Roast Beef Hash with Poached Eggs and Wild Mushroom Sauce on Garlic French Bread image

6 tablespoons unsalted butter, softened
1 teaspoon Essence, recipe follows
3 teaspoons minced garlic
1 small loaf French bread, 10 to 12-inches in length, split in half lengthwise
1 pound Idaho potatoes, peeled and cubed (about 2 1/2 cups)
6 strips bacon, chopped
1 cup finely chopped yellow onions
1/2 cup finely chopped red bell peppers
3/4 pound cooked roast beef, shredded or chopped (about 3 cups)
2 tablespoons chopped fresh parsley leaves
1/2 teaspoon chopped fresh thyme leaves
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons tomato paste
1/4 cup dry red wine
1 cup beef stock
8 Poached Eggs, recipe follows
Wild Mushroom Sauce, recipe follows
Chopped green onions, garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
3 tablespoons olive oil
1/2 cup finely chopped shallots
3 cups sliced wild mushrooms, such as a shiitake, morel, chanterelle, wood ear, and/or oyster, stems trimmed and wiped clean
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons finely chopped green onions (green and white parts)
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon minced garlic
1 1/2 cups veal stock or beef stock, or low-sodium beef broth
1 cup heavy cream
3 cups water
1/2 teaspoon white vinegar
1/2 teaspoon salt
8 large eggs

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, mix together the butter, Essence, and 1 teaspoon of the garlic until creamy. Spread evenly over the French bread halves. Cut each in 1/2, for a total of 4 pieces. When 15 to 20 minutes away from serving the meal, place on a baking sheet, buttered side up, and bake until lightly toasted and bubbly, 10 to 12 minutes. Remove from the oven.
  • In a medium saucepan, place the potatoes and enough water to cover by 1-inch. Bring to a boil and cook until just tender, 8 to 10 minutes. Drain well.
  • In a large skillet, cook the bacon over medium-high until brown and crisp, 5 to 6 minutes. Remove with a slotted spoon. To the fat in the pan, add the onions and peppers, and cook, stirring, until soft, about 3 minutes. Add the remaining 2 teaspoons garlic and cook, stirring, for 1 minute. Add the potatoes and cook until starting to crisp and brown, stirring only occasionally, 7 to 8 minutes. Add the meat, parsley, thyme, salt, and pepper, and stir well. Add the tomato paste and cook, stirring, for 1 minute. Add the wine, increase the heat, and cook for 1 minute until the wine is nearly all evaporated. Add the beef stock and bring to a boil. Reduce the heat and simmer until the mixture thickens slightly, 1 to 2 minutes. Stir in the cooked bacon and remove from the heat. Adjust the seasoning, to taste.
  • Arrange 1 piece toasted French bread in the middle of each of 4 plates. Spoon the roast beef mixture over the toast and top each with 2 poached eggs. Spoon the mushroom sauce over the eggs, sprinkle with chopped green onions, and serve immediately.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

  • In a heavy medium saucepan, heat the oil over medium-high heat. Add the shallots and cook, stirring often, until soft and fragrant, 2 minutes. Add the mushrooms, salt, and pepper and cook until the mushrooms start to give off their liquid, about 3 minutes. Add the green onions, parsley, and garlic and cook, stirring often, until fragrant, about 1 minute. Stir in the stock and heavy cream and bring to a boil over high heat. Reduce the heat to medium-low and simmer until thickened to a sauce consistency, 20 to 30 minutes.
  • Serve, or cover and keep warm until ready to use.
  • In a saucepan, bring the water, vinegar and salt to a simmer over high heat.
  • Crack an egg into a cup and slide the egg gently into the water. Crack another egg into the cup and when the water returns to a boil slide this egg into the water as well. When the water returns to a simmer, reduce the heat to low and simmer until the eggs are set. Watch carefully and remove the eggs when the yolks are still soft, about 2 to 2 1/2 minutes. (Test by lifting an egg slightly out of the water on a slotted spoon and gently pressing the center with your finger; the yolk should be soft and the white firm.) Drain on paper towels. Repeat with remaining eggs.
  • (Poached eggs can be made ahead and kept immersed in a bowl of water in the refrigerator. Reheat by immersing briefly in simmering water before serving.)

