If you have a lot of leftover ham, this is an excellent thing to do with it. In fact, it's worth getting ham just to make it. Not your usual meatloaf.

2 teaspoons lard (fat from the ham)
1/4 cup brown sugar
3 slices peeled cored pineapple
2 tablespoons raisins
450 g cooked ham, finely chopped (equal to 3 cups)
300 g ground lean pork
2 cups fresh breadcrumbs
1 stalk celery, finely chopped
1/2 small onion, finely chopped
1 tablespoon Dijon mustard
2 eggs
2 large apples, grated
2 teaspoons rubbed sage
1/4 teaspoon clove

Steps:

  • Preheat the oven to 350°F.
  • Melt the fat in a 9"x5" loaf pan.
  • Sprinkle the sugar evenly over the bottom, and lay the pineapple slices, cut in half or quarters if need be, in a nice pattern on the bottom.
  • Fill holes with raisins.
  • Mix the remaining ingredients, and press the mixture over the pineapple.
  • Bake for 1 hour& 15 minutes.
  • Remove the meatloaf from the oven, and let it stand 5 minutes.
  • Invert it onto serving platter, wait a few seconds, then remove the pan and serve.

This is a great way to use up leftover cooked ham, since this makes two meat loaves you can freeze one uncooked, just omit the chili sauce and bacon on top, thaw in refrigerator overnight, top with tomato sauce and bacon, then bake as directed.

2 lbs ground beef
1 lb ground pork
1 1/2 cups finely chopped cooked ham (can use more if desired)
1 green bell pepper, seeded and finely chopp
1 medium onion, finely chopped
2 tablespoons fresh minced garlic (or to taste)
4 cups soft breadcrumbs (use soft breadcrumbs only)
1/4 cup milk
1/3 cup chili sauce or 1/3 cup ketchup
1/4 cup light brown sugar
1/4 cup maple syrup
3 -4 tablespoons Worcestershire sauce
1 -2 tablespoon louisiana hot sauce (or to taste)
1 tablespoon seasoning salt, to taste or 1 tablespoon white salt
1 teaspoon black pepper (or to taste)
2 cups chili sauce, divided
6 slices bacon

Steps:

  • Set oven to 350 degrees.
  • Prepare foil-lined 10 x 15-inch baking sheet, then place a rack in the pan.
  • In a large bowl using clean hands mix together all the meatloaf ingredients.
  • Shape into two 9x5-inch loaves and place onto the rack in the baking sheet, or just cook one and freeze the other for another meal.
  • Pour about 1 cup chili sauce onto each top of loaf, then place 2-3 bacon slices over the top lengthwise.
  • Bake for about 40-45 minutes.

2 eggs
1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

1/4 cup (1/2 stick) unsalted butter
1 cup finely chopped onion
3/4 cup finely chopped green bell pepper
1 1/2 pounds ground pork
1 pound finely chopped smoked ham (about 3 1/2 cups)
1 cup finely crushed saltine crackers
1 cup milk
2 large eggs, beaten to blend
1 teaspoon black pepper
3/4 teaspoon salt
1/2 cup orange marmalade
1/2 cup Dijon mustard
1/3 cup (packed) golden brown sugar

Steps:

  • Preheat oven to 350°F. Melt butter in heavy medium skillet over medium-low heat. Add onion and bell pepper. Cover and cook until vegetables are tender, stirring occasionally, about 10 minutes. Cool mixture completely.
  • Mix ground pork, ham, crushed crackers, milk, eggs, pepper, salt and cooled onion mixture in large bowl; combine thoroughly. Transfer pork mixture to shallow baking pan. Shape into 9x4x2 1/2-inch loaf. Using long knife, make shallow crisscross (diamond) pattern in top of loaf. Bake loaf 30 minutes.
  • Meanwhile, blend orange marmalade, Dijon mustard and brown sugar in small bowl for glaze.
  • Drizzle 1/3 cup glaze over loaf; bake 15 minutes. Drizzle another 1/3 cup glaze over loaf; bake 15 minutes. Drizzle remaining glaze over loaf and bake until thermometer inserted into center of loaf registers 165°F, about 20 minutes longer. Transfer loaf to platter; let stand 10 minutes. Pour pan juices into small bowl; whisk to blend.
  • Cut loaf crosswise into 3/4-inch-thick slices. Serve with pan juices.

This was a favorite recipe of our Mom's for Sunday dinner. We all loved it, and I'm sure you will too. Ground ham is formed into a meatloaf and baked in the oven.

2 pounds ground ham
1 ½ pounds ground pork
2 eggs
1 cup dried bread crumbs
1 cup evaporated milk
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup brown sugar
1 tablespoon mustard powder
¼ cup cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 90 minutes.
  • While the loaf is baking, combine the brown sugar, mustard powder and vinegar. Mix well and pour over the loaf in the final 15 minutes of baking.
