RASPBERRY FRUIT SPREAD WITHOUT PECTIN



Raspberry Fruit Spread without Pectin image

I was experimenting with making jam without pectin and it turned out really yummy. You need to cook the raspberries for a pretty long time until they fall apart.

1 pound fresh raspberries
1 ½ cups white sugar
2 tablespoons lemon juice

Steps:

  • Combine raspberries, sugar, and lemon juice in a saucepan and mix well. Cover and refrigerate overnight.
  • Inspect 3 jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Slowly bring raspberry mixture to a boil and simmer uncovered over medium heat until the mixture is no longer liquid, 40 minutes to 1 hour. Stir every few minutes and skim off any foam with a ladle or a large spoon.
  • Ladle raspberry jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

3/4 cup diced dried fruit and raisin mixture (from 7-ounce package)
1/4 cup sweetened dried cranberries
1/2 cup apple cider
1 tablespoon cider vinegar
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts
1 package (8 ounces) cream cheese, softened
Crackers, if desired

Steps:

  • Mix all ingredients except walnuts, cream cheese and crackers in 2-quart saucepan. Cook over medium heat about 5 minutes, stirring frequently, until fruit is plump and mixture is thick. Cover and refrigerate about 1 hour or until completely cooled.
  • Meanwhile, heat oven to 350°. Spread walnuts on cookie sheet. Bake 5 to 7 minutes, stirring twice, until light golden brown; cool.
  • Mix walnuts and cream cheese in medium bowl. Spread cream cheese mixture in 1/2-inch-thick layer on serving plate. Top with chutney. Serve with crackers.

4 oz cream cheese
1 Tbsp 1 or more tbls. fruit jam (your choice)
1/4 tsp vanilla extract
3 Tbsp finely chopped nuts (your choice)

Steps:

  • 1. In a small bowl. To room temperature cream cheese blend in vanilla and then jam. Taste to make sure it has as much flavor as you want.
  • 2. Add chopped nuts. Blend well. Scrape into an air tight container and refrigerate until chilled. Label and date.
  • 3. It will keep well refrigerated up to 30 days.

8 slice(s) french bread, 1/4" thick slices
2-4 tablespoon(s) fruit spread or preserves (apricot, strawberry, raspberry, fig, peach, etc. your choice)
4 ounce(s) havarti cheese, sliced (can substitute gruyere, muenster or gouda)
1 large avocado, sliced

Steps:

  • Heat a large nonstick skillet over medium heat. Butter four bread slices on one side only. Place slices, butter-side down, on a clean surface. Spread 1/2-1 tablespoon fruit spread or preserves of choice in a thin layer on each slice. Top with cheese and layer with avocado slices. Cover with remaining bread; butter tops.
  • Place two sandwiches in the pan and cook for 2-3 minutes, until bread is golden brown and cheese has begun to melt. Flip sandwiches over, pressing down slightly with a spatula. Continue cooking until golden brown. Serve immediately.
