This recipe is from one of my Grandma's old cook books that I found about 10 years ago when I was going through her things after the funeral. This spread is simple to make and tastes really good on a hot, humid, Oklahoma summer day.

1 cup cottage cheese
1 (3 ounce) package cream cheese
1/2 cup shredded sharp cheddar cheese or 1/2 cup crumbled feta cheese
1 tablespoon Miracle Whip or 1 tablespoon mayonnaise
1 dash salt
1 dash paprika
1 dash cayenne pepper
2 tablespoons minced onions
1/4 cup olives or 1/4 cup pickle, finely chopped

Steps:

  • Place all ingredients in a sturdy mixing bowl.
  • Use an electric mixer, gradually going from low to high, and beat until creamy (about 3 minutes).

3 tbs mayonnaise (full fat)
3 tbs salad cream
2 tsp pickle vinegar
1 tsp English mustard (or other smooth mustard to taste)
1 stick celery
6 small gherkins
1 small carrot
½ bell pepper
1 tbs capers
2 spring onions
Other crunchy, non watery vegetables of choice

Steps:

  • Put the mayonnaise, salad cream and mustard into a medium mixing bowl, along with 2 teaspoons of vinegar from the jar of gherkins or pickles and mix well.
  • Prepare the vegetable by peeling, cutting into thin batons and then dicing finely. They need to be small, but not so fine they don't have any texture.
  • Add the diced vegetables to the mayonnaise mixture, season with pepper and salt and mix well.
  • Store in a jar in the fridge and use within 3 days.

1 cup shredded cheddar cheese
3/4 cup sliced green onion (or a few shakes of onion powder, about 1/4 tsp.)
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/2-1 lb deli roast beef (and or or other sandwich meat)
pickle (optional)

Steps:

  • Mix all the spread ingredients together.
  • Slice a loaf of French bread lengthwise.
  • Spread mixture on the inside of both halves.
  • Top bottom half with any combination of sandwich meats that you desire.
