1 tube Pillsbury Cinnamon Rolls
1 (20oz) can of apple pie filling
vanilla ice cream ((optional))

Steps:

  • Preheat your oven to 375 degrees and grease a 2-quart baking dish.
  • Cut each cinnamon roll into 4 bite-sized pieces and toss them with the apple pie filling.
  • Place the mixture into your prepared dish and bake uncovered in the center rack of your oven for 20-25 minutes, or until the cinnamon rolls are cooked through and golden brown.
  • Remove from the oven and spread the frosting that came with the tube of cinnamon rolls all over the top.
  • Enjoy warm with vanilla ice cream.

150 g (5 oz or scant ⅔ cup) butter, plus extra for greasing
100 g (3½ oz or generous ¾ cup) confectioner's sugar, sifted
½ teaspoon vanilla bean paste or extract
1 tablespoon boiling water
250 ml (8½ fl oz or 1 cup) buttermilk
2 teaspoons ground cinnamon
¼ teaspoon mixed spice
75 g (2½ oz or scant ½ cup) soft light brown sugar
25 g (1 oz or 2 tablespoons) caster (superfine) sugar
300 g (10½ oz or 2½ cups) all-purpose flour, plus extra for dusting
1 teaspoon baking powder
½ teaspoon baking soda

Steps:

  • Melt the butter in a small pan or in a bowl in the microwave.
  • Lightly grease a large baking tray with the extra butter.
  • To make the glaze, mix 3 tablespoons of the melted butter in a bowl with the icing sugar and vanilla paste. Add the boiling water and 2 tablespoons of the buttermilk and stir to combine. Cover and chill.
  • To make the cinnamon filling, mix 3 tablespoons of the melted butter with the cinnamon, mixed spice and both types of sugar. Add a pinch of salt, then stir the mixture together until it resembles wet sand. Set aside.
  • Preheat the oven to 400°F.
  • To make the dough, combine the flour, baking powder and bicarbonate of soda in a mixing bowl and add a generous pinch of salt. Make a well in the middle of the mixture and pour in the remaining melted butter and the rest of the buttermilk. Stir with a rubber spatula until fully combined. The dough might seem dry, but keep stirring until the dry ingredients absorb the wet - the dough will be shaggy, not smooth, at this point.
  • Tip the dough out onto a lightly floured work surface and knead for 3-4 minutes. When ready, the dough will look smooth and have a slight shine, and you will feel it is more elastic. Flour the work surface again and pat the dough out to a rough 20 x 30 cm (8 x 12 in) rectangle. Sprinkle the filling in an even layer over the dough, leaving a rough 1 cm (½ in) border. Press the filling into the dough. Roll up the dough lengthways up as tightly as you can, to form a long sausage shape. Cut into 12 equal pieces.
  • Transfer the buns to the prepared tray, cut-side up, leaving about 2 cm (¾ in) between each. Bake for 20 minutes or until puffed up, golden and sticky. Cool for 30 minutes, then remove the glaze from the refrigerator and spread over the buns. Serve immediately or let the glaze set.
  • Make ahead
  • Make the glaze first and leave it to stand in the refrigerator. As the glaze cools, the butter begins to set and thicken, so it resembles a cream-cheese frosting. Make the buns a day ahead and reheat in the oven without the glaze.

1 cup confectioners' sugar
4 ounces cream cheese, softened
¼ cup butter, softened

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Brush a 9-inch square baking dish with 2 tablespoons melted butter.
  • Whisk flour, 2 tablespoons white sugar, baking powder, and salt together in a large bowl. Work 3 tablespoons softened butter into flour mixture using your hands. Beat milk and egg together in another bowl; pour into flour-butter mixture and stir with a rubber spatula until a soft dough forms.
  • Turn dough out onto a floured work surface and roll dough into a 1/4-inch thick rectangle. Brush surface of dough with 2 tablespoons melted butter.
  • Whisk 1/2 cup white sugar, brown sugar, and cinnamon together in a small bowl. Sprinkle 1/2 of the cinnamon sugar mixture in the bottom of the prepared baking dish. Sprinkle remaining cinnamon sugar over butter-brushed dough. Roll dough around filling to form a log; cut log into 18 rolls and place rolls in the prepared baking dish.
  • Bake in the preheated oven until rolls are set, 20 to 25 minutes.
  • Beat confectioners' sugar, cream cheese, 1/4 cup softened butter, and vanilla extract together in a bowl until frosting is smooth. Top hot cinnamon rolls with cream cheese frosting.

QUICK GLUTEN FREE CINNAMON ROLLS

The idea to make these popped into my mind when I made **Jubes** Quick Gluten Free Scones #220200 for the first time. Instead of cutting out scones I rolled the flattened dough and thought that actually I could have filled it. So I made a second batch of dough and made up my own version of cinnamon roll filling. I really liked that they were not overly sweet as the dough is not sweetened. As usual, I used rice syrup, but will suggest honey which might be slightly sweeter. Instead of the pine nuts you can of course use any other nut you like. I thought about pecans and maple syrup for the filling - if anyone feels like trying that, please tell me how it turned out!

2 cups gluten-free bread mix
2/3 cup whipping cream
water
2 tablespoons butter, softened
2 tablespoons honey
1 teaspoon cinnamon
2 tablespoons pine nuts, chopped

Steps:

  • Preheat oven to 200 ° Celsius.
  • Mix gluten-free bread flour mix and cream lightly. You should just barely nead to get a soft dough. If it's too crumbly, add water by tablespoons until the consistency is so that you can just form a ball of dough to roll out.
  • Roll the dough out between two sheets of nonstick baking paper into a rectangle as thinly as possible. I managed about 1/2 inch thickness.
  • Cream together butter, honey and cinnamon.
  • Gently brush the mixture on the dough, maybe using a knife or your fingers. If the mass is too solid to brush, lightly melt it in a water bath so that it becomes softer but not liquid.
  • Sprinkle with chopped pine nuts.
  • Carefully roll the dough into a log.
  • Using a sharp knife dusted with some rice flour, cut it into 14 rolls.
  • If the filling is too runny, cover the log with cling-wrap and let it settle in the fridge for some minutes, then cut into rolls.
  • Place rolls on a baking tray layered with baking paper. As **Jubes** suggests, put them together close to assist rising.
  • Brush the top of the rolls with milk.
  • Bake for about 10 minutes or until they're done.

¾ cup warm water (105 degrees F (41 degrees C))
¼ cup white sugar
2 ½ teaspoons instant yeast
2 ¾ cups all-purpose flour
2 tablespoons butter
1 egg
1 teaspoon salt
½ stick butter, at room temperature
⅔ cup brown sugar
1 tablespoon ground cinnamon
1 ½ cups confectioners' sugar
¼ cup pureed fresh strawberries
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Combine water, sugar, and yeast in the bowl of a stand mixer. Allow yeast to bloom until foamy, about 10 minutes.
  • Gradually add flour to the yeast mixture. Heat butter in a small microwave-safe bowl until melted; add to the flour mixture. Add egg and salt. Mix until a soft, sticky dough forms. Transfer dough to the counter and cover with plastic wrap. Let rest until doubled in size, about 1 hour.
