This easy to make Autumn Apple Salad is loaded up with crispy bacon, crunchy pecan halves, crumbled feta, and sweet dried cranberries. All drizzled with a homemade Maple Dijon Vinaigrette. This salad comes together in less than 15 minutes and is a perfect side dish or light lunch.

2 cups baby spinach (raw)
¼ cup dried cranberries
¼ cup pecans (halved)
2 tbsp feta cheese
½ granny smith apple (sliced)
½ fuji apple (sliced)
2 slices bacon (cooked and chopped)
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp maple syrup
1½ tsp dijon mustard
salt & pepper to taste

Steps:

  • Make Dressing: Add all the ingredients for the maple dijon vinaigrette to a small mason jar. Shake to mix.
  • Layer Salad: Add the spinach to a medium size bowl or plate.
  • Top with dried cranberries, halved pecans, feta cheese, sliced apples, and cooked bacon.
  • Dress and Toss: Drizzle the salad dressing over the top of the salad, toss and serve.

4 slices thick-cut bacon, diced
2 Fuji apples
5 ounces arugula
3/4 cup unsalted roasted pecan halves
1/4 cup plain whole-milk yogurt
2 teaspoons chopped flat-leaf parsley
2 tablespoons extra-virgin olive oil
1 tablespoon pure maple syrup
2 teaspoons fresh lemon juice
1 clove garlic, pressed
Pinch each of kosher salt and freshly ground black pepper

Steps:

  • Prepare the salad: Heat a medium skillet over medium high heat. Add the bacon and cook, stirring often, until just crisp, 8 to 10 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate. Meanwhile, halve and core the apples, then thinly slice. Transfer to a large bowl.
  • Make the dressing: Combine all of the ingredients in a jar or container with a lid. Cover and shake to combine.
  • Finish the salad: Add the arugula, pecans and bacon to the large bowl. Add as much dressing as you like, toss to coat and serve.

1 medium apple, chopped
1 cup crumbled feta cheese
1 cup glazed pecans
1/2 cup chopped red onion
1/3 cup dried cranberries
5 bacon strips, cooked and crumbled, optional
DRESSING:
2 tablespoons cider vinegar
1 tablespoon sugar
1/2 teaspoon Dijon mustard
1/8 teaspoon pepper
1/4 cup canola oil

Steps:
