2 cups creme fraiche or heavy cream
4 large eggs

Steps:

  • Break the chocolate into pieces and process in a food processor until very fine.
  • Heat the creme fraiche to boiling point and with the processor's motor running, pour it through the feed tube in a steady stream. Process a few seconds until smooth.
  • Separate the eggs and add the yolks to the hot chocolate mixture. Process for a few seconds to incorporate. Then transfer the mixture to a bowl and allow it to cool until it has thickened to spreading consistency.
  • In a large mixing bowl, beat the egg whites until stiff peaks form when the beater is raised slowly. Stir about one-fourth of the whites into the chocolate mixture and then carefully fold in the remaining whites until uniform. Pour the mixture into a prepared six-cup souffle dish with a foil collar and freeze for at least three hours. Store up to three days.
  • When ready to serve, carefully remove the foil collar and serve at once.

1 cup sugar
2 tablespoons water
1 tablespoon grated orange rind
*18 egg yolks
3/4 cup orange liqueur (recommended: Grand Marnier), divided
2 1/2 cups heavy cream, whipped
6 ladyfingers, crumbled
1 tablespoon cocoa powder
1 cup fresh berries such as strawberries, blackberries or any in season

Steps:

  • Combine the sugar, water, and orange rind in a saucepan. Bring to a boil and boil 3 to 4 minutes then set aside to cool. Place the yolks in a bowl of a stand mixer and mix on low speed, slowly pouring the sugar syrup into the yolks while beating. Beat at high speed for 10 to 12 minutes. Add 1/4 cup of the orange liqueur and beat 3 minutes on high speed. Fold in the whipped cream. Pour about 2-inches of the mixture into a 4 cup souffle mold or individual molds. Sprinkle with the remaining orange liqueur and crumbled lady fingers. Fill the mold to the top and refrigerate the remainder of the mixture. Place a waxed paper collar around the souffle dish and place in the freezer for 1 hour or until firm. When firm, add the remaining cream to the mold and freeze until frozen. Just before serving, sprinkle the top with the cocoa. Remove the collar and serve immediately. Garnish with seasonal fresh berries.

For those of you who love Stouffer's Spinach Souffle, try this. This recipe makes about twice the amount.

1 (10 ounce) package frozen chopped spinach
1 tablespoon butter
1 teaspoon salt
1 pinch nutmeg
4 tablespoons butter
3 tablespoons flour
1 1/4 cups milk
1 dash cayenne
1 dash Worcestershire sauce
5 eggs, separated
3 tablespoons finely shredded swiss cheese

Steps:

  • Grease a 2-quart souffle dish and preheat oven to 375 degrees F.
  • Thaw spinach.
  • Drain and squeeze out excess moisture.
  • Melt butter in a medium size frying pan.
  • Sprinkle flour on butter and blend in with a slotted spoon.
  • Cook until it bubbles and begins to brown just a little.
  • Remove from heat and slowly blend in the milk, stirring constantly, until smooth.
  • Return to heat, add seasonings and cook on low for about 10 minutes or until thickened, stirring constantly.
  • Beat egg yolks well with a whisk.
  • Add about 1/4 cup of the sauce into the eggs and stir.
  • Add another 1/4 cup and stir again.
  • Remove pan from heat and slowly stir in the rest of the eggs.
  • Place well-drained spinach into a blender or food processor and pour sauce over it.
  • Blend until smooth, about 5-10 seconds.
  • Pour into a bowl.
  • Beat egg whites until fairly stiff, but not dry.
  • Fold them gently into spinach mixture until all white streaks are gone.
  • Pour into souffle dish and sprinkle cheese on top.
  • Bake 45 minutes to one hour until set.
  • (Souffle is done when puffy and nicely browned. It will be somewhat soft on the inside.) Serve immediately.

