This classic French potato gratin dish is world famous, and rightly so! I am quite happy to have this as a main meal, with just some crusty bread and a large mixed salad on the side. I have heard that this famous dish was created as a way of encouraging the "Dauphin" (the young prince destined to become King Henri II), to eat up his vegetables, hence the name! Maybe - it is certainly just as popular with children, as it is with adults. Try to slice the potatoes as thinly as possible for the best results. A wonderful accompaniment for all sorts of roast meats, stews, casseroles and poultry. This recipe is not strictly French, using as it does a Swiss cheese.

3 lbs waxy potatoes, peeled and thinly sliced (such as Desiree, Golden Wonder, Maris Piper, Idaho or King Edward)
6 ounces gruyere cheese, grated
3/4 pint double cream
salt
fresh ground black pepper
2 -4 garlic cloves, peeled and crushed
2 sprigs fresh thyme
1 ounce butter
cheese, for topping (optional)

Steps:

  • Preheat the oven to 300F/150C/gas mark 2.
  • Take a heavy-bottomed dish or an ovenproof gratin dish (a Le Creuset is ideal - the potatoes tend not to catch), and grease it will with some of the butter.
  • Layer the potato slices in the dish, slightly overlapping each other, seasoning lightly with the salt and pepper, and sprinkling a liberal amount of cheese on each layer.
  • Sprinkle cheese on the top of the last layer.
  • Put the double cream, garlic and sprigs of thyme in a pan and bring to them gently to the boil, then remove the thyme and pour hot cream over the potatoes.
  • Dot the top of the gratin with the remaining butter and some extra cheese if you wish, and bake for about 1 hr to 1 1/2 hrs, or until the potatoes are soft, and the top is crispy and golden brown.
  • Serve bubbling hot as a main meal or as an accompaniment.

FRENCH ONION SOUP - BEEF AU GRATIN RECIPE



French Onion Soup - Beef Au Gratin Recipe image

1/2 c butter
4 c thinly sliced onions
1 lb sirloin cubes
3 T flour
1 t cumin
1 T dark brown sugar
1 t salt
1/2 t pepper
1 qt beef broth
1 c shredded mozzarella cheese
1/2 c grated parmesan cheese

Steps:

  • Saute onions in melted butter; about 15-20 mins. Remove onions to bowl and brown beef. Return onions to pan. Mix flour, sugar, cumin, salt and pepper; add to pan and stir 1 min. Gradually add broth, stirring; 10 mins. Place 1/2 c noodles in each bowl; add beef mixture. Stir cheeses together and sprinkle over beef. Broil until cheese is melted and lightly browned. About 5 minutes.

1 lb ground beef
1 large onion, chopped
2 celery ribs, chopped
1/2 cup chopped green pepper
1 (5 1/4 ounce) package au gratin potatoes
1 (10 3/4 ounce) can tomato soup, undiluted
1 teaspoon Worcestershire sauce
1 3/4 cups water
2/3 cup milk

Steps:

  • I large skillet, cook the beef, onion, celery and green pepper until meat is no longer pink and the veggies are tender. Drain.
  • In a greased 2-1/2 quart baking dish, combine beef mixture, potatoes with contents of sauce mix, soup and Worcestershire sauce.
  • Stir in the water and milk.
  • Bake uncovered at 400 degrees for 45-50 minutes or until potatoes are tender.

This is another recipe that my mother made for us. Mother could always make a great meal even while being very frugal.

Number Of Ingredients 11

1 1/2 cups canned corned beef, cut up
1/3 cup minced celery
1/4 cup minced onion
1 teaspoon vegetable oil
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1 cup fresh breadcrumb
3 tablespoons butter, melted
1 egg
1/8 teaspoon ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Cut up corned beef into small cubes. Set aside.
  • In sauté pan, lightly sauté onions, celery in the vegetable oil, just until soft. Let cool approximately 10-15 minutes.
  • Stir together corned beef, sautéed vegetables, egg. Set aside.
  • In same sauté pan, melt butter. Stir in flour and stir constantly for 1 minute. Add milk to make roux; cook until thickened. Season with ground black pepper. Remove from heat and stir into meat mixture.
  • Place in greased 8x8-inch baking dish.
  • Mix bread crumbs with 3 tablespoons melted butter and sprinkle over the top of corned beef mixture.
  • Bake until bubbly - approximately 30 minutes.
