This recipe is very flexible because it can be served around the clock. In summer, I frequently add a variety of fresh vegetables, including zucchini.

2 tablespoons butter
1/2 cup sliced fresh mushrooms
1/2 cup chopped sweet red or green pepper
1/4 cup sliced green onions
6 large eggs
2 tablespoons water
1/2 cup diced cooked ham
1 cup shredded cheddar cheese

Steps:

  • In a skillet, melt butter over medium heat. Saute mushrooms, pepper and onions until tender. In a bowl, beat eggs until foamy; stir in ham. Pour over the vegetables. Let eggs set on the bottom, then lift the edges to allow any uncooked egg to flow underneath. Cover and cook until the eggs are set, about 3 minutes. Sprinkle with cheese and cut into wedges to serve.

4 eggs
½ cup grated sharp Cheddar cheese, divided
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 tablespoons whole milk
1 tablespoon butter
4 ounces cooked ham, chopped
4 (8 inch) flour tortillas

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Whisk eggs, 1/4 cup Cheddar cheese, milk, salt, and pepper together in a bowl.
  • Melt butter in a small nonstick skillet over low heat. Add ham; pour eggs on top. Cook until mostly set but top is still runny, 6 to 8 minutes. Top the frittata with the remaining cheese. Transfer skillet to the broiler.
  • Broil until the top is golden brown and center is set, about 1 to 2 minutes. Cool briefly and slice into 4 portions. Place in center of tortillas and wrap tightly.

1 tablespoon butter or margarine
1/2 cup thinly sliced red bell pepper
1/2 cup thinly sliced onion
1/2 cup chopped zucchini
1 cup chopped cooked ham
4 eggs
1/4 cup milk
1/4 teaspoon salt
Dash of pepper
1 medium roma (plum) tomato, sliced
1/4 cup shredded Italian-style cheese blend (1 oz)
1 tablespoon sliced fresh basil leaves, if desired

Steps:

  • In 10-inch nonstick skillet, melt butter over medium heat. Cook bell pepper, onion, zucchini and ham in butter 3 to 4 minutes, stirring occasionally, until vegetables are crisp-tender and ham is starting to brown.
  • Meanwhile, in small bowl, beat eggs, milk, salt and pepper with fork or wire whisk until well mixed.
  • Pour egg mixture over ham mixture. Cook over medium heat 6 to 8 minutes, stirring gently, until eggs are almost set. Reduce heat to low. Top with tomato slices and cheese. Cover and cook 2 to 3 minutes or until cheese is melted and eggs are completely set. Sprinkle with basil. Cut into wedges.

Note: you must use 2 mini-muffin tins with 2-inch cups to make these easy party bites. These tins can be found on the baking aisle in larger markets or at many discount stores. Most hold 12 mini-muffins per tin, some hold 24. This recipe will make 24 pieces.

1/4 pound deli sliced Swiss cheese, finely chopped
6 slices Canadian bacon, finely chopped
3 tablespoons snipped or chopped chives
A few grinds black pepper
8 eggs, or 1 pint egg beaters
2 tablespoons melted butter

Steps:

  • Preheat oven to 375 degrees F.
  • Mix together the chopped cheese, Canadian bacon, and chives and season with a few grinds of pepper. In a bowl, beat the eggs. Brush the muffin tins with melted butter. Using a teaspoon, fill the 24 mini-muffin cups halfway with the cheese mixture. Using a ladle, fill the cups to just below the edge with the beaten eggs. Bake until golden, about 12 minutes. Remove and let cool to handle, then arrange the egg bites on a plate and serve.

Onion, Ham, and Cheese Frittata image

2 tablespoons unsalted butter
1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Steps:

  • Position a rack about 8 inches from the broiler and preheat.
  • Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
  • Stir the onions, ham, herbs and cheese into the eggs.
  • Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
  • Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.
