PAN FRIED BLUEGILL

Number Of Ingredients 8

12-15 fillets of fresh bluegill
2 c. milk
1 egg (slightly beaten)
1 c. cornmeal
1- 2 t. Old Bay seasoning
salt and pepper to taste
4 c. canola oil
1 lemon; sliced

Steps:

  • Pour milk and egg in a medium bowl. Add fish fillets and let soak for at least one hour prior to cooking.
  • In a medium bowl add cornmeal, Old Bay seasoning, and salt and pepper.
  • Heat oil in medium pan over medium heat. Once ready, quickly take fish fillets and coat in cornmeal mixture. Then using tongs, place in hot oil for frying. Depending on size of fish, it takes 1-2 minutes per side, until cooked. Carefully watch and place on a plate with paper towel. Garnish with lemon and / or tartar sauce.

1 cup seasoned bread crumbs
1 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon pepper
6 eggs
1-1/2 pounds bluegill or crappie fillets
1/2 cup canola oil, divided

Steps:

  • In a shallow bowl, combine the first five ingredients. In another bowl, whisk eggs. Dip fillets in eggs, then coat with crumb mixture. Dip again in eggs and crumb mixture., In a large skillet over medium-high heat, cook fillets in batches in 2 tablespoons oil for 2-3 minutes on each side or until fish flakes easily with a fork, adding oil as needed.

2 lb fresh caught, cleaned bluegill
1 1/2 tsp salt
1 tsp freshly ground black pepper
1/2 tsp garlic salt
1 c yellow cornmeal
vegetable oil for frying

Steps:

  • 1. Clean fish and pat dry with paper towels. Mix dry ingredients in a plastic bag. Place fish in bag one piece at a time and shake. Fry in a small amount of hot oil until outside is crispy and fish flakes easily with a fork. Drain on paper towels and serve hot with lemon wedges and tartar sauce.

DEEP FRIED BLUEGILL OR CRAPPIE



Deep Fried Bluegill or Crappie image

Number Of Ingredients 8

Fish Fillets (1/2" thick)
3/4 cup milk
1 egg
2 teaspoons salt
1 teaspoon pepper
1 cup flour
1 cup cracker crumbs
1/2 cup cornflakes crumbs

Steps:

  • Put milk, egg, salt and pepper in blender, turn on low speed to combine. Slowly add flour and blend until batter is smooth. Pour batter into a bowl. Combine cracker and corn flake crumbs in a separate bowl. Rinse fillets in cold water, drain, pat dry with paper towels. Dip fillets in batter, coat with crumbs. Deep fry at 370-375 degrees until fillets are floating and golden brown (3 or 4 minutes). Do not over load deep fryer. Turn fillets a couple of times as they rise to the top. Remove to a rack to drain. Place on paper towels in a single layer.
