This is the most awesomely delicious beef dish I've ever tried! Truly easy and honestly loved by every member of my family...In fact my 19 year old daughter, Jamie, asks for it specifically every time she visits, and I even won over the in-laws with this one! Simply amazing flavor, I promise! Jamie can be trusted -- she's a picky eater and she loves this!!! :)

Number Of Ingredients 10

2 lbs stew meat
2 (10 1/2 ounce) cans condensed golden mushroom soup
2 tablespoons Lipton Onion Soup Mix
3/4 cup red wine (or Sherry)
1 tablespoon margarine
1/4-1/2 cup canned beef broth (depending on if you choose to use the wine or not)
1/4 teaspoon basil
1/4 teaspoon thyme
1/2-1 lb sliced fresh mushrooms (put in last hour of cooking)
1 lb kluski noodles, cooked, drained and buttered (or Reame's frozen noodles)

Steps:

  • Mix all ingrendients together in a covered casserole dish (except for the mushrooms that you will need to add the last hour of cooking).
  • Bake in a preheated 325 degree oven for 3 hours.
  • Add sliced, fresh mushrooms during last hour of cooking.
  • Serve over prepared Kluski or Reame's noodles.
  • 2ND OPTION: Instead of baking in an oven, you can also prepare this in a Crock Pot and cook on LOW for 8 hours (adding the mushrooms during the last hour.) Serve over prepared noodles, as per recipe, when done.
  • NOTE: To make the gravy a bit thicker, take 1 tablespoons flour and mix with 1 tablespoons water, then add in when you add the mushrooms and be sure to stir well.
  • YUM! :).

Came from the Better Home and Garden's Meat Stretcher cookbook. It's kinda like hamburger helper for people who can't have pasta. This is my husband's favorite thing for me to make. I regularly use a can of white kernel corn (never tried yellow) instead of two cans garbanzo beans but would recommend trying all garbanzo beans first.

1 lb ground beef
1 cup chopped onion
2 garlic cloves, minced
2 (15 ounce) cans garbanzo beans (you can substitute 1 15 oz can white kernel corn for 1 can garbanzo beans if you want)
1 (15 ounce) can tomato sauce
1/2 cup water
1 teaspoon dried oregano, crushed
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
2 bay leaves

Steps:

  • Preheat oven to 350°F.
  • Brown beef with onion and garlic until onion is tender and beef is brown.
  • Drain fat.
  • Stir in everything else and heat to boiling.
  • Put in a 1 1/2 quart casserole and cover.
  • Bake for 45 minutes.
  • Remove bay leaves.
  • Be sure and stir before serving.

1 boneless beef chuck roast (3 to 4 pounds)
2 tablespoons olive oil
1 cup sherry or beef broth
1/2 cup reduced-sodium soy sauce
1/4 cup sugar
2 teaspoons beef bouillon granules
1 cinnamon stick (3 inches)
8 medium carrots, cut into 2-inch pieces
6 medium potatoes, peeled and cut into 1-1/2-inch pieces
1 medium onion, sliced
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Brown roast in oil in a Dutch oven on all sides; drain. Combine the sherry, soy sauce, sugar, bouillon and cinnamon stick; pour over roast., Cover and bake at 325° for 2-3/4 to 3-1/4 hours or until meat and vegetables are tender, adding the carrots, potatoes and onion during the last 30 minutes of cooking., Remove roast and vegetables to a serving platter; keep warm. Combine cornstarch and water until smooth. Stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast and vegetables.

1 1/2 cups dried garbanzo beans
3 1/2 cups water
1 tablespoon olive oil
2 tablespoons honey
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon sea salt

Steps:

  • Place garbanzo beans in a large sauce pan, add water and bring to a boil.
  • Reduce heat, cover and continue a slow boil for 35 minutes.
  • Remove from heat, thoroughly drain and pat dry with a paper towel.
  • Pre-heat oven to 375°.
  • Spread beans on a baking sheet in a single layer and bake for approximately 45 minutes or until they test crispy.
  • Warm the honey, mix in the oil, cinnamon, nutmeg and salt. While the mixture is still warm remove the crispy garbanzo beans from the oven and gently stir together until well mixed.
  • Caramelize the garbanzo beans by placing them back on the baking sheet and put them back in the oven for another 10 minutes.
  • Enjoy!

1 (16 ounce) can garbanzo beans, drained
1 teaspoon yeast extract
1 1/4 cups walnuts, chopped
1 1/4 cups fresh white breadcrumbs
1 onion, finely chopped
1 1/4 cups sliced mushrooms
1 3/4 ounces canned corn, drained
2 cloves garlic, crushed
2 tablespoons dry sherry
2 tablespoons vegetable stock
1 tablespoon cilantro, chopped nicely
8 ounces prepared puff pastry
1 egg, beaten
2 tablespoons milk
salt and pepper
1 tablespoon vegetable oil
1 leek, sliced very thin
4 tablespoons dry sherry
2/3 cup vegetable stock

Steps:

  • First process the beans, yeast extract, walnuts and bread crumbs for 30 seconds.
  • Then saute the onion and mushrooms in their own juices for approximately 4 minutes in a nice sized skillet.
  • Stir in the bean mixture, corn, and crushed garlic.
  • Add the sherry, veg.
  • stock, cilantro, and salt and pepper and bind the mixture together.
  • Remove your skillet from the heat and set aside to cool COMPLETELY.
  • Preheat your oven to 400 degrees F.
  • Roll out the pastry on a lightly floured surface to form a 14x12 inch rectangle.
  • Shape bean mixture into a loaf shape as you would a meatloaf and wrap the pastry around it, sealing the edges.
  • Be sure to put the seam on the bottom of the loaf.
  • Place seam side down on a dampened cookie sheet and score the top in a criss-cross pattern.
  • (Score in one direction diagonally completely across top and then in the other direction to make it criss-crossed).
  • Mix the egg and milk together and brush over the pastry using a pastry brush.
  • Bake in your preheated oven for 25 to 30 minutes.
  • Top will be golden brown and beautiful!
  • For the sauce, heat the oil in a pan and saute the leek for 5 minutes.
  • Add the sherry and stock and bring to a boil.
  • Simmer for 5 minutes and serve with your garbanzo roast!
