TROPICAL FRUIT FANTASY

3 cups finely ground gingersnap cookies (about 13 1/2 ounces)
1/2 cup (packed) golden brown sugar
2 teaspoons ground ginger
3/4 cup (1 1/2 sticks) unsalted butter, melted
2 pints mango sorbet, slightly softened
1 pint lime sorbet, slightly softened
1/2 small pineapple, peeled, cored, chopped
1 small papaya, peeled, seeded, chopped
1 small mango, peeled, pitted, chopped
2 1/2-pint baskets blueberries
Shredded sweetened coconut, toasted

Steps:

  • Combine gingersnap cookie crumbs, brown sugar, and ginger in large bowl. Stir in melted butter. Press over bottom and up sides of 9-inch-diameter spring form pan with 2 3/4-inch-high sides. Freeze until firm, about 20 minutes.
  • Spread mango sorbet in crust; freeze until firm, until 20 minutes. Spread lime sorbet over mango sorbet. Freeze until firm, about 30 minutes.(Can be prepared one day ahead. Cover and keep frozen.)
  • Mix fruit in medium bowl. Remove pan sides from dessert. Place dessert on platter. Spoon fruit atop lime sorbet. Sprinkle with coconut and serve.

1 large seedless orange, peeled, separated
2 tangerines, peeled, seeded, separated
1 large banana, peeled and sliced
1 c canned peaches, in juice
1 c canned pineapple chunks, in juice
1 Tbsp honey
1/4 c chopped walnuts
1/2 tsp ground nutmeg

Steps:

  • 1. Place the orange and tangerine sections in the workbowl of a food processor or in a blender and puree.
  • 2. Transfer the puree to a large mixing bowl.
  • 3. Place the banana slices, peaches and pineapple in the workbowl of a food processor or blender and puree.
  • 4. Add the puree to the orange-tangerine mixture.
  • 5. Stir in the honey until dissolved.
  • 6. Chill, covered for 2 hours or more.
  • 7. Sprinkle with chopped walnuts and nutmeg before serving.

1 can fruit cocktail, drained
1 can crushed pineapple, drained (juice reserved)
1 small box vanilla instant pudding
1 banana, cut up
1 cup nuts (optional)
Fresh fruit of choice (optional)
Small miniature marshmallows (optional)

Steps:

  • Drain fruit cocktail and set aside. Drain pineapple juice into a bowl and add vanilla pudding. Stir until thick.
  • Add mixture and pineapple back to the fruit cocktail and add the cut up banana.
  • Add nuts if desired. Optional: fresh strawberries, small miniature marshmallows, other fruit of choice.