5 whole eggs
1/4 cup granulated sugar, plus extra for dusting dishes
Softened butter
1 cup plus 1/2 cup heavy cream
3 tablespoons confectioners sugar
1/4 cup Grand Marnier
2 tablespoons orange zest
1/2 cup orange segments

Steps:

  • Combine the eggs and granulated sugar in the top of a stainless steel double boiler and, being careful not to scramble the eggs, whisk over gentle heat until the mixture is golden in color and thick enough to coat the back of a spoon in ribbons. Remove from the heat and set the mixture aside to cool.
  • While the egg mixture is cooling, prepare four 1/2 cup souffle dishes by cutting waxed paper long enough to encircle each souffle dish twice, and stand 3 to 4 inches above its top. Wrap the waxed paper snugly around the outside of the dish and seal the edges with transparent tape. Butter the inside of the dish with softened butter, then sprinkle with granulated sugar, tapping out any excess sugar onto a plate.
  • Using an electric mixer, combine 1 cup of the heavy cream, confectioners sugar, and Grand Marnier, orange zest and whip into firm peaks. With a spatula, gently fold the whipped cream into the egg mixture. Pour the mixture into the buttered souffle dishes, filling them above the rim and into the area enclosed by the waxed paper.
  • Place the souffles into the freezer, for at least 4 hours, preferably overnight. When ready to serve, whip the remaining cream until soft peaks form, remove from the frozen souffle from the freezer, and carefully remove the waxed paper collar. Top with a dollop of whipped cream and several orange segments.

Steps:

  • Wrap outside of a 3 1/2-cup souffle mold or four 6-ounce ramekins with parchment, extending 2 to 3 inches above rim (it should fit snugly). Secure with tape; set aside.
  • In a medium saucepan, whisk together granulated sugar, lemon zest and juice, egg yolks, and salt over medium-high. Cook, whisking constantly, until mixture is thick enough to coat the back of a spoon and small bubbles form around edge of pan, about 5 minutes (do not boil). Immediately remove from heat while continuing to whisk. Pour through a fine-mesh sieve into a heatproof bowl, pressing on lemon curd with a rubber spatula.
  • Place plastic wrap directly against surface of curd and refrigerate until cool, about 30 minutes (or up to overnight).
  • In a large bowl, using an electric mixer, beat egg whites on high until stiff peaks form, 2 minutes. Gently fold egg whites into cooled lemon curd. In the same large bowl, beat cream on high until stiff peaks form, 1 to 2 minutes. Gently fold whipped cream into lemon curd mixture. Pour into mold and freeze until firm, 6 hours (or up to overnight). To serve, remove parchment, top with raspberries and dust with confectioners' sugar.

  • In large saucepan, combine sugar, cornstarch, and gelatine; add water and lemon or lime juice.
  • Over medium heat, cook and stir until slightly thickened; stir in a few drops of food coloring in color of juice used, if desired (yellow or green).
  • Cool.
  • Chill until partially set, about 1 hour, stirring occasionally.
  • In small mixer bowl, beat egg whites until stiff but not dry; fold into juice mixture.
  • In small mixer bowl, beat whipping cream until stiff peaks form; fold into juice mixture.
  • Tape or tie 3-inch waxed paper or foil "collar" securely around rim of 1-qt souffle dish.
  • Pour mixture into dish.

3 tablespoons unflavored gelatin, softened in 6 tablespoons water
3/4 cup boiling water
9 egg yolks
2 1/4 cups orange juice
2 cups sugar
2/3 cup Grand Marnier
4 egg whites
1 pint heavy cream
Ground praline (see recipe)

Steps:

  • Dissolve gelatin in the boiling water.
  • Beat yolks until light. Add orange juice, sugar, Grand Marnier and gelatin, and beat about 3 minutes. Refrigerate until mixture begins to thicken.
  • Meanwhile, make waxed-paper collar for a souffle dish 7 1/2 to 8 inches in diameter. Collar must stand 2 inches above rim of dish.
  • Beat egg whites to stiff peaks.
  • Clean beaters and bowl and beat cream to soft peaks. Fold beaten whites and cream into yolk mixture.
  • Spoon mixture into collared souffle dish, cover with aluminum foil and freeze overnight. When souffle is mostly frozen (it never freezes completely) wrap well in foil. It may be left in freezer 2 weeks.
  • To serve, remove collar and roll edge of souffle in ground praline.

