I created this salad recipe to feature wild rice, a delicious state crop, plus other harvest ingredients like apples and pecans. DRESSING:
1/4 cup olive oil
1/3 cup orange juice
2 tablespoons honey
SALAD:
1 cup uncooked wild rice
2 Golden Delicious apples, chopped
Juice of 1 lemon
1 cup golden raisins
1 cup seedless red grapes, halved
2 tablespoons each minced fresh mint, parsley and chives
Salt and pepper to taste
1 cup pecan halves

Steps:

  • Combine dressing ingredients; set aside. Cook rice according to package directions; drain if needed and allow to cool. In a large bowl, toss apples with lemon juice. Add raisins, grapes, mint, parsley, chives and rice. Add dressing and toss. Season with salt and pepper. Cover and chill several hours or overnight. Just before serving, add pecans and toss lightly.

1 small onion, chopped
1 celery rib, chopped
2 tablespoons butter
1 package (6 ounces) long grain and wild rice mix
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
3/4 cup golden raisins and cherries
1/2 cup water
1/3 cup chopped pecans, toasted

Steps:

  • In a large saucepan, saute onion and celery in butter until tender. Add rice mix with contents of seasoning packet; stir to coat. , Stir in the broth, fruit and water. Bring to a boil. Reduce heat; cover and simmer for 24-28 minutes or until liquid is absorbed and rice is tender. , Remove from the heat; stir in pecans. Cover and let stand for 5 minutes. 1/2 cup white rice
1/2 cup wild rice

2 ounces sliced almonds, available in small pouches on the baking aisle
3 scallions, thinly sliced

Steps:

  • Bring water to a boil with butter and salt. Add white and wild rice blend and golden raisins, stir, return to a boil. Reduce heat, cover the pan and simmer 20 minutes or until just tender. Fluff rice with a fork. Add chopped mandarins, almonds and scallions to the rice. Toss fruited rice to combine and serve.;

1/2 cup wild rice, uncooked
2 tablespoons dried onion flakes

2 teaspoons chicken bouillon granules
2 teaspoons brown sugar, packed
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper
1/4-1/2 cup orange juice
1/4 cup dried apricot, chopped
1/4 cup dried sweetened cranberries, chopped
1/4 cup dark raisin

Steps:

  • In large saucepan, combine water, brown rice, wild rice, onion, parsley, butter, bouillon granules, sugar, thyme & both peppers.
  • Bring to boil over high heat, then reduce heat to low.
  • Cover & simmer 45-50 minutes, or until rice is ALMOST tender.

The way I came upon this mix is very fitting-a friend gave me a container of it as a gift one Christmas. The next year, I gave it to many friends, all dressed up in decorated mason jars. Every single one asked for the recipe! I learned to cook through trial and error. I've been doing it for 30 years...it's my favorite pastime. My husband and I live on a 50-acre farm, where we breed and race horses. We also raise chickens and lambs. Our six children are grown, and now we're the grandparents of eight youngsters.

1 1/2 cups mixed dried fruit diced (about 6 oz.)
1 cup onion chopped
2 tablespoons butter or margarine
1 (6-ounce) package white rice long grain and wild mix*
3 teaspoons chicken bouillon
2 (6-ounce) packages turkey breast tenderloin cooked sliced, cut in 1-inch pieces (about 1
1/3 cup walnuts coarsely chopped

Steps:

  • * Preparation Time: 35 minutes Storage Time: Up to 24 hours Heating Time: 30 to 40 minutes In a small bowl, pour boiling water over dried fruit. Let stand for 10 minutes to soften drain fruit well, reserving liquid.Meanwhile, in a 10-inch skillet over medium heat, saute onion in butter or margarine until tender. Stir in rice and cook until rice is golden and clear. Add reserved 2 cups liquid and bouillon granules. Bring to a full boil reduce heat to low, cover and simmer for 25 minutes or until all liquid is absorbed. Remove from heat.Stir in turkey and reserved fruit. Place in a 1 1/2 -quart casserole. 1 tablespoon minced garlic

Rice Pilaf
Olive oil
1/4 cup finely diced onions
1/4 cup finely diced carrots
1 tablespoon butter
A few saffron threads or 1/2 teaspoon turmeric
1 cup jasmine or basmati rice
1 3/4 cups chicken broth
1/2 teaspoon salt
1/4 cup currants
1/4 cup dried cranberries
3 tablespoons chopped walnuts for garnish
Parsley for garnish

Steps:

  • 1. For the steak, mix olive oil, shallots, garlic and oregano with pepper and salt. Spread onto both sides of the steak. 2. Cover and marinate in the fridge for at least 2 hours. 3. If it is hanger steak, it will go fast. Ya man! 3. Make pilaf as normal. Saute veggies in oil, add butter, saffron or turmeric and rice. Add broth, fruits, and cook about 15-20 minutes.

