Another goodie from my old Somersize mailing list! A good side dish with protein/fat meals, or a good lunch by itself.

1 head cabbage, sliced
1 lb thick sliced bacon, cut into chunks
1 green pepper, sliced
1 onion, sliced

Steps:

  • Fry bacon in a deep skillet until crisp.
  • Drain oil, reserving about two tablespoons of fat.
  • Crumble bacon into skillet.
  • Add cabbage, onions and peppers into skillet and cook, stirring occasionally, until cabbage is wilted but still a little crisp.
  • Add seasonings to taste and serve immediately.

2 tablespoons grapeseed oil
1 medium yellow onion, chopped
3 cloves garlic, chopped
2 teaspoons Cajun seasoning, or to taste, divided
½ red bell pepper, sliced
½ medium green bell pepper, sliced
1 medium head cabbage, thinly sliced
1 tablespoon butter, or more to taste
salt and ground black pepper to taste

Steps:

  • Heat grapeseed oil in a large cast iron skillet over medium heat. Add onions and cook until softened, about 3 minutes. Add garlic, stir, and cook until fragrant, 1 to 2 minutes. Season with 1 teaspoon Cajun seasoning and stir to combine.
  • Mix in red and green bell peppers; cook for 1 to 2 minutes Add cabbage, remaining 1 teaspoon Cajun seasoning, and stir to combine. Add butter and stir until melted. Simmer cabbage until it reaches desired softness, about 15 minutes. Season with salt and pepper.

1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper

  • In a large skillet, melt butter over medium heat. Stir in the sugar, salt, pepper flakes and pepper. Add the cabbage and water. Cook for 5-6 minutes or until tender, stirring occasionally.

This dish was always a favorite at Mammaw's house. Cabbage is fried with onion and bacon in this simple quick side dish. Terrific with cornbread.

3 slices bacon, cut into thirds
⅓ cup vegetable oil
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
1 head cabbage, cored and sliced
1 white onion, chopped
1 pinch white sugar

Steps:

  • Place the bacon and vegetable oil into a large pot over medium heat. Season with salt and pepper. Cook for about 5 minutes, or until bacon is crisp. Add cabbage, onion, and sugar to the pot; cook and stir continuously for 5 minutes, until tender.
