1-1/4 cups crushed pretzels
1/4 cup sugar
1/2 cup butter, melted
FILLING:
1 can (14 ounces) sweetened condensed milk
1/2 cup thawed nonalcoholic strawberry daiquiri mix
1 package (8 ounces) cream cheese, softened
1 container (16 ounces) frozen sweetened sliced strawberries, thawed
1 carton (8 ounces) frozen whipped topping, thawed
SAUCE:
1 container (16 ounces) frozen sweetened sliced strawberries, thawed and undrained

Steps:

  • In a small bowl, combine the pretzels, sugar and butter. Press onto the bottom of a greased 11x7-in. dish. Refrigerate for 30 minutes., For filling, in a large bowl, combine milk and daiquiri mix. Beat in cream cheese until smooth. Stir in strawberries; fold in whipped topping. Pour over crust (dish will be full). Freeze for 4 hours before serving. , For sauce, puree thawed undrained strawberries in a food processor or blender. Strain through a fine sieve. Drizzle over top.

1 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup cold butter, cubed
1/2 cup chopped pecans
2 cups frozen unsweetened strawberries, thawed
1 cup sugar
1 teaspoon lemon juice
1 cup heavy whipping cream, whipped

Steps:

  • In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Stir in pecans. Press into an ungreased 9-in. square baking pan. Bake at 350° for 14-16 minutes or until lightly browned. Cool on a wire rack., Crumble the baked pecan mixture; set aside 1/2 cup for topping. Sprinkle the remaining mixture into an 8-in. square dish. , In a large bowl, beat the strawberries, sugar and lemon juice until blended. Fold in whipped cream. Spread evenly into dish. Sprinkle with reserved pecan mixture. Cover and freeze for 8 hours or overnight.

1 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup butter, melted
1/2 cup chopped walnuts
2 large egg whites
2/3 cup sugar, divided
2 teaspoons water
1/8 teaspoon cream of tartar
1 package (16 ounces) frozen sweetened sliced strawberries, thawed
2 tablespoons lemon juice
1 cup heavy whipping cream

Steps:

  • Preheat oven to 350°. In a small bowl, combine the first four ingredients. Place in a 15x10x1-in. baking pan. Bake until golden brown, 18-20 minutes, stirring occasionally; cool on a wire rack. Set aside 1/3 cup for topping; sprinkle remaining nut mixture into a lightly greased 13x9-in. dish., In a large saucepan, combine the egg whites, 1 tablespoon sugar, water and cream of tartar over low heat. With a portable mixer, beat on low speed for 1 minute. Continue beating on low speed until mixture reaches 160°. Pour into a large bowl. Add strawberries, lemon juice and remaining sugar; beat on high for 8 minutes or until light and fluffy., In another large bowl, beat cream until stiff peaks form. Fold into strawberry mixture. Transfer to prepared dish; sprinkle with the reserved nut mixture. Cover and freeze for 6 hours or overnight.

Strawberry shortbread frozen yogurt image

You don't need an ice cream machine to make this easy frozen dessert, topped with freeze-dried strawberries and crushed biscuits

550g strawberries , hulled
500g pot Greek yogurt
397g can condensed milk
2 tsp vanilla bean paste or extract
200ml double cream
8 shortbread biscuits , crushed (optional)
2 tbsp freeze-dried strawberry pieces (optional, available from Waitrose, Sainsbury's or online)

Steps:

  • Put 400g strawberries in a food processor and blitz to a smooth purée. Chop the remaining strawberries into small pieces and set aside. Add the yogurt, condensed milk and vanilla to the processor and whizz again to combine.
  • Pour the cream into a bowl and lightly whip until it's just holding its shape. Add roughly one-third of the strawberry mixture, fold together with a spatula, then add the remaining strawberry mixture and the chopped strawberries and mix again.
  • Pour half into a freezer-proof container, scatter over half the shortbread pieces, if using, and half the freeze-dried strawberries, then cover with the remaining yogurt mixture, crushed shortbread and freeze- dried strawberries. Freeze for at least 4 hrs until solid. Remove from the freezer 10-15 mins before scooping. Freeze for up to 2 months.
