3/4 cup granulated sugar
1/3 cup butter
8 ounces bittersweet chocolate, chopped
2 eggs
1 teaspoon vanilla
3/4 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
4 ounces white chocolate, chopped

Steps:

  • In saucepan over medium-high heat, bring sugar, butter and 2 tbsp water to boil, stirring occasionally. Remove from heat; stir in half of the bittersweet chocolate until melted. Let cool for 10 minutes. Whisk in eggs, 1 at a time; whisk in vanilla.
  • In separate bowl, whisk together flour, baking soda and salt; stir into chocolate mixture. Stir in remaining bittersweet chocolate and white chocolate. Pour into parchment paper-lined 9-inch square metal cake pan.
  • Bake in centre of 325F oven for 30 minutes or until tester comes out with a few crumbs clinging. Let cool in pan on rack.
  • Cut into squares.

1 ¼ cups chopped pecans
2 (1 ounce) squares unsweetened chocolate
½ cup unsalted butter
1 pinch salt
⅔ cup all-purpose flour
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
4 (1 ounce) squares semisweet chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking pan.
  • Sprinkle pecans on cookie sheet and toast in oven until lightly colored. Set aside to cool.
  • In saucepan over low heat, melt unsweetened chocolate and butter, stirring occasionally. Let cool.
  • In a large mixing bowl, beat the eggs, sugar and vanilla. Fold in the melted chocolate. Sift together the flour, and salt and add to mixture, stirring lightly. Chop the semisweet chocolate into coarse chunks and add to mixture, along with pecans. Mix until just blended. Pour batter into pan and smooth top.
  • Bake about 25 minutes. Let cool before cutting into bars.
