EASY PAN-FRIED TILAPIA



Easy Pan-Fried Tilapia image

Easy pan-fried tilapia, lightly breaded and quickly fried in an equal amount of butter and olive oil. Then topped with a wine sauce and garnished with capers.

4 (4 ounce) fillets tilapia fillets, or more to taste
1 pinch Cajun seasoning, or to taste
salt and ground black pepper to taste
¼ cup all-purpose flour, or as needed
2 tablespoons salted butter
2 tablespoons olive oil
½ cup chopped onion
¼ cup white cooking wine, or more as needed
¼ cup capers

Steps:

  • Dry tilapia fillets and cut each in half. Season each fillet with Cajun seasoning, salt, and pepper. Dredge in flour to coat, shaking off excess.
  • Melt butter and oil in a large heavy skillet over medium-high heat. Pan-fry fish quickly, working in batches if needed, until edges appear white, 3 to 4 minutes. Flip and continue to cook until easily flaked with a fork, 3 to 4 minutes more. Remove to a plate and keep warm.
  • Heat the same pan over medium-high heat. Saute onion until soft, about 5 minutes. Pour white wine into the pan, reduce heat, and let simmer until reduced by about half, 5 to 7 minutes. Drizzle sauce over fish before serving and garnish with capers.

9 1/2 ounces skinless tilapia fillets, approx
salt & freshly ground black pepper
1/8 teaspoon sugar
1/2 teaspoon paprika
2 teaspoons extra virgin olive oil
1 teaspoon unsalted butter
1/2 cup lime juice
1 1/2 cups white wine
3 tablespoons minced garlic
3 tablespoons minced shallots
1 tablespoon cream
6 ounces unsalted butter
4 tablespoons fresh basil, julienned
fresh spinach, 1 bag, washed, stemmed and patted dry
1 garlic clove, peeled
1/2 teaspoon cracked black pepper
salt
4 ounces unsalted butter

Steps:

  • For the sauce; combine the lime juice, wine, garlic and shallots in a wide pan, bring to a boil and reduce to 1/4 the volume.
  • Pour into a bowl and stir in the cream.
  • Whisk in the butter, 1 TBS at a time, until thoroughly combined.
  • Stir in the fresh basil and hold the sauce in a warm place until ready to serve.
  • For the spinach, slice the garlic into thin slivers.
  • Heat a large saute pan over medium heat for 30 seconds.
  • Add the butter and, when half of it has melted, add the garlic.
  • Cook, stirring constantly, for about 45 seconds or until the garlic is tender and fragrant.
  • Add the spinach leaves, and season with salt and pepper.
  • Use tongs or a spatula to stir the spinach so it cooks evenly.
  • Remove from heat when all spinach leaves have wilted, setting aside to keep warm while you cook the fish.
  • Divide the fillets into 4 pieces.
  • Sprinkle lightly with the salt, sugar, pepper and paprika.
  • Place a large non-stick skillet over high heat.
  • When hot add the oil and butter.
  • When the butter begins to melt, swirl to coat the pan.
  • Place the fish in the pan and cook for 5 minutes; turning gently until fish flakes easily, do not over cook.
  • To serve, place the spinach in an attractive mound on a heated plate, top with the fish fillets and spoon sauce over.
  • Serve at once!

¼ cup all-purpose flour
¼ teaspoon salt
pepper
2 egg whites
1 pound tilapia fillets
¼ cup dried bread crumbs
¼ cup cornmeal
½ teaspoon dried basil, crushed

Steps:

  • Preheat oven to 450 degrees F (230 degrees Celsius).
  • Sift or stir flour, salt, and pepper together in a shallow dish, and set aside. In a bowl, beat egg whites until white and frothy. In another bowl, combine bread crumbs with cornmeal and basil.
  • To bread the fillets, dip first into flour, shaking off any excess, then into egg whites, then into bread crumb mixture.
  • Spray a shallow baking dish with non-stick cooking spray. Lay fillets flat in the dish, tucking under any thinner ends or edges for more even cooking. Bake in the preheated oven for 10 to 15 minutes, or until fish flakes easily with a folk.
