2/3 cup whole wheat flour
1/3 cup all-purpose flour
1/2 cup cold butter
4 to 5 tablespoons cold water
4 plum tomatoes
3 cups shredded part-skim mozzarella cheese, divided
1/2 cup fresh basil leaves, thinly sliced
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large bowl, combine the flours; cut in butter until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for 30 minutes or until easy to handle., On a lightly floured surface, roll out pastry to fit a 9-in. fluted tart pan with a removable bottom. Transfer pastry to pan; trim even with edge. Bake at 350° for 13-15 minutes or until lightly browned. Meanwhile, thinly slice the tomatoes; place on paper towels to drain. , Sprinkle 2 cups cheese into the crust; top with basil. Set three tomato slices aside; arrange remaining slices in a slightly overlapping pattern around edge of tart. Drizzle with oil; sprinkle with salt and pepper. Sprinkle remaining cheese in center of tart; top with reserved tomato slices., Bake for 25-30 minutes or until crust is crispy and cheese is melted. Let stand for 15 minutes before serving.

This rectangular tart is like a pizza but easier. Instead of a yeast dough, the base is a crisp pastry made with olive oil. The recipe makes enough dough for 2 tarts.

2 cups/250 grams all-purpose flour
1/2 teaspoon salt, plus more for seasoning tomatoes
1/4 cup/59 milliliters extra-virgin oil, plus 2 tablespoons and a little more to grease the pan
1 egg, beaten
1 large garlic clove, grated
1 cup thinly sliced onion
2 large tomatoes, sliced 1/4-inch thick and blotted
Ground black pepper
1/2 pound fresh mozzarella, thinly sliced
A few pitted niçoise olives, optional
A few capers, optional
8 anchovy fillets, rinsed and patted dry

Steps:

  • Make the dough: Put flour and 1/2 teaspoon salt in a mixing bowl. Drizzle in 1/4 cup oil, egg and 1/4 cup cold water, then mix quickly with hands to make a soft dough. If dough seems dry, add more water, 1 tablespoon at a time. Form dough into a rough rectangle, wrap and refrigerate for 30 minutes.
  • Heat oven to 425 degrees. On a flour-dusted surface, divide dough in half. Roll out one piece to a rectangle approximately 9 by 12 inches (reserve other piece for future use, or to make a second tart).
  • Stir 2 tablespoons olive oil and the garlic together in a small bowl. Put rolled dough on lightly greased baking sheet. Drizzle surface of dough with garlic oil. Scatter onion slices over dough. Arrange tomato slices over dough in one layer without crowding, then season with salt and pepper. Top tomatoes with torn mozzarella slices in one layer. Tuck olives and capers here and there, if using. Drape top of tart with intermittently placed anchovy fillets.
  • Bake for 6 minutes on bottom shelf of oven, then transfer to top shelf and bake for another 6 minutes or until nicely browned. Let cool slightly, then cut into squares. Serve warm or at room temperature.

4 ounces cream cheese, softened
4 ounces butter, softened
1 1/4 cups flour
1/8 teaspoon salt
1 tablespoon minced fresh chives
2/3 cup kalamata olive, pitted,coarsely chopped
4 teaspoons anchovy fillets, chopped
1 tablespoon drained capers
3 large ripe tomatoes, thinly sliced
2 tablespoons olive oil
1 tablespoon garlic, finely chopped
2 small zucchini, shredded on the large holes of a box grater (about 1 ½ cups)
fresh basil leaf (to garnish)

Steps:

  • Make the pastry: Blend the cream cheese and the butter.
  • Add the flour and salt and mix just until the dough starts to form a ball.
  • Sprinkle the chives on a work surface.
  • Turn out the dough and knead lightly until the chives are incorporated.
  • Pat the dough into a disc about ½ inch thick.
  • Wrap and refrigerate for atleast 30 minutes and up to 1 day.
  • Remove the dough from the refrigerator and let stand at room temperature to soften slightly.
  • On a well-floured work surface, roll the dough into a 13 to 14 inch round.
  • Roll the pastry onto the rolling pin and gently unroll it over an 11 inch fluted tart pan with a removable bottom.
  • Fit the dough evenly into the pan without stretching.
  • Trim the overhanging dough to 1 inch from the rim.
  • Fold the excess dough over and press it into the side of the pan.
  • Refrigerate for 20 minutes, or until firm.
  • Preheat the oven to 400F.
  • Line the chilled tart shell with foil and weigh down with pie weights or dried beans.
  • Bake for 15 minutes.
  • Remove foil and weights and bake 10 minutes longer, or until just set and golden.
  • Transfer to a rack to cool completely; then remove the fluted rim and place the shell on a serving platter.
  • Prepare the filling: In a medium bowl, stir together the olives, anchovies and capers.
  • Spread the mixture evenly over the bottom of the baked shell.
  • Starting at the edge, layer the tomato slices in overlapping, concentric circles.
  • Season generously with lots of freshly-ground black pepper and salt.
  • Heat the olive oil in a medium skillet.
  • Add the garlic and stir, over medium-high heat, for 1 minute, or until fragrant.
  • Add the zucchini, season with salt and pepper and stir until softened slightly, about 1 minute.
  • Spoon the zucchini over the tomatoes and garnish with fresh basil leaves.
  • Serve at room temperature.

