FRESH CHERRY COBBLER

This is a delicious cherry cobbler made with fresh cherries instead of canned. It may take a little longer to make because you need to pit the cherries, but it is well worth it when you taste the finished product.

½ cup butter
1 cup all-purpose flour
1 cup white sugar
1 teaspoon baking powder
1 cup milk
2 cups pitted sour cherries
¾ cup white sugar
1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the butter in a 9x13 inch baking dish, and place in the oven to melt while the oven is preheating. Remove as soon as butter has melted, about 5 minutes.
  • In a medium bowl, stir together 1 cup of flour, 1 cup of sugar, and baking powder. Mix in the milk until well blended, then pour the batter into the pan over the butter. Do not stir.
  • Rinse out the bowl from the batter, and dry. Place cherries into the bowl, and toss with the remaining 3/4 cup of sugar and 1 tablespoon of flour. Distribute the cherry mixture evenly over the batter. Do not stir.
  • Bake for 50 to 60 minutes in the preheated oven, until golden brown. A toothpick inserted into the cobber should come out clean.

Once you try this cobbler, each year you will anxiously await peach and cherry season. And it will be worth the wait ... because this cobbler is that good! Sweet, tart and oh so tasty!

Number Of Ingredients 12

4 c fresh peaches (peeled and sliced thickly)
2 c fresh bing cherries (pitted & halved)
1/2 c water
1 stick real unsalted butter ( or 8 tablespoons)
2 c all purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 c milk
1 c brown sugar
1 c sugar
pinch salt (optional)
cinnamon (optional)

Steps:

  • 1. Preheat oven to 350.
  • 2. Combine the Peaches, Cherries, Brown sugar, and water in a saucepan and mix well.
  • 3. Bring to a boil and simmer for 10 minutes. Remove from the heat. Reserve a half cup of liquid.
  • 4. Put the butter in a 9x13 baking dish and place in oven to melt.
  • 5. In a bowl sift sugar, flour, baking soda, baking powder, and a pinch of salt.
  • 6. Slowly whisk in milk & half cup of the reserved peach/cherry liquid to dry ingredients.
  • 7. Pour mixture over melted butter in your baking dish. Do not stir.
  • 8. With a slotted spoon, put fruit on top evenly then gently pour the remaining liquid over the top of the fruit.
  • 9. Sprinkle the top of the fruit with cinnamon if using.
  • 10. Bake for 30 to 45 minutes or until crust has risen to the top and is golden. *Tip* Place a pan under your dish just in case any juices want to escape!
  • 11. Optionally you can sprinkle sugar over the top of the crust. (My Gram always use to)
  • 12. Enjoy warm with a nice scoop of ice cream, or let it cool down in the fridge. =)

This is one of my absolute favorites. You can have the cherries macerating all afternoon, and whip up the finished product while you do the dinner dishes for a special evening dessert. My Belgian husband had never eaten a cobbler before this one, now he can't get enough . . .

Number Of Ingredients 11

4 cups fresh pitted cherries (about 2 lbs uncleaned)
3/4 cup granulated sugar
1 tablespoon quick-cooking tapioca
1/3 cup water
1 tablespoon butter
1/2 cup butter
1 1/4 cups flour
2 tablespoons baking powder
1/2 teaspoon salt
1 cup sugar
1 cup milk

Steps:

  • Combine in a large saucepan the cherries, 3/4 cup sugar, tapioca and water.
  • Let stand at least one hour and up to several hours, stirring occasionally.
  • Cook and stir till slightly thickened and bubbly, about 5 to 10 minutes at a good boil.
  • Add 1 TBS butter and set aside.
  • Pre-heat oven to 350 degrees.
  • Put the 1/2 cup butter in a 9 X 13-inch glass baking dish and put the dish in the preheating oven.
  • While the butter is melting, mix the batter by combining flour, baking powder, salt, sugar and milk.
  • When the butter is completely melted, remove the pan and pour the batter into the melted butter.
  • The batter will immediately begin to cook, which is what you want.
  • Carefully spoon the cherry mixture evenly over the batter.
  • Return dish to oven and bake for approximately 20 minutes, or until batter sets and is browned.
  • As the cobbler cooks, the batter will begin to rise up around the cherry mixture.
  • Serve warm (or at room temperature) with vanilla ice cream, if desired.