1 1/3 cups sugar
8 teaspoons fresh lemon juice
4 teaspoons kirsch (cherry brandy)
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
8 large egg yolks
1/4 cup bottled cherry juice
1 1/2 cups chilled whipping cream
1/2 cup miniature chocolate chips

Steps:

  • Combine cherries, 2/3 cup sugar and 6 teaspoons lemon juice in heavy large saucepan. Stir over medium-low heat until sugar dissolves. Increase heat to medium; simmer until cherries are soft, stirring occasionally, about 15 minutes. Transfer mixture to blender; add 2 teaspoons kirsch, vanilla and almond extracts and remaining 2 teaspoons lemon juice.
  • Puree until very smooth. Chill until cold. Cut one 30x11-inch foil strip. Fold foil strip in half lengthwise. Wrap tightly around 6-cup soufflé dish, forming collar that extends from base of dish to above rim. Secure ends of foil with paper clips.
  • Whisk egg yolks, cherry juice, 2/3 cup sugar and 2 teaspoons kirsch in large metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until mixture thickens and thermometer inserted into mixture registers 140°F for 3 minutes, about 8 minutes total. Remove bowl from over water. Set bowl in another large bowl filled with ice and water; whisk constantly until mixture is cool, about 5 minutes.
  • Beat cream in medium bowl until peaks form. Fold cherry puree into yolk mixture, then fold in whipped cream and chocolate chips. Transfer mixture to soufflé dish (mixture will extend above rim of dish). Freeze overnight. (Can be made 3 days ahead. Cover; keep frozen.)
  • Run small knife between soufflé and foil. Peel off foil. Using small metal spatula or knife, smooth exposed sides of soufflé. Serve immediately.

2 cups chopped rhubarb
1/2 cup white sugar
2 teaspoons vanilla extract
8 ounces white chocolate, chopped
1 1/3 cups whipping cream
2 eggs, separated
2 tablespoons water
2 tablespoons brandy or 2 tablespoons rum
3 tablespoons white sugar
1 dash salt
3 -5 seasonal berries (to garnish)

Steps:

  • THE RHUBARB: Simmer rhubarb, sugar and vanilla until soft.
  • Puree, then set aside to cool.
  • THE MOUSSE: Prepare 6 x 4oz ramekins by wrapping outsides with parchment or waxed paper rings to stand 2 inches above the ramekin's lip.
  • Secure parchment with an elastic band or string.
  • Over a pot of simmering water (or in a microwave) melt chocolate and set aside to cool. (Keep water simmering on stove.)
  • Whip cream to soft peaks and chill.
  • Over simmering water,whisk together egg yolks, water, brandy and 2 tbsp sugar for 2 minutes to warm eggs.
  • Remove from simmer, and whisk chocolate into egg yolk mixture.
  • Let mixture sit until at room temperature.
  • Fold in whipped cream in two additions just until incorporated.
  • Whip egg whites to medium-peak, and add the remaining 1 tbsp of sugar and a dash of salt.
  • Fold one third of the egg-whites into mousse followed by the remaining two thirds.
  • Quickly fold in the rhubarb.
  • Spoon mousse into the ramekins, filling up over the edge of each ramekin.
  • Freeze overnight- or at least 6 hours.
  • TO ASSEMBLE: Simply remove the parchment/waxed paper and garnish the frozen mousse (what IS the plural of"mousse"?) with a few fresh berries.

4 egg yolks
3/4 cup sugar
1 1/2 cups heavy cream
5 ounces Grand Marnier or 5 ounces other orange liqueur
6 stale packaged french-style ladyfinger cookies
3 tablespoons chopped candied orange peel, for garnish (optional)
fresh berries, for garnish (optional)

Steps:

