FRUIT ROCKS AU DE CHAMPAGNE- OR FRUIT IN A CUBE -LMF
Cute little berry cubes that bring joy to your life as well as your glasses. I use these in the Summer or Spring to bring a joy to a tickling glass of ice tea, farm water, champagne, wine, or tonic water. Easy to put together, and a glorious in view.

Steps:
- Defrost berries overnight. Push berries and jam through a strainer until you have 1 1/2 cups (approx) of mixture.
- Put berry mixture into ice cube trays to make 12 cubes. Pour fruit juice into another set of ice cube trays.
- Freeze at least 3 to 4 hours.
- Pull cubes out with a small knife and put them into a bag for later use, and back in freezer.
- 30 minutes before serving put 2 / 3 cubes of berry/ juice mixture in each glass. Place the glasses in the fridge for 20 minutes or on the counter for 15 minutes to soften cubes slightly.
- Pour wine, or even water over cubes and serve with something sweet like a piece of cake.

- Combine all the fruits in a small mixing bowl.
- Divide the fruit into tow sherbert dishes.
- Cover and chill.
- When ready to serve, pour chilled champagne over fruits.

MOM'S FRUITCAKE ROCKS
This was the recipe Mother used for years. She really didn't use recipes, but I did find this in some old cookbooks after she passed away. She didn't write down oven temp or cook time so that is my estimate. Cook time is per cookie sheet. She also didn't write down yield, but it makes a large batch, so yield is an estimate also. Cook these around Thanksgiving, place in cookie tin with wax paper between layers and freeze. Take out just before Christmas and they are wonderful.

Steps:
- Preheat oven to 350°F.
- Cream butter and sugar.
- Add eggs and cream.
- Slowly mix in flour and juice or wine.
- Add fruit and mix well.
- Be sure that the fruit is chopped in large chunks.
- Add nuts and mix.
- Drop by large tablespoonfuls onto cookie sheet and bake until brown.
- (Mother never timed, she just knew. I am estimating the time to be 20 minutes per cookie sheet, but this could vary depending on size of cookies).