SHRIMP WITH WHISKEY TARRAGON SAUCE ON FRENCH BREAD



Shrimp with Whiskey Tarragon Sauce on French Bread image

2 Tbsp butter
2 lb peeled shrimp, no tails (about 44)
1 tsp salt
1 tsp pepper
2 clove garlic, minced
1/4 c jack daniels whiskey
french bread
olive oil
WHISKEY SAUCE
3 Tbsp sweet cream butter
4 clove garlic
1/4 c minced onion
juice of 1 lemon
3 c heavy whipping cream
1 c whole milk
2 Tbsp whole grain mustard
1/2 c tarragon (adjust to taste)

Steps:

  • 1. Heat butter in a medium sauce pan and cook onion until soft and translucent. Add garlic and lemon juice.
  • 2. When garlic is just soft add heavy cream, milk, mustard and tarragon. Let sauce cook on med-low heat for 30 minutes to reduce by half, stirring occasionally
  • 3. In a large skillet heat the butter and add shrimp. Toss with salt, pepper and garlic. Cook about 80% through about 1 - 2 minutes (shrimp will continue to cook in sauce).
  • 4. While shrimp are cooking, cut French bread into ½ inch rounds and drizzle with olive oil. Toast in an oven or broiler until crisp.
  • 5. Add the whiskey to the shrimp and flambé to burn it off. Add sauce to cover shrimp in pan and reduce heat to low.
  • 6. Plate the bread toasts and top with 1 shrimp each. Drizzle sauce generously over shrimp and bread. Enjoy!

2 cups confectioners' sugar
2 tablespoons rum
2 -3 tablespoons cream or 2 -3 tablespoons half-and-half

  • Bread Pudding: In large bowl, combine eggs, condensed milk,.
  • water, butter, cinnamon and vanilla; beat well.
  • Stir in bread cubes and raisins, if desired, moistening completely.

Caramel Sauce:
7 eggs, beaten
2 1/2 cups half and half
1/4 cup sugar
1 cup of white chocolate chips
1 tlb. vanilla extract
1/2 french loaf, broken into small pieces
1 stick butter, salted
1/4 cup light brown sugar, packed
1/2 cup pure maple syrup (I used my home canned pear almond syrup)
1 tsp. vanilla extract
1/2 cup heavy cream

Steps:

  • Preheat oven to 350 degrees. Beat the eggs and add the half and half. Add sugar and vanilla, beat until smooth. Add bread and white chocolate chips. Stir. Pour into greased baking dish. Make sure the dish you are using will fit into a larger dish. You'll need to bake the bread pudding in a water bath. Sit the dish with the pudding into the larger pan. Place both pans onto the top rack of the oven. Pour warm water into the larger dish until it reaches approximately 3/4 the way up the smaller pudding dish. Bake at 350 degrees for one hour. Allow to sit in the oven for 10 additional minutes after turning the heat off. Carefully remove the dishes from the oven. Remove the pudding from the water bath and discard the water. Add the caramel sauce to the pudding or serve it one the side. For the caramel sauce: Melt the butter in a sauce pan. Add the brown sugar, maple syrup and vanilla. FRENCH BREAD PUDDING WITH JACK DANIELS SAUCE



French Bread Pudding With Jack Daniels Sauce image

This recipe is adapted from "The Silver Palate" by Julee Rosso and Sheila Lukins. I have been making it for years and literally am not allowed to come to family holiday dinners without this bread pudding in tow.... or maybe just the sauce ;o) It is super easy to make and you will get rave reviews! Remember to purchase the french bread several days in advance so that it gets very dry and stale - this is very important to the texture of the bread pudding.

