Barbecued Brined Chicken image

I was looking for a way to barbecue chicken without the skin burning (I love crispy skin!). I always brine my Thanksgiving turkey so I thought, why not brine chicken? This recipe produces the moistest chicken you'll ever taste off the BBQ along with incredibly flavorful, crispy skin.

3 - 4 bone in, skin on chicken pieces
1/4 c kosher salt
1 bay leaf
2 clove garlic, smashed
3 - 4 slice fresh lemon
1 Tbsp black peppercorns
1 Tbsp coriander seeds
3 c water

Steps:

  • 1. Mix together all brining ingredients (from kosher salt to water). Add chicken pieces. Brine for at least one hour, preferably overnight.
  • 2. Remove chicken from brine; discard brining water. Grill chicken pieces over low heat, turning occasionally, for about one hour or until juices are no longer pink.