1/3 cup sugar
1/4 teaspoon salt
2 1/2 cups skim milk
2 egg whites
1 whole egg

1/2 cup coarsely chopped dried apricot
1/4 teaspoon nutmeg
1 teaspoon cinnamon

Steps:

  • In a large bowl, combine the dry milk, sugar and salt.
  • Add the milk, eggs, and vanilla, mixing the ingredients well with a fork.
  • Stir in rice, raisins, apricots, nutmeg, and cinnamon.
  • Pour mixture into a greased 6-cup casserole dish.
  • Bake the pudding in a preheated 325 degree oven for 15 minutes. Stir the pudding, and then bake the pudding for another 35 minutes or longer until the milk is absorbed. Serve the pudding warm or chilled.

4 ounces whole onion or 3 ounces chopped ready-cut onion (1 cup)
1 teaspoon olive oil
3/4 cup long-grain rice
1 1/2 cups no-salt-added chicken stock
1/2 teaspoon turmeric or 1/4 teaspoon saffron threads
10-ounce piece of salmon, swordfish or tuna
1 tablespoon lime juice
1/4 cup dried cherries
1 1/2 scallions
1 ripe banana
1/4 teaspoon salt
Pinch nutmeg

Steps:

  • Insert a double thickness of aluminum foil in broiler, and preheat.
  • Chop whole onion.
  • In a very hot nonstick pan, heat oil; saute onion over medium-high heat until it begins to soften and brown. Stir in rice, stock and turmeric; bring to boil, reduce heat, cover, and cook 17 minutes, until rice is tender and liquid has been absorbed.
  • After the rice has been cooking for about 5 minutes, wash and dry the fish, and place it in the broiler. Measure the fish at the thickest part and cook 8 to 10 minutes to the inch. For thick cuts, like swordfish or tuna, turn fish halfway through broiling.
  • Squeeze lime juice over cherries; set aside.
  • Wash, trim and slice scallions; cut banana into small cubes.
  • When rice is cooked, stir in cherries with the lime juice, scallions, banana, salt and nutmeg, and serve with fish.

1/2 cup Apricots, dried, chopped
3/4 cup Wild rice, cooked
3/4 cup White rice, cooked
3/4 cup Red grapes, seedless, cut in halves
3/4 cup Pecans, coarsely chopped
4 Green onions, chopped
1/3 cup Chives, chopped
4 tablespoons Parsley, chopped
1 Lemon, juice of small
5 tablespoons Olive oil
3 tablespoons Honey
1 tablespoon Mint, chopped

Steps:

  • Place raisins and dried apricots in bowl. Cover with boiling water, set aside.
  • In large mixing bowl, add rices, grapes, pecans, onions, chives, and parsley. Mix well.
  • Drain raisins and apricots, Add to rice and mix well.
  • In a small bowl, whisk together lemon juice, oil, honey, and mint. Add to rice mixture and toss gently.
  • Add salt and pepper to taste. Garnish with chopped parsley if desired.

FAR EAST FRUITED RICE



Far East Fruited Rice image

This recipe is simple and tastes great when served cold or warm. The rice I use for this is a basmati-style rice grown in the USA, When this rice is cooked, the grains swell only lengthwise,giving it a long slender grain that are dry, light and separate. It has a great aroma and delicious flavor. Great used in casseroles and is ideal for absorbing sauces.If you do not have this type of rice you can substitute with Jasmine or regular white rice. I hope you like this dish- It is so good you will want to serve to your guests.

3 cup(s) cooked rice
1/3 cup(s) chopped pitted dates,or craisins or golden raisins

1/2 cup(s) pecans or cashews or walnuts,chopped
1/2 teaspoon(s) salt
1/2 fluid the juice of one of the oranges, or 1/2 cup orange juice
1 tablespoon(s) honey
1 teaspoon(s) seasoned rice wine vinegar,no substitute
2 tablespoon(s) orange zest

Steps:

  • Peel and segment 2 of the oranges; set aside. Zest the peel to get 2 Tbsp. In a large bowl, combine the rice,orange segments, dates,mint and nuts. Add remaining ingredients in a small bowl and whisk to incorporate. Pour over rice mixture and toss well. Salt and pepper to taste if needed.