Steps:

  • Preheat oven: 400 degrees F. Line loose bottom tart pan with dough rolled out 1/8-inch thick. Spread bottom of pastry with shredded cheese and sprinkle with basil. 1 cup diagonally sliced zucchini

1/4 teaspoon fresh ground black pepper
4 ounces fresh mozzarella cheese, sliced
1 teaspoon extra virgin olive oil
1/2 cup torn fresh basil leaf

Steps:

  • Line a baking sheet with parchment paper; secure with masking tape. Sprinkle the paper with cornmeal. Unroll dough onto paper; let stand 5 minutes. Pat dough into a 12-inch square. 1 clove garlic, minced
2 medium ripe tomatoes, peeled, seeded and finely chopped

3 eggs, lightly beaten
1 1/4 cup half-and-half
1 cup fresh goat cheese, mashed
1/2 cup freshly grated Parmesan cheese
1 9-inch parbaked pie crust
1 large tomato, peeled and sliced
1 tablespoon sweet butter

Steps:

  • Heat the oil in a skillet. Saute the onion until soft but not brown. Stir in the garlic, then add the chopped tomatoes. Simmer for about 10 minutes until the mixture is thick. Season with basil, sun-dried tomatoes, salt and pepper. Allow to cool to room temperature.
  • Preheat oven to 350 degrees.
  • Beat eggs with half-and-half and a pinch of salt. Stir in the cheeses and the tomato mixture. Pour the mixture into the pie crust.

1 tablespoon cornstarch, plus 2 teaspoons cornstarch
1/4 teaspoon salt
6 tablespoons butter, diced
1 egg
2 pints grape tomatoes, rinsed and dried
1/2 cup basil leaves, divided
1/3 cup chopped green onion
1 1/2 cups sharp provolone cheese, grated
1/2 cup mayonnaise
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375*.
  • In a food processor, combine the flour, cornstarch, one-fourth teaspoon salt and butter. Pulse the mixture until it is in very tiny bits.
  • Add one egg and pulse until a dough forms. This dough is rather tough but, it does come together nicely.
  • Gather the dough into a ball. Then press the dough in to the tart pan, covering every bit. (You could, roll the dough out to a 12-inch circle, if you want.) Crimp the edges, and refrigerate for 30 minutes.
  • Roughly chop 1/4 cup of the basil leaves. Stack and roll the other basil leaves and cut them into thin ribbons.
  • Mix the cheese, mayo, chopped basil, green onions and pepper in a bowl. Spread the mixture over the bottom of the tart shell.
  • Top with grape tomatoes and press them down. Bake for 35 minutes�until the crust edges are golden-brown and the cheese is bubbling up.

This is a great recipe for when your tomatoes are ripe in your garden! Sometimes you just want something other than a salad or a tomato sandwich.

1 3/4 c all-purpose flour
3/4 c cold butter, cut into pieces
1 Tbsp sugar
1/2 tsp salt
1/4 c cold water
1/3 c dijon mustard
1 lb mozzarella cheese, thinly sliced
2 medium tomatoes (preferably home grown), thinly sliced
1 Tbsp garlic, minced
2 tsp dried oregano
2 Tbsp olive oil

Steps:

  • 1. Position the knife blade in a food processor bowl; add flour and the next 3 ingredients. Process for 20 seconds or until crumbly. Add the cold water; process until the mixture forms a ball. Chill at least 30 minutes.
  • 2. Roll into a 12 inch circle on a floured surface. Place in a 10-inch tart pan with a removable bottom; trim off excess pastry along the edges. Prick the bottom and sides with a fork. Bake at 450 degrees for 10 to 12 minutes or until lightly browned. Cool slightly in the pan on a wire rack.
  • 3. Spread mustard over the bottom of the pastry; top with cheese. Arrange the tomato slices over the cheese, slightly overlapping the tomato slices.Sprinkle with garlic and oregano; drizzle with olive oil.
  • 4. Place the pan on a baking sheet. Bake, uncovered at 400 degrees for 40 minutes or until lightly browned. Let stand for 10 minutes. Carefully remove the sides of the pan before serving.

4 Roma or regular tomatoes
3/4 cup loosely packed fresh basil leaves
4 cloves garlic
1/4 cup parmesan cheese
1/2 cup mayonaise
1/8 tsp ground white pepper

Steps:

  • Line 9"fluted tart pan with piecrust. Bake 450 oven for 5-7 min. until slightly dry. Do not prick. Remove crust from oven, sprinkle with 1/2 cup mozzarella. Cool in pan on wire rack. Reduce oven to 375 Cut tomatoes in wedges, drain on paper towels. Arrange over cheese in baked crust. In food processor combine basil & garlic. Process until coarsely chopped (or snip basil & coarsely chop garlic). In medium bowl, combine basil, garlic, remaining mozzarella, mayo, parmesan & pepper. spread over tomatoe wedges.   • Sprinkle cheese, italian seasoning and rosemary to within 1" of pastry edge. Arrange tomato slices on top of cheese. Mix pepper and garlic powder. Sprinkle over tomatoes. Fold edges of pastry over tomatoes.
  • Bake for 22-25 minutes or until golden brown. Let stand for 10 minutes. Use foil to transfer tart to serving platter. Cut into wedges to serve.