1 loaf French bread, stale
1 quart milk
10 tablespoons unsalted butter, softened to room temperature
4 eggs
1 1/2 cups granulated sugar
2 tablespoons vanilla
1 cup craisins or 1 cup sultana
1 cup water
1 cup confectioners' sugar
1/4-1/2 cup Jack Daniels Whiskey

Steps:

  • Crumble the bread into a bowl. Pour the milk over it and let stand for one to two hours. I've found that the longer it soaks in the milk, the better the end result. Preheat the oven to 325 degrees. Grease a 9-by-13-by-2-inch baking dish with 1 to 2 tablespoons of the butter.
  • In another bowl, beat together 3 eggs, the granulated sugar and the vanilla. Microwave the dried fruit with the 1/4 cup of Jack Daniels for one to two minutes on high, or until plumped. Drain Jack Daniels and reserve for another use, then cool fruit for a few minutes and stir in to the egg mixture, then stir the egg mixture into the bread and milk, taking care not to break up the soaked bread.
  • Pour into the prepared baking dish, place on the middle rack of the oven, and bake until browned and set, about 1 hour 10 minutes. Cool to room temperature.
  • To make sauce, stir 8 tablespoons butter and confectioners' sugar together in the top of a double boiler over simmering water until sugar is dissolved and mixture is very hot. Remove from the heat. Beat the remaining egg well and whisk it into the sugar mixture. Remove pan from base and continue beating until sauce has cooled to room temperature. Add Jack Daniels to taste (we like it pretty strong!).
  • To serve, preheat broiler. Cut pudding into squares and transfer each square to a heatproof serving dish. Spoon whiskey sauce over pudding and run under broiler until bubbling. Or, alternatively, you can just serve the pudding warm with the sauce spooned over. Be careful if rewarming the sauce in the microwave as you can 'scramble' the egg and the sauce turns an unappetizing grayish color and it thickens - while it still tastes great, its not very pretty.

FRENCH BREAD SAUCE

Double cream gives this traditional bread sauce an extra touch of Christmassy indulgence

200g stale French stick
700ml/1¼ pints whole milk
1 small onion , peeled and studded with 6 cloves
1 bay leaf
generous knob of butter
pinch of ground allspice
3 tbsp double cream , plus extra to serve

Steps:

  • Shave the light brown crust from the outside of the French stick with a bread knife and discard it. Cut the bready centre into cubes, about 5cm across.
  • In a saucepan, bring the milk, onion, bay leaf, butter, allspice and 3 tbsp of cream to the boil, reduce the heat then add the diced bread.
  • Gently simmer, uncovered, for 5 minutes. Add a little salt and freshly ground black pepper, then allow to cool and remove the onion and bay leaf. The sauce can be refrigerated in a covered container overnight.
  • To serve, warm through gently in a pan, adding extra double cream to give a light, creamy consistency. Grind over some black pepper and serve.

1 loaf French bread
1 quart milk
3 eggs
2 cups sugar
2 tablespoons vanilla extract
1 cup raisins
3 tablespoons melted margarine
Whiskey Sauce
1 cup sugar
1/2 cup butter or margarine
1 egg, beaten
2 ounces bourbon whiskey

Steps:

  • Preheat oven to 350 F. Soak bread in milk. Crush with hands to make sure milk is soaked through. Add eggs, sugar, vanilla, raisins and stir well. Pour margarine in bottom of heavy 9 x 14 baking pan. Add bread mixture, and bake till very firm, approximately 40 minutes. Cool the pudding, cube it and put in individual dessert dishes. When ready to serve, add whiskey sauce and heat under broiler for a few minutes. Whiskey Sauce: Cream sugar and butter and cook in a double boiler until very hot and well dissolved. Add well-beaten egg and whip very fast so egg doesn't curdle. Cool and add whiskey.
