I've been serving this fruit salad for breakfast and brunch for years. The peach pie filing is what makes it irresistible to eat, and serving it in waffle cones just adds to the fun. Kids just love it. -Judy Horton, Fort Worth, Texas

Number Of Ingredients 11

1 can (21 ounces) peach pie filling
2 cups fresh strawberries, halved
2 cups green grapes, halved
2 cups cubed fresh pineapple
3 medium kiwifruit, peeled, halved and sliced
2 medium bananas, sliced
1 can (15 ounces) mandarin oranges, drained
1 jar (6 ounces) maraschino cherries, drained and halved
12 ice cream waffle bowls or cones
1/4 cup chopped walnuts, toasted
Mint sprigs, optional

Steps:

  • In a large bowl, combine the first eight ingredients. Refrigerate until serving., Just before serving, spoon salad into waffle bowls and sprinkle with walnuts. Garnish with mint sprigs if desired.

- one cantaloupe, cut into 1 inch pieces
- one honeydew melon, cut into 1 inch pieces
- one seedless watermelon, cut into 1 inch pieces
- one pineapple, cut into 1 inch pieces
- two boxes of waffle cones
- one container fresh whole strawberries, 2 pounds

Steps:

  • in a large bowl, mix cantaloupe, honeydew, watermelon, and pineapple. Spoon fruit into waffle cones. Top with strawberries. Makes two dozen.

2 medium nectarines, chopped
1 cup whole small fresh strawberries
1 cup fresh blueberries
2 tablespoons mashed fresh strawberries
1 teaspoon finely chopped crystallized ginger
1/4 teaspoon ground cinnamon
1 cup reduced-fat whipped topping
4 ice cream waffle cones

Steps:

  • In a small bowl, combine the nectarines, whole strawberries and blueberries. In another bowl, combine the mashed strawberries, ginger and cinnamon. Fold in whipped topping. , Fill each waffle cone with 1/4 cup fruit mixture; top with 2 tablespoons whipped topping mixture. Repeat layers. Serve immediately.
