This great cake has a ton of apples and a modest amount of sugar. Let the apples sweeten up the cake for you! This is so good. Don't add cinnamon, it wouldn't be French.

2 eggs
¾ tablespoon vanilla extract
3 tablespoons rum
¾ stick butter, softened, divided
¾ cup all-purpose flour
¾ teaspoon baking powder
1 pinch salt
4 cups chopped peeled apples, or more taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9-inch springform pan.
  • Combine sugar, eggs, and vanilla extract in a bowl; beat with an electric mixer until smooth. Mix in rum. Mix in 1/2 of the butter.
  • Combine flour, baking powder, and salt together in a separate bowl. Add 1/2 of the flour mixture to the egg mixture; mix well. Mix in remaining butter and flour. Fold in apples.
  • Scrape batter into the prepared pan. Smooth the top gently.
  • Bake in the preheated oven until top is golden brown and a toothpick inserted into the center comes out clean, 50 to 60 minutes.

1/4 cup (1/2 stick) unsalted butter
1 3/4 cups sugar
1/3 cup water
3/4 teaspoon ground cinnamon
2 large Granny Smith apples (about 1 1/4 pounds), peeled, cored, thinly sliced
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3 large egg yolks
2 large eggs
2 tablespoons Calvados, applejack or other brandy
2 teaspoons vanilla
1/2 cup (1 stick) unsalted butter, melted

Steps:

  • Preheat oven to 350°F. Butter 9-inch-diameter cake pan with 2-inch-high sides. Coat pan with sugar; tap out excess. Melt 1/4 cup butter in heavy large skillet over medium-high heat. Stir in 3/4 cup sugar, water and cinnamon and bring to boil. Add apples and cook until apples are just tender, turning frequently, about 15 minutes. Remove apples, using slotted spoon, and arrange decoratively in bottom of pan. Continue boiling liquid in skillet until thick and syrupy, about 4 minutes. Pour over apples.
  • Sift flour, baking powder and salt into small bowl. Whisk remaining 1 cup sugar, egg yolks, eggs, Calvados and vanilla in large bowl to blend. Gently stir in dry ingredients. Fold in 1/2 cup melted butter. Pour batter over apples in pan. Bake until toothpick inserted into center of cake comes out clean, about 45 minutes. Cool cake in pan 5 minutes. Run small sharp knife around side of pan to loosen cake. Turn cake out onto platter. Serve warm or at room temperature.

1 1/2 lb granny smith apples, peeled, cored, cut into small pieces
1 Tbsp calvados, or apple brandy or white rum or omit
1 tsp lemon juice, fresh
1 c plus 2 tablespoons all purpose flour
1 c plus 1 tablespoon granulated sugar
2 tsp baking powder
1/2 tsp salt
1 large egg-plus 2 more large yolks
1 c vegetable oil only
1 c whole milk
1 tsp vanilla extract
garnish with sifted powdered sugar,optional

Steps:

  • 1. Adjust oven rack to lower-middle and heat oven to 325^. Spray a 9-inch springform pan with vegetable spray. Place pan on a rimmed baking sheet lined with foil. Place chopped apples into microwave safe place for about 3 minutes. Toss apples with the Calvados and lemon juice and set aside to let them cool for at least 20 minutes.
  • 2. In a medium bowl whisk 1 cup only of the flour, only 1 cup of the sugar,baking powder, and salt. In a second bowl, whisk the egg, oil, milk and vanilla together until smooth.
  • 3. Add dry ingredients to wet ingredients and whisk until just combined. Transfer 1 cup of batter to another bowl and set aside.
  • 4. Now to the large bowl of batter add the 2 extra egg yolks and whisk to combine. Using a spatula, gently fold in the cooled apples. Evenly spread batter in the prepared pan to the edges, gently pressing on apples to make a compact layer and smooth surface.
  • 5. Whisk remaining 2 Tablespoons flour into the 1 cup of reserved batter. Pour over batter in pan and spread evenly to pan edges and smooth surface. Sprinkle remaining Tablespoon of granulated sugar evenly over cake.
  • 6. Bake until center of cake is set and toothpick inserted in center comes out clean and top is golden brown, about 1 hour and 15 minutes. Transfer pan to wire rack; let cook for 5 minutes. Run knife around sides of pan so top does not crack as it cools completely, 2 to 3 hours. Dust lightly with powdered sugar, cut into wedges and serve.
  • 7. Note: Adding the extra flour creates a tender airy top. Adding the 2 extra yolks creates a creamy, dense custard bottom.