  • Put the egg yolks and sugar in a mixing bowl and beat on medium speed until mixture is almost white and very fluffy, 3-5 minutes.
  • In a small saucepan, bring 1/2 cup heavy cream to boil.
  • Beating the egg yolk mixture continuously on low speed, pour in the hot cream in a thin stream until fully incorporated.
  • Briefly heat 2 tbsp grand marnier.
  • In another bowl, using clean beaters, whip the remaining cream at medium speed until it is firm enough to form stiff peaks that hold their shape when the beaters are lifted out.
  • Briefly beat in 2 tbsp more of the grand marnier.
  • Put the ladyfingers in a shallow bowl and drizzle them with the remaining grand marnier, leaving them to soak for several minutes.
  • With a rubber spatula, stir about a third of the whipped cream into the egg yolk mixture.
  • If you want to make the dessert look like a souffle, take a length of parchment paper, waxed paper, or aluminum paper about 2 inches longer than the circumference of a 1-quart souffle dish.
  • Fold the paper lengthwise in half and wrap it around the rim, rising about 3 inches above the rim, using freezer proof tape to tape it securely in place.
  • Spoon one-third of the mixture into the souffle dish (or loaf pan).
  • Arrange three of the ladyfingers evenly on top.
  • Top with another one-third of the mixture, then the remaining ladyfingers, and finally the remaining souffle mixture.
  • Put the dish or pan in the freezer and freeze for several hours, until the souffle is firm.
  • Remove from the freezer about 20 minutes before serving, to soften slightly at room temperature.
  • To serve, dip a serrated knife in hot water.
  • If using a souffle dish, remove the paper collar and cut horizontally even with the rim to free the top portion of the souffle and then cut it into wedges; continue serving the portion inside the dish by cutting wedges and carefully lifting them out with a cake slicer.
  • To serve from the loaf pan, dip the pan briefly in hot water, then unmold onto a platter and cut into slices.
  • Serve on chilled dessert plates, garnished if you like with candied orange peel and fresh berries.

1/3 cup water
2 tablespoons orange rind
6 egg yolks
1/4 cup Grand Marnier
2 cups heavy cream
1 sponge cake, cut into 1-inch cubes

Steps:

  • Bring sugar, water and grated orange rind to a boil over moderate heat. Cook syrup to 220 degrees on a candy termometer. Beat egg yolks until thick and lemon colored. Pour in syrup in a stream over egg yolks and beat until thick. Cool. Beat in Grand Marnier. Beat heavy cream until light shipped and fold into egg yolk mixture. Refrigerate.
  • Meanwhile, fit souffle dish with a 6" band of silver foil. Double and grease to form a collar extending 2" above rim and secure with a string. (Press foil closely along rim to prevent leakage.) Spoon a 2" layer of custard into dish and top with half the cake cubes. Cover sponge cake cubes with another layer of custard and add remaining cake cubes. Top with remaining custard. Freeze for 6 hours. Serve with whipped cream flavored with Grand Marnier. Garnish with strawberries and/or raspberries.

Steps:

  • Prepare collar for 2-quart souffle dish by cutting strip of foil long enough to wrap around dish with some overlap.
  • Fold in half lengthwise.
  • Generously butter one side and sprinkle with sugar.
  • Wrap around dish, buttered side in, letting foil extend 3½ inches above rim.
  • Secure tightly with string.
  • Add 1½ cups sugar, eggs and yolks to top of double boiler set over warm (not hot) water over low heat and stir constantly with whisk or rubber spat-ula until just warm, about 12 minutes.
  • Transfer egg mixture to large bowl of electric mixer and beat until stiff, about 10 minutes.
  • Blend in amaretto.
  • Whip cream in another large bowl until soft peaks form.

7 tablespoons sugar
3 ounces whole blanched hazelnuts (almonds can be substituted)
1/2 teaspoon peanut oil
1 lb strawberry, stemmed and hulled
3 tablespoons sugar
1 cup sugar
5 egg whites
1/4 teaspoon orange zest
3 ounces hazelnut pralines, crushed coarsely
1 1/4 cups heavy cream
2 tablespoons Amaretto
remaining hazelnut praline
6 strawberries
6 sprigs mint

Steps:

