I was looking for a way to barbecue chicken without the skin burning (I love crispy skin!). I always brine my Thanksgiving turkey so I thought, why not brine chicken? This recipe produces the moistest chicken you'll ever taste off the BBQ along with incredibly flavorful, crispy skin.

Steps:
- 1. Mix together all brining ingredients (from kosher salt to water). Add chicken pieces. Brine for at least one hour, preferably overnight.
- 2. Remove chicken from brine; discard brining water. Grill chicken pieces over low heat, turning occasionally, for about one hour or until juices are no longer pink.