FRENCH-STYLE APPLE RHUBARB CAKE

Steps:

  • Preheat oven to 350; Butter& flour 2 8" round cake pans.
  • Remove 3/4 cup apple slices from pie filling; reserve.
  • At low speed beat cake mix, eggs, oil and remaining pie filling 30 seconds; increase speed to medium; beat 2 minutes.
  • Divide batter between pans; bake 30 minutes or until toothpick comes out clean; cool 15 minutes.
  • Remove from pans; cool completely on racks.
  • Meanwhile spread nuts on ungreased baking sheet; bake until lightly browned, about 6 minutes; cool.
  • Stire cinnamon into frosting.
  • Place 1 cake layer on serving plate; spread with 3/4 cup frosting; arrange reserved apple slices from filling over frosting leaving 1" border around edge; top with remaining cake layer.

The microwaved apples should be pliable but not completely soft when cooked. To test for doneness, take one apple slice and try to bend it. If it snaps in half, it's too firm; microwave it for an additional 30 seconds and test again. If Calvados is unavailable, 1 tablespoon of apple brandy or white rum can be substituted. I have not made this yet, but with the too oily review, I went on line and looked at others who have made this and what they said. Some of them have also had this same problem, but note some had also changed to 2% milk. This might have also affected the batter. Other say they did not have this problem. One advised this might been because he had gotten the oil to emulsified into the batter using an immersion blender. They bakers with the too oily cakes advised they will cut down the oil to 1/2 cup add 1/2 cup apple sauce if they make again. Note this is more cutard like then a normal American cake texture.

3/4 cup all-purpose flour
3/4 teaspoon baking powder
1 pinch salt
4 large apples (if you can, choose 4 different kinds)
2 large eggs
3/4 cup sugar
3 tablespoons dark rum
1/2 teaspoon pure vanilla extract
1/4 teaspoon ground cardamom (optiona)
3/4 teaspoon finely grated lemon zest (optional)
8 tablespoons unsalted butter, melted and cooled

Steps:

  • Center a rack in the oven and preheat the oven to 350 degrees F. Generously butter an 8-inch springform pan and put it on a baking sheet lined with a silicone baking mat or parchment paper.
  • Whisk the flour, baking powder, and salt together in small bowl.
  • Peel the apples, cut them in half and remove the cores. Cut the apples into 1- to 2-inch chunks.
  • In a medium bowl, beat the eggs with a whisk until they're foamy. Pour in the sugar and whisk for a minute or so to blend. Whisk in the rum, vanilla, cardamom and lemon zest. Whisk in half the flour and when it is incorporated, add half the melted butter, followed by the rest of the flour and the remaining butter, mixing gently after each addition so that you have a smooth, rather thick batter. Switch to a rubber spatula and fold in the apples, turning the fruit so that it's coated with batter. Scrape the mix into the pan and poke it around a little with the spatula so that it's evenish.
  • Slide the pan into the oven and bake for 50 to 60 minutes, or until the top of the cake is golden brown and a knife inserted deep into the center comes out clean; the cake may pull away from the sides of the pan. Transfer to a cooling rack and let rest for 5 minutes.
  • Carefully run a blunt knife around the edges of the cake and remove the sides of the springform pan. (Open the springform slowly, and before it's fully opened, make sure there aren't any apples stuck to it.) Allow the cake to cool until it is just slightly warm or at room temperature. If you want to remove the cake from the bottom of the springform pan, wait until the cake is almost cooled, then run a long spatula between the cake and the pan, cover the top of the cake with a piece of parchment or wax paper, and invert it onto a rack. Carefully remove the bottom of the pan and turn the cake over onto a serving dish.

