slices
2 medium tomatoes, preferably heirloom or orange, cut into 1-inch-thick slices
1 tablespoon lemon juice
1/2 teaspoon salt
Toasted whole-wheat bread or hamburger buns (optional)

Steps:

  • Preheat the grill. In a large mixing bowl, mix meat with basil leaves, red chili pepper, and 1 1/2 tablespoons of olive oil. Season with salt. Cover and refrigerate for 10 minutes.
  • In a large bowl, gently toss zucchini and tomatoes with 2 tablespoons olive oil, lemon juice, salt, and vinegar.
  • Divide meat mixture into 8 portions and flatten with your hands to make a patty. Grill hamburgers until meat is cooked through, turning once, about 2 minutes each side.
  • Grill zucchini and tomatoes, turning them frequently until zucchini softens and both zucchini and tomatoes are browned on both sides. To serve, place hamburger between grilled vegetables with or without toasted bread or buns.

2 celery ribs, diced

2 pints cherry tomatoes

2 tablespoons lemon juice
2 tablespoons cider vinegar
2 tablespoons prepared mustard
1 tablespoon Worcestershire sauce

4 slices bread
1/2 cup water
2 eggs, lightly beaten
1 medium onion, finely chopped
2 teaspoons minced fresh parsley
1 teaspoon salt

Steps:

  • In a Dutch oven, saute the onion, carrots, green pepper, celery and parsley in oil until vegetables are tender. Add the tomatoes, ketchup, brown sugar, lemon juice, vinegar, mustard, Worcestershire sauce, salt and pepper. Cover and simmer for 1-1/2 hours. , Meanwhile, soak bread in water; squeeze dry and crumble into a large bowl. Add the eggs, onion, parsley, salt and pepper. Crumble beef over mixture and mix well. Shape into eight patties. , Broil or pan-fry until a thermometer reads 160° and meat is no longer pink; drain. Add to sauce. Cover and simmer for 10 minutes or until heated through.