I used to make these kinds of cobblers all the time in huge quanities when I cooked at the Senior Citizen Center and for Meals on Wheels...made them both...

1/2 c butter
1 c all-purpose flour
1 c splenda (or white sugar)
1 tsp baking powder
1 c milk
2 c pitted sour cherries
3/4 c splenda (or white sugar)
1 Tbsp all-purpose flour (or corn starch)
ice cream and or whipped cream (optional)

Steps:

  • 1. Preheat oven to 350 dF. (to 375 dF depending on oven) Melt butter in 9×13 casserole dish in oven (or microwave, then pour into pan-if not microwaveably), until completely melted (about 5-min`s in oven). Combine 1 cup flour, 1 cup sugar & baking powder in small bowl, mix well. Add milk and stir until combined, then pour flour-milk mixture over melted butter in casserole dish. Mix cherries, 3/4 sugar (splenda), and 1 T flour in bowl together. Pour cherry mixture over flour/milk mixture in the casserole dish evenly, (do not stir, just swirl a knife lightly through it). Bake 40-50 minutes, until golden brown. Serve warm, room temp or chilled ....it's good either way. Good also served with ice cream or whipped cream. P.S. crust will rise to the top while baking.

One of my favorite things to do is invent while I am cooking and that is how this Fresh Cherry Dump Cobbler came to be and also got its name! I started putting this and that from my pantry and fridge into the pot. Hmmm, brown sugar? Why...

9 c pitted fresh cherries
1/2 c apple juice
1 c sugar
1/2 c light brown sugar, unpacked
juice of 1/2 lemon
1/4 tsp salt
1/2 c brandy or to taste
2 tsp vanilla extract
4 Tbsp butter
2 Tbsp cornstarch plus cold water
1 pkg 2 10" store bought pie crusts or make your own
sugar and butter for top crust

Steps:

  • 1. Remove pits from cherries.
  • 2. Put pitted cherries in 3 quart sauce pan and add first 6 ingredients.
  • 3. Bring to a boil. Lower heat and boil gently until cherries are tender, about 5-10 minutes, stirring occasionally.
  • 4. Add brandy and butter and cook for a couple minutes.
  • 5. Add Vanilla and stir to blend.
  • 6. Add just enough cold water to Cornstarch to liquify and then add to cherry mixture. Stir until sauce thickens. Add more cornstarch if needed.
  • 7. While cherries are cooking, line one pie crust in a 3 quart casserole dish like you would if making a pie. Do not prick bottom with fork.
  • 8. With ladle, spoon 1/2 of the cherry filling onto the crust.
  • 9. With the second pie crust, lay on flat surface and cut strips. Then in a criss cross design, place the strips on the cherry filling. Be sure to leave enough strips of dough for top layer.
  • 10. Add the rest of the cherry filling on top of the criss cross dough.
  • 11. With the remainder of the pie crust, repeat the criss cross design on top of the second layer of filling, sealing edges to the first layer of dough. Sprinkle with sugar and dot with 1 to 2 tablespoons of butter. Bake at 350 for 50 to 55 minutes or until crust is golden brown. Place on rack to cool. Serve warm with Vanilla Ice Cream.
  • 12. Suggestion: When Cherry season was here I bought an abundance of cherries to make just the filling of this Fresh Cherry Dump Cobbler. I decided that this cobbler was so extremely good that I wanted to be able to make it in the months when fresh cherries were not available. So I made four batches of the filling and put it in four jars that were large enough to hold the filling for one cobbler each. I placed the jars in the freezer and then on New Years Day 2013, I made my first, out of season, Fresh Cherry Dump Cobbler by following the above instructions after thawing out the Cherry filling. I can report that the cobbler was sensational and tasted just like it was made with just picked fresh cherries. I highly recommend this procedure if you would also enjoy serving this delicious dessert to your family and friends any time of the year!

They would get so tired of having Vanilla Wafers, Fruit Cups...etc. So I tried my best to revamp a lot of desserts for them to be able to eat too. THEN, would you believe, I was diagnosed with diabetes myself. I was soooo bumbed out, because my Hubby is the "Sweetaholic" not me!!! I always watched what I ate and thought I was eating healthy. I didn't even have anyone in my family (that I kenw of) that had ever had diabetes. Doctor said, "sometimes it just happens"