  • Preheat oven to 425°F
  • Grease a deep 8" pan or ovenproof dish -- and cover the bottom well with the apples.
  • Sprinkle the fruit with 2/3 cup sugar, cinnamon and the juice and zest of the lemon.
  • Lightly mix in 1 tbsp flour. Set aside.
  • Sift flour. Resift with sugar, baking powder and salt.
  • Beat and add the egg yolks, melted butter and milk.
  • Beat these ingredients with swift strokes until blended.
  • Cover the fruit with the batter.

  • Reverse it on a platter. Cool slightly.

A recipe one of my students did as an assignment. I promised her I would make it when I got home, it was so fast and easy and had really ordinary things in it. It is a nice recipe that makes a kind of apple coffee cake. Would be great for breakfast. She suggests serving it with ice cream or creme anglaise. I like it right out of the pan.

3/4 cup sour cream (maybe even heavy cream or milk) or 3/4 cup yogurt (maybe even heavy cream or milk)
3 eggs
2/3 cup sugar, more if you use sour cream

2 apples, diced
2 teaspoons cinnamon, separated
1 teaspoon vanilla

Steps:

  • Mix the dry ingredients, reserve 1 tsp cinnamon.
  • Mix the wet ingredients in a separate bowl.
  • Combine.
  • Spray or butter and flour a large glass pie dish.
  • Pour in batter. Add diced apples on top. I didn't peel them, but I was being lazy. Celine suggested making pretty patterns on the top of the batter with the apples. I just tossed them on, then pushed them down slightly.
  • Sprinkle with the reserved tsp of cinnamon.
  • Bake at 375° in a preheated oven for about 35 minutes or until done.
  • Eat warm or cold.

1 large egg plus 2 large yolks
1 cup canola oil or coconut oil
1 cup whole milk, or dairy free milk of your choosing

  • Directions Place the oven rack in the lower third of the oven and set the temperature to 325 degrees. Spray a 9-inch springform pan with gluten-free cooking spray and place on a foil lined, rimed baking sheet. Place apple slices on a microwave safe plate or pie dish, cover and microwave on high for 3 minutes, or until apples are slightly tender and pliable. 1 cup self-rising flour

4 tsp. water
1/2 lemon
6 apples
3 eggs
8 oz. (2 sticks) butter, melted
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 cup flour
1 tub (8 oz.) PHILADELPHIA Honey Pecan Cream Cheese Spread
1 cup whipping cream
1/4 cup powdered sugar

Steps:

  • Heat oven to 350ºF.
  • To prepare the caramel sauce, heat 3/4 cup granulated sugar with 4 tsp. water in a 12-inch nonstick ovenproof skillet. When the sugar becomes light brown, add the juice of 1/2 lemon. Remove from heat.
  • Peel, core and thinly slice the apples, then arrange in an attractive circular overlapping pattern on the caramel.
  • In a large mixing bowl, beat the eggs with remaining 3/4 cup granulated sugar. Add the butter, PHILADELPHIA Cream Cheese (4 oz.) and flour; continue beating until you have a creamy batter.

Steps:

  • • Prep time: 15 minutes • Cook time: 35 minutes • Total time: 50 minutes • Servings: 8 1. Preheat oven to 350 2. Prepare a caramel: heat 3/4 cup sugar with 4 teaspoons water. when the sugar becomes light brown add the juice of 1/2 lemon and remove from heat 3. Coat the bottom and sides of a spring form pan with the caramel. 4. Peel, core and thinly slice the apples and arrange in an attractive circular overlapping overlaping pattern on the caramel. 5.
