Loaded with fall flavor, apple brownies mix up as quickly as the chocolate version -- just the thing for a school bake sale. Any sweet, firm variety of apple will work in this recipe, which was developed by John Bunker's friend Amy Traverso. Recipe adapted from " The Apple Lover's Cookbook," by Amy Traverso.

1 stick salted butter, melted and cooled, plus more for dish
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup sugar
1 large egg
1/2 cup chopped walnuts
2 large firm-sweet apples (about 1 pound total), peeled, cored, and cut into 1/2-inch cubes (2 3/4 cups)

Steps:

  • Preheat oven to 350 degrees with rack in center position. Generously butter an 8-by-11-inch baking dish.
  • Whisk together flour, cinnamon, baking powder, salt, and baking soda in a medium bowl. In a separate bowl, beat together butter, sugar, and egg with a mixer until pale, about 2 minutes. Add walnuts and apples, and stir by hand until combined. Add flour mixture, and stir until combined, about 30 seconds more.
  • Spread batter in pan, and bake until golden brown and slightly firm, about 40 minutes. Let cool on a wire rack 30 minutes, then cut into 12 bars.

This was my Mom's recipe. Easy and quick to make. Apples and walnuts are packed into a cinnamon spiced blonde brownie. Always a hit when I bring it to parties. Very moist and great to make in the fall when apples are plentiful.

½ cup butter, melted
1 cup white sugar
1 egg
3 medium apples - peeled, cored and thinly sliced
½ cup chopped walnuts
1 cup all-purpose flour
¼ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  • In a large bowl, beat together the melted butter, sugar, and egg until fluffy. Fold in the apples and walnuts. In a separate bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon. Stir the flour mixture into the wet mixture until just blended. Spread the batter evenly in the prepared baking dish.
  • Bake 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.

I got this recipe at a local apple festival a couple of years ago. These cookie bars are not overly sweet and the chunks of apple in them makes them chewy, fresh, and delicious.

2/3 c butter, room temperature
1 1/2 c brown sugar, firmly packed
2 large eggs
1 tsp vanilla extract
2 c flour
1 tsp cinnamon
2 tsp baking powder
1/4 tsp salt
1 c peeled chopped apples
1 c chopped walnuts (optional)
powdered sugar

Steps:

  • 1. Preheat oven to 350 degrees. Cream butter and brown sugar. Add eggs and vanilla, mixing well. Add flour, cinnamon, baking powder, and salt. Stir well. Stir in apples and nuts.
  • 2. Spread batter into a greased 9 by 13 inch baking pan. Bake for 30-35 minutes, until brownies test done with a toothpick and slightly browned on top. Cool completely. Dust top of the brownies with powdered sugar and cut into 24 squares.

The first time I had these I thought I had died and gone to heaven... This recipe is in the Top 5 for my FAVORITE desserts... Add a scoop of French Vanilla Ice Cream on top of one of these YUMMY brownies when they are warm, is the ULTIMATE in desserts in my opinion! 1-23-08 I did make an adjustment on this recipe. It should have been an 8x8" pan not a 9x13"... No wonder they were coming out crumbly! Also, I use 2 med. McIntosh apples for mine.

1 cup sugar
1 egg
1/2 teaspoon baking powder

4 medium apples - peeled, cored, and diced
2 tablespoons apple cider vinegar
1 cup white sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 sticks butter, melted and cooled
2 cups all-purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 pinch sea salt
2 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan and dust with flour.
  • Place apples in a bowl and sprinkle with vinegar. Set aside.
  • Whisk white sugar, brown sugar, eggs, and vanilla extract together in a large bowl until well combined and pale brown. Add melted butter and whisk until smooth. Add flour, cocoa powder, baking powder, cinnamon, nutmeg, and salt. Whisk until brownie batter is well combined.
