FRIED SQUASH
Steps:
- Add the milk, eggs, and hot sauce to a medium-sized mixing bowl. Stir to combine. Add the squash slices, and set aside until ready to use.
- In a breading tray or shallow container, whisk together the flour, cornmeal, salt, and pepper. Set aside until ready to use.
- Add the oil to a skillet over medium-high heat and allow to come to temperature, between 350°-375°.
- Shake off any dripping milk from the squash, and dredge completely in the dry batter. Carefully add to the oil, taking care not to overcrowd the pan and frying in batches as needed.
- Have ready a plate lined with paper towels or a cooling rack atop a rimmed baking sheet lined with paper towels.
- Cook the squash for 2 1/2 -3 minutes each, or just until the crust is perfectly golden brown. Remove from the oil and allow to cool slightly. For best results, serve right away.

FRIED SQUASH WITH CHEESE
When I fix this there is rarely any left! It is probably not the healthiest way to fix it but you could always use a healthier oil, if you choose to. We could eat our weight in these and always look forward to summer squash crops!! Yummy! You could also make this for an appetizer. I will post a picture as soon as I make them again.

Steps:
- Cut your squash or zucchini into approximately 1/4 to 1/2 in. thick slices. I like to put them into a bowl of cold water before flouring them. You can either just flour the slices, or if you prefer more breading, you can dip it in a mixture of egg and milk before flouring. Season to taste when you put them in a skillet. Fry in a skillet for just a couple of minutes, or to however done you prefer. Turn over, place cheese to fit the slice and fry for a couple more minutes. Allow the cheese to melt on top. I always place on a paper towel covered plate to drain excess oil.
