Garbage, not because it's rotten but because you can just dump all the ingredients in a large bowl and mix away. I also like to call this "church lady potluck cake" because there always seems to be a cake like this at church potlucks. I sometimes substitute raisins for the dates and pecans for the walnuts. Very flexible recipe from the Norske Nook cookbook.

2 cups applesauce
2 eggs
1/2 cup butter, softened
1 cup dates, chopped
1 cup walnuts, chopped
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1/3 teaspoon salt
1 1/2 cups sugar
2 teaspoons baking soda
2 cups flour
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 tablespoon molasses
2 cups frosting (of your choice, your own, or my Cream Cheese Frosting recipe.)

Steps:

  • Preheat oven to 325°.
  • Stir all the ingredients, except frosting, into a large bowl in the order given.
  • Mix slowly by hand at first, then beat with an mixer on medium speed for about 2 minutes.
  • Pour into a greased 9x13 pan and bake for 1 hour and 20 minutes, until a toothpick comes out clean.
  • Cool, then top with frosting.

1 large can crushed pineapple, drained
1 can cherry pie filling
1 box yellow cake mix - do not prepare
1 stick butter, melted

Steps:

  • Drain pineapple and put in bottom of 9 x 13 pan. Mix in cherry pie filling.
  • Cover with dry cake mix and drizzle with melted butter.
  • Bake 350 degrees F for 1 hour.

This recipe is super easy to make and really nice to eat. Get the kids in the kitchen to help you make it. they will love doing it.

1 store bought pound cake
1 large container of frozen whipped topping, thawed
1 pt fresh strawberries (or use frozen and thawed)
1 box strawberry jello
1 new bathroom garbage can or large plastic canister

Steps:

  • 1. Line garbage can or canister with plastic wrap. Make sure you overlap the edges well so the wet parts of the cake don't seep through. (This is why you should use a new CLEAN garbage can)
  • 2. Slice strawberries, slice pound cake thinly. Start layering strawberries, cake, and then a layer of whipped cream in the lined can. Repeat until all of these ingredients are gone and hopefully your last layer is cake. You should have plenty of room at the top of the can.
  • 3. In a bowl mix strawberry jello with only 3/4 the amount of water it calls for. Pour this into the can over the mixture. Cover the top of the cake loosely with plastic wrap and store in fridge overnight.
  • 4. The next day your cake is ready to unveil. Pull the cake out by the plastic and set on a pretty cake plate. Top with a sprig of mint and more whipped cream.