  • Praline: Lightly oil a sheet pan.
  • Melt the sugar in a small sauce pan, over low heat, increasing the temperature gradually.
  • Continue to cook until the sugar turns golden brown (swirl, but do not stir).
  • Immediately fold in the hazelnuts, and quickly spread the mixture on the sheet pan.
  • The caramel will start to set very quickly.
  • When the praline has cooled and is hard, break it into small pieces; set 6 pieces aside for the garnish, and finely crush the remaining praline.
  • Souffle: Cut six 13-by-4-inch strips of parchment or aluminum foil.
  • Form into collars around six 6-ounce ramekins, and tape or tie in place.
  • Cut a quater of the strawberries into 1/4-inch chunks, and toss with 3 Tablespoons of sugar.
  • Set aside to macerate for 20 minutes.
  • Puree the remaining strawberries in a blender or food processor, and reserve.
  • Whip the egg whites until soft peaks form.
  • Gradually sift in the remaining sugar, and whip until a stiff, light meringue forms.
  • Fold in the orange zest, crushed praline, drained macerated strawberries, and strawberry puree.
  • Whip the cream until stiff and fold into the strawberry meringue along with the amaretto.
  • Ladle the mixture into the prepared ramekins, filling them to 1/2 inch from the top of the collars.
  • Set on a tray and freeze overnight.
  • (The souffles will keep in the freezer for week).
  • Remove the parchment, and garnish each souffle with a fresh strawberry, a piece of praline, and a sprig of mint.
  • Serve immediately.

  • Combine egg yolks and sugar; beat until pale in colour and still. Gradually fold in whipped cream. Fold in vanilla extract and Grand Marnier. Pour into small collard couffle dishes. Place in freezer 2 hours or until frozen Garnish with whipped cream.

FROZEN LEMON AND ORANGE SOUFFLE



Frozen Lemon and Orange Souffle image

4 oranges
6 eggs, separated
1 cup sugar, divided
6 ounces lemon curd or lemon marmalade
1/2 cup orange liqueur (Recommended: Curacao or Grand Marnier)
1 tablespoon pure vanilla extract
2 cups heavy cream
Lime and Yogurt Sauce, recipe follows
12 ounces low-fat vanilla yogurt
6 ounces lemon or lime curd
1 tablespoon pure vanilla extract

Steps:

  • Using a channel knife, cut a few grooves into the orange peels. Cut the tops off the oranges and reserve. Empty the entire fruit of the orange pulp, being careful not to create a hole in the bottom. Freeze the empty orange rinds to create shells.
  • In a bowl, combine the egg yolks with 1/2 cup of the sugar and beat until thick and a pale yellow. If using an electric mixer, mix for 5 to 7 minutes. Add the lemon curd or marmalade, orange liquer, and vanilla. Mix well.
  • In a separate cold bowl, whip the cream until firm. Set aside.
  • In another bowl at room temp, beat the egg whites until soft peaks form.
  • In a large stainless steel bowl, blend the whipped cream and the egg yolk mixture. GENTLY fold in the egg whites. Transfer the mixture to a pastry bag fitted with a large tip. Remove orange shells from freezeer and pipe the mixture into them, extending 1 inch higher than the top of the orange. Freeze for at least 4 to 5 hours. Add the tops and serve right out of the freezer with Lime and Yogurt Sauce.
  • Mix all the ingredients in a food processor until very smooth.

Frozen Cranberry Soufflé with Spun Sugar Cranberry Wreath image

For the cranberry mixture
2 1/2 cups cranberries, picked over
2/3 cup sugar
2/3 cup water
For the Italian meringue
3/4 cup sugar
1/3 cup water
4 large egg whites
2 1/2 cups well-chilled heavy cream
For the spun sugar wreath
1/3 cup light corn syrup
1/4 cup sugar
1/2 cup cranberries, picked over
mint sprigs for garnish

Steps:

