FIREWORKS POP
Steps:
- Combine 1 cup water and the sugar in a small saucepan. Simmer over medium-high heat until all of the sugar dissolves. Remove from the heat, pour into a large liquid measuring cup and let cool completely.
- Pour 1/2 cup of the sugar syrup in a blender. Add the strawberries, red food coloring and 1 tablespoon of the lemon juice. Blend until smooth. Let sit, stirring occasionally, until all the froth settles. Evenly divide among 6 rocket-shaped frozen pop molds. Take care to not to pour down the side of the molds or it will streak the pops; pour directly in the middle. Freeze until about halfway frozen and still slushy, about 40 minutes. Press a wooden ice pop stick into each about 1 inch from the bottom of the mold (the sticks should stand up straight in the middle of the mold). Return to the freezer and freeze until completely solid, about 40 minutes.
- Meanwhile, stir the coconut milk and remaining 1 tablespoon lemon juice into the remaining sugar syrup. Divide the mixture in half and add the blue food coloring to one.
- Once the red layer in the pop molds is frozen solid, pour in the white mixture, dividing evenly among the molds. Freeze until completely solid, about 45 minutes. Then divide the blue mixture among the molds and freeze until completely solid, about 45 minutes.
- To serve, run the frozen molds under warm water before unmolding.
FROSTY FIREWORKS (NON-ALCOHOLIC 4TH OF JULY DRINK)
I got this recipe off the internet while searching for a drink that was red, white and blue to serve at our 4th of July BBQ. This recipe sounded appealing and appropriate for such an occasion. But plan ahead though because it takes several hours for the red and blue ice cubes to freeze. The only special equipment you will need is 2 ice cube trays. Cooking time is approximate time needed for the ice cubes to freeze.

- Fill the sections of one ice cube tray with blue Gatorade, and place in freezer for several hours or until frozen solid.
- Fill the sections of the other ice cube tray with the red Gatorade (or other red color drink), and place in freezer until frozen solid.
- When ready to serve, place about 4 or 5 regular (clear) ice cubes in a highball glass or tall tumbler.
- Add two blue ice cubes and two red ice cubes to the glass.
- Fill the glass the rest of the way with a clear carbonated soda. I prefer Sprite, but you can use 7-Up, Club Soda, Seltzer water (or try a fruit flavored seltzer), or your favorite lemon-lime soda.
- Now wait to see the special effects to begin. As the cubes melt, colored bubbles will swirl through the soda and create a sparkling "frosty fireworks" effect.

A red cocktail with blueberry ice cubes for Independence Day. From First for Women, 6/27/11. Allow blueberry ice cubes to freeze for 48 hours before serving. This recipe is for 1 serving, using 4 blueberry ice cubes per tall glass.

- BLUEBERRY ICE CUBES:.
- In ice cube mold, fill 4 molds half-way with water. Freeze for 2 hours. Drop in 3 blueberries. Add water to fill those cubes. Place in freezer for 48 hours to set.
- COCKTAIL:.
- Place 4 plain ice cubes in cocktail shaker. Add cranberry juice, vodka, blackberry brandy, and triple sec. Shake; strain into glass.
- Add blueberry ice cubes.
- Garnish with strip of lemon rind in an S-pattern around blueberry then raspberry.
