"SPA"CTACULAR FROZEN GRAPES



These grapes were served to me after a massage at my local spa. This recipe is perfect as an after-school snack, a simple appetizer at parties, or a sweet treat before bed. Substitute Splenda® for the sugar if you like! Can be kept in a sealed bag in the freezer for several months.

1 cup seedless green grapes
1 cup seedless red grapes
¼ cup white sugar

Steps:

  • Remove grapes from stems and place in a colander. Wash thoroughly.
  • Place grapes in a gallon-size resealable bag.
  • Pour sugar into the bag and seal. Gently shake the bag to evenly coat grapes with sugar.
  • Arrange grapes on a paper towel to air-dry any remaining water, about 15 minutes.
  • Place grapes in a single layer on a shallow pan or baking sheet. Freeze for at least 2 hours.

1 tablespoon sugar (or Splenda)
1/2 cup red seedless grapes

Steps:

  • First, wash your grapes and shake them gently to get some of the water off.
  • Second, put them in a plastic bag with the sugar on top of them. (You may need more or less sugar, depending on how sweet your grapes are).
  • Roll around the plastic bag, coating all the grapes with the sugar or Splenda.
  • Now stick them in the freezer for at least an hour or two, and there you go! These keep for a very long time and you can make the recipe bigger or smaller.

2/3 cup water
2/3 cup sugar
1/4 cup fresh lemon juice
3 cups green seedless grapes, stemmed (about 1 pound)
3 cups red seedless grapes, stemmed (about 1 pound)
6 small grape clusters (about 3 grapes per cluster)
2 tablespoons plus 3/4 cup chilled Muscat wine
Additional sugar (for dipping)

Steps:

  • Combine 2/3 cup water and 2/3 cup sugar in small saucepan. Bring to boil, stirring until sugar dissolves. Boil 1 minute. Cool syrup. Stir in lemon juice.
  • Puree green grapes and half of lemon syrup in blender (some bits of grape peel will remain). Transfer to 13x9x2-inch metal pan. Puree red grapes and remaining lemon syrup in blender. Transfer to another 13x9x2-inch metal pan. Freeze 1 hour. Stir with fork every hour until frozen, about 4 hours.
  • Meanwhile, dip grape clusters into 2 tablespoons Muscat wine to moisten, then dip grapes into sugar to coat. Place grapes on small tray and freeze until frozen, about 4 hours. (Granitas and grapes can be made 1 day ahead. Cover separately and keep frozen.)
  • Using fork, scrape granitas down length of pan, forming icy flakes. Pour 2 tablespoons Muscat wine into each of 6 wide glasses. Divide green grape granita equally among glasses. Spoon red grape granita alongside green grape granita in each glass. Garnish each with sugared grape cluster and serve.

Steps:

  • 1. Wash, drain on paper towels, blot excess water from grapes. Remove from stem...and toss into a zip lock freezer bag. Place in freezer for at least 6 hours.
  • 2. That's it! Like I SAID nothing easier...like tiny popsicles. Freezing the grapes actually intensifies their sweetness. You can also freeze white/green seedless grapes but the texture is a bit different than the red and black...they freeze harder if that makes sense. :) I have a friend who likes to thread them on a skewer before freezing, and roll them in powdered sugar before eating. To each their own...I love them straight from the freezer, a few in a bowl and I'm set!

Steps:

  • I prefer to leave the grapes on the stem as I think it is more interesting presentation. Snip the grapes to 3-5 per grouping. Pull them all off if you want to do so.
  • Place in the freezer for at least a few hours and if you forget about them, they will be fine days later.
  • When frozen, coat them in any of the coatings above or drink powder, like lemonaide or cherry or powdery candies (remember those growing up? Maybe leave a few plain, as they are good that way too.
  • Serve and enjoy or put them back in the freezer to serve later.

1 cup lemon thyme or regular thyme sprigs, coarsely chopped
1 green apple
3 kiwifruits, peeled and sliced
4 to 5 cups honeydew melon balls (from 2 melons)

  • Freeze grapes on a rimmed baking sheet for 1 hour.
  • Meanwhile, make the syrup: Bring water and sugar to a simmer in a medium saucepan, stirring until sugar dissolves. Remove from heat, and add lemon thyme. Let stand, covered, until cooled completely. Strain syrup through a fine sieve; discard solids.
  • Thinly slice apple. Divide apple, kiwifruits, melon, and grapes among 8 bowls. Pour syrup over tops just before serving.
