HONEY-LIME BERRY SALAD
I picked up this dish a couple of years ago, and really like the mint and fruit combo. Cilantro is one of my summer favorites so sometimes I use it instead. Turns out, this recipe's really two in one! -Kayla Spence, Wilber, Nebraska

FRESH FRUIT SALAD WITH HONEY VANILLA YOGURT

- Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the orange juice and banana slices in a separate bowl. Add the berries and grapes and gently mix the fruit mixture together. Spoon the fruit into serving bowls and top with the yogurt.
GRILLED FRUIT WITH HONEY AND RICOTTA

- Heat a grill pan over high heat. Spray pan lightly with canola oil. Grill fruit, cut side down, until marked and softened, about 3 to 5 minutes. Serve with a dollop of ricotta cheese and drizzle with honey.

- Whisk lime juice, honey and mint in large bowl to blend. Using melon baller, scoop out cantaloupe. Add all fruit to syrup in bowl; toss to combine. Let stand 15 minutes to allow flavors to blend. (Can be made 3 hours ahead. Cover and chill.) Spoon fruit into goblets.

- In the bottom of a cocktail shaker, stir honey with 1 tablespoon very hot water (from the tap) until dissolved. Fill shaker halfway with ice and top with tequila, grapefruit juice, and lime juice. Shake vigorously until outside of shaker is cold and frosty, about 10 seconds.
- Strain into a tall, narrow glass, such as a Collins, filled with crushed ice. Stir with a swizzle stick or straw until glass turns frosty, about 10 seconds. Garnish with grapefruit rind; serve immediately.
