Number Of Ingredients 11

1/4 cup rice wine vinegar
1/4 cup chopped fresh basil leaves
1 teaspoon sugar
Salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
8 ears corn, grilled in the husk, kernels removed
1 sweet onion (such as Vidalia or Walla Walla), halved and thinly sliced
1 pint Sweet 100 tomatoes or cherry tomatoes, halved
8 ounces blue cheese, crumbled
Fresh basil sprigs, for garnish

Steps:

  • Combine the vinegar, basil, sugar, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and oil in a blender and blend until smooth. Can be made 2 hours in advance and refrigerated. Bring to room temperature before using.
  • Combine the corn kernels, onion and tomato in a large bowl. Add the dressing and toss to coat, season with salt and pepper. Let sit at room temperature 30 minutes before serving. Top with crumbled blue cheese and garnish with basil sprigs just before serving. Salad can be made 1 day in advance and served cold or at room temperature.

2 cups fresh mixed mesclun greens
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
Salt and pepper
Assorted large and small heirloom tomatoes, sliced or quartered
Creamy Chive Dressing, recipe follows
Point Reyes blue cheese, crumbled
Whole chives, for garnish
3 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 heaping tablespoon prepared mayonnaise
1/4 cup chopped fresh chives
Salt and freshly ground black pepper
1/2 cup canola oil

Steps:

  • Place greens in a bowl and toss with the vinegar and oil and season with salt and pepper. Transfer to a platter. Arrange tomatoes over greens, sprinkle with salt, and drizzle with chive dressing. Sprinkle blue cheese over top and garnish with a few fresh chives.
  • Combine all ingredients in a blender and blend until smooth.

sun-dried tomato dressing
1/2 cup sun-dried tomatoes
1/3 cup olive oil
1/4 cup red wine vinegar
2 Tbsp. drained capers
1 garlic clove, minced
1 Tbsp. sugar
1 lb. fusilli, rotini or the like
1 cup packed fresh basil leaves, shredded
4 oz. fresh mozzarella (fresh mozzarella is packed in liquid - you can find it at Trader Joe's marketed as ovolini. Four oz. is about one mozzarella ball. If you want a really cheese-a-licious pasta and aren't afraid of the added fat, feel free to toss in another mozzarella ball's worth of cheese as well.)
1/2 cup grated parmesan
1/2- 3/4 cup canned black olives, kalamata olives, or mixture

Steps:

  • Soak the sun-dried tomatoes in warm water for 20 minutes or so, until softened. Drain. Toss all the ingredients into a food processor or blender until the tomatoes are good and chopped up and you have a chunky sort of dressing. assembling the pasta salad along with the parmesan. Toss with the cooked drained pasta while hot, adding the dressing at the same time. Serve at room temperature.

This dressing is delicious with any green salad and will make your salad course a real event. Roasting the garlic gives it a wonderfully mellow and sweet mild flavor.

6 -8 cloves garlic, unpeeled
1/4 cup olive oil
2 medium fresh tomatoes, chopped and drained
2 tablespoons lemon juice, freshly squeezed
4 chopped scallions, use white part only
3 tablespoons of your favorite herb vinegar or 3 tablespoons use wine vinegar
1/3 cup fresh garden basil, finely chopped

Steps:

  • Heat oven to 350 degrees.
  • Brush the garlic cloves with 1 teaspoon of the oil, reserving the remaining oil.
  • Roast the oiled garlic cloves in a pan until golden and soft, about 10 to 15 minutes.
  • Watch carefully so garlic does not get over-brown or burn.
  • Carefully remove pan from oven and cool.
  • When cool enough to handle, squeeze out the garlic pulp.
  • Combine the pulp with the reserved olive oil and rest of the ingredients in a blender.
  • Blend until smooth and use the dressing on any mixed garden salad.
  • Refrigerate leftover.

6 ripe tomatoes, sliced
5 garlic cloves
1/2 cup chopped basil
3 tablespoons red wine vinegar
2 tablespoons ketchup
1 tablespoon balsamic vinegar
1 1/2 tablespoons brown sugar
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon Dijon mustard
1/2 cup light vegetable oil
salt (to taste)
black pepper (to taste)
pepper sauce (to taste) (optional)

Steps:

  • Whisk all dressing ingredients together except oil and basil.
  • Drizzle in oil, whisking constantly.
  • Add salt and black pepper to taste.
  • Stir in basil.
  • Arrange tomato slices on a salad plate and spoon dressing over slices.
  • Cover and chill.
  • Garnish with fresh basil leaves.
  • If you desire serve over fresh bed of lettuce.

1 lb fresh green beans
1 lb yellow wax bean
1/4 cup olive oil
2 medium shallots, peeled and very finely chopped
2 tablespoons fresh tarragon, chopped
salt and pepper, to taste
1 pint cherry tomatoes, halved
tarragon, to garnish (sprigs)

Steps:

  • Snap off ends of beans.
  • In a large pot of boiling water, cook beans until just tender, about 4 minutes. Run under cold water and lay beans on a baking sheet to cool. Pat dry.
  • In a small bowl, mix oil with the shallots and tarragon and season with salt and pepper.
  • Place the beans and tomatoes in a large bowl, add the dressing and toss well.
  • Transfer to a large platter and serve, garnished with sprigs of tarragon.
