8 cups fresh melon cubes
1 to 2 tablespoons corn syrup
1 pint fresh strawberries, halved
2 cups fresh pineapple chunks
2 oranges, sectioned
Fresh mint leaves, optional

Steps:

  • In a large bowl, combine melon cubes and corn syrup. Cover and refrigerate overnight. Just before serving, stir in remaining fruit. Garnish with fresh mint leaves if desired.

1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter, divided
1/4 cup ice water
FILLING:
1/3 cup sugar
2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
2 medium tart apples, peeled and thinly sliced
1 teaspoon lemon juice
1 large egg, beaten, room temperature
1-1/2 teaspoons water
GLAZE:
1/4 cup confectioners' sugar
1 teaspoon water

Steps:

  • In a small bowl, combine flour and salt; cut in 1/4 cup butter until crumbly. Gradually add water, tossing with a fork until a ball forms. On a lightly floured surface, roll dough into a 12x6-in. rectangle., Cut remaining butter into thin slices. Starting at a short side of dough, arrange half of the butter slices over two-thirds of rectangle to within 1/2 in. of edges. Fold unbuttered third of dough over middle third. Fold remaining third over the middle, forming a 6x4-in. rectangle. Roll dough into a 12x6-in. rectangle., Repeat steps of butter layering and dough folding, ending with a 6x4-in. rectangle. Wrap in plastic; refrigerate for 15 minutes. Roll dough into a 12x6-in. rectangle. Fold in half lengthwise and then widthwise. Wrap in plastic; refrigerate for 1 hour., Preheat oven to 450°. Meanwhile, in a small saucepan, combine the sugar, cornstarch and cinnamon. Add apples and lemon juice; toss to coat. Bring to a boil over medium heat, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring often, 5-10 minutes. Remove from the heat., In a small bowl, combine egg and water. Roll dough into a 12-in. square; cut into four squares. Brush with half of the egg mixture. Spoon about 1/4 cup filling on half of each square; fold dough over filling. Press edges with a fork to seal. Place on an ungreased baking sheet. Brush with remaining egg mixture. With a sharp knife, cut three small slits in the top of each turnover., Bake until golden brown, 17-22 minutes. Remove to a wire rack. Combine glaze ingredients; drizzle over turnovers. Serve warm.

1/2 cup fresh red raspberries
1/2 cup banana, ripe, diced
1/2 cup peach, ripe, diced
1/2 cup unsweetened pineapple juice
1/4 cup granulated sugar
1 pint vanilla ice cream
1 (2 quart) bottle carbonated lemon-lime beverage

Steps:

  • Combine raspberries, banana, peaches, pineapple juice & sugar.
  • Divide among four 8-ounce glasses, then chill.
  • When ready to serve, add a small scoop of vanilla ice cream to each glass, & 'muddle' gently[!].
  • Then, tipping the glass, SLOWLY pour lemon-lime carbonated beverage down the inner side, but leaving enough room to add a second small scoop of ice cream.
  • Sit back & enjoy!

A perfect cocktail for putting not only those fragrant passion fruits to work, but fresh eggs from the coop (if you've got them!).

Number Of Ingredients 6

1 ounce passion fruit simple syrup (instructions to follow)
1 1/2 ounces chilled vodka
3/4 ounce fresh lemon juice
1 fresh egg white
1 slice passion fruit (to garnish)
1 passion fruit, vine leaf (to garnish)

Steps:

  • Make ahead: Passion Fruit Simple Syrup.
  • Combine 1 cup water, 1 cup granulated sugar, and the scooped insides of about 6 ripe passion fruits in a saucepan over medium high heat. bring to a boil, stirring until sugar is fully dissolved. Reduce heat to low, simmering for 20 minutes, uncovered. Remove from heat, let cool, then transfer to an airtight container and refrigerate. Do not discard passion fruit seeds! That's what makes the syrup so pretty.
  • Combine all ingredients except egg white in a cocktail shaker over ice. Shake until thoroughly chilled.
  • Strain contents of shaker into a standby glass, dump ice, put cocktail mixture immediately back into chilled shaker and add egg white. Shake vigorously for about thirty seconds or until egg white is foamed.
  • Pour (don't strain) contents into a coupe glass.
  • Garnish with a floating slice of passion fruit and a passion fruit leaf and vine tendril, if you've got them.