  • Make the cranberry mixture:
  • In a heavy saucepan combine the cranberries, the sugar, and the water and bring the mixture to a boil, stirring until the sugar is dissolved. Simmer the mixture, stirring occasionally, for 5 minutes, or until it is thickened, and let it cool completely.
  • Make the Italian meringue:
  • In a small heavy saucepan combine the sugar and the water and bring the mixture to a boil, stirring until the sugar is dissolved. Boil the syrup, washing down any sugar crystals clinging to the side of the pan with a brush dipped in cold water, until it registers 248°F. on a candy thermometer and remove the pan from the heat. While the syrup is boiling, in the large bowl of an electric mixer beat the egg whites with a pinch of salt until they hold soft peaks, with the motor running add the hot syrup in a stream, beating, and beat the meringue at medium speed for 8 minutes, or until it cools to room temperature.
  • Fold the cranberry mixture into the meringue gently but thoroughly. In another bowl with cleaned beaters beat the cream until it just holds stiff peaks and fold it into the cranberry mixture gently but thoroughly. Spoon the soufflé into a 2 1/2-quart (8-inch diameter) freezer-proof glass serving bowl, smoothing the top, and freeze the soufflé, its surface covered with plastic wrap, overnight. The souffleé may be made 3 days in advance and kept covered and frozen.
  • Make the spun sugar wreath:
  • In a small heavy saucepan combine the corn syrup and the sugar, bring the mixture to a boil over moderate heat, stirring until the sugar is dissolved, and boil the syrup until it is a golden caramel and registers 320°F. on a candy thermometer. While the syrup is boiling, oil lightly a 12 inch-square sheet of foil and on it arrange the cranberries in a 6-inch-wide wreath shape. Remove the pan from the heat and let the syrup cool for 30 seconds. Dip a fork into the syrup and drizzle the syrup over the cranberries, repeating this procedure until the cranberries are covered with the syrup and a solid wreath is formed. (If the syrup becomes too thick to drizzle from a fork, reheat it over moderate heat until it is the right consistency.) Let the wreath cool completely. The wreath may be made 2 hours in advance (preferably not on a damp day) and kept in a cool, dry place.
  • Pry the wreath gently from the foil, arrange it on the soufflé, and garnish it with the mint sprigs.

MERRY BERRY FROZEN SOUFFLé

4 egg whites
1/4 teaspoon salt
1/3 cup water
3/4 cup sugar
1 can (16 oz) whole berry cranberry sauce
2 cups frozen whipped topping, thawed
1/2 cup water
3/4 cup sugar
1/2 cup fresh cranberries
Fresh mint leaves

Steps:

  • In large bowl, beat egg whites and salt with electric mixer on high speed until soft peaks form; set aside. In 1-quart saucepan, heat 1/3 cup water and 3/4 cup sugar to boiling over medium-high heat, stirring frequently, until sugar is dissolved. Cook over medium heat to 245°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a firm ball.
  • Slowly beat sugar mixture into egg whites on low speed. Beat on medium speed about 8 minutes or until mixture cools to room temperature.
  • Fold cranberry sauce and whipped topping into egg white mixture. Spoon into 6 individual soufflé dishes, about 1 1/4 cups each; smooth tops. Cover with plastic wrap; freeze at least 8 hours but no longer than 24 hours.
  • Line cookie sheet with waxed paper. In 1-quart saucepan, heat 1/2 cup water and 1/2 cup of the sugar to boiling over medium-high heat, stirring frequently, until sugar is dissolved. Cook over medium-high heat to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water. Remove from heat; stir in cranberries. Let stand about 2 minutes or until cranberries are softened. Remove cranberries with slotted spoon to cookie sheet. Place remaining 1/4 cup sugar on plate; roll cranberries in sugar to coat. (Cranberries can be prepared up to 6 hours before using; keep refrigerated.)
  • Let soufflé stand at room temperature 30 minutes before serving. Garnish with candied cranberries and mint leaves.

5 large eggs, very FRESH and separated
3/4 cup sugar, divided
1 cup coconut rum
3 tablespoons key lime juice, strained
1 teaspoon key lime zest
1 cup heavy cream, whipped
1/2 cup nuts, finely chopped (or toasted coconut)
whipped cream (for garnish)
lime slice (for garnish)

Steps:

  • Cut wax paper or aluminum foil into eight strips which are 2 inches wide and long enough to go around eight 5 oz individual ramekins.
  • Fasten the strips to the souffle dishes securtely with string or tape to form a collar to hold the souffle mixture above the dish until it sets.
  • In a small bowl, beat the egg yolks with 1/4 cup of sugar until thickened. Add the coconut rum, the key lime juice and the zest. Set aside.
  • In a large bowl, beat the egg whites until foamy. Gradually add the remaining 1/2 cup sugar, beating until the whites are stiff and glossy.
  • Fold the egg yolk mixture into the beaten egg whites. Gently fold in the whipped cream.
  • Spoon into the prepared souffle dishes. Freeze overnight.
  • To serve, remove collar and press the chopped nuts (or toasted coconut) around the sides of the souffles. Garnish with additional whipped cream and lime slices.
