1 cup flour
1 egg yolk
1 1/4 cups milk
1 tablespoon butter
Dulce de leche, recipe follows
1/4 cup rum
1 tablespoon sugar
4 cups milk
2 cups sugar
1 teaspoon sodium bicarbonate
Vanilla extract

Steps:

  • Mix flour, egg yolk, and milk into a smooth, thin crepe batter. Heat a crepe pan on medium low and melt 1/4 teaspoon of the butter. Add 1 tablespoon of batter, and flip the crepe after it sets. Fill it with dulce de leche, and set aside. After making all the crepes, heat the rum with sugar, when it ignites, pour over the crepes and serve at once.
  • Scald milk in heavy bottom sauce pan. Add all other ingredients, cook on medium low until it turns into caramel, about 1 hour.

  • Make Margherita Pizzas; before adding cheese, top with olives, artichoke hearts, ham and sauteed mushrooms in 4 sections.
  • Margherita Pizzas
  • Stretch dough into two thin 9-inch rounds. Top each with 1/2 cup crushed San Marzano tomatoes, dried oregano, salt, pepper and olive oil; bake until golden. Sprinkle with 1/2 pound diced mozzarella, torn basil and salt. Bake until the cheese melts, then drizzle with olive oil.
  • How to make a pizza:
  • Step 1:Place a pizza stone or an inverted baking sheet on the lowest oven rack and preheat to 500 degrees.
  • Step 2: Stretch 1 pound dough on a floured pizza peel, large wooden cutting board or parchment paper.
  • Step 3: Top as desired, then slide the pizza (with the parchment paper, if using) onto the stone or baking sheet. Bake until golden, about 15 minutes.
  • Pizza Dough
  • Whisk 3 3/4 cups flour and 1 1/2 teaspoons salt. Make a well and add 1 1/3 cups warm water, 1 tablespoon sugar and 1 packet yeast. When foamy, mix in 3 tablespoons olive oil; knead until smooth, 5 minutes. Brush with olive oil, cover in a bowl and let rise until doubled, about 1 hour 30 minutes. Divide into two 1-pound balls. Use 1 pound per recipe unless noted.

This is chocolate pudding by another name, but somehow it sounds better in Italian. But frankly, language is irrelevant here: we're talking pure, all-encompassing bliss. When you eat it cooled, it is like chocolate satin cream and almost shocking in its pleasurable intensity, but I love it, too, hot and straight out of the pan when it is like the best hot chocolate you've ever had, in spoonable form.

1 cup whole milk
1/2 cup heavy cream
1/3 cup caster sugar
1 tablespoon cornstarch
1/3 cup cocoa
2 tablespoons boiling water
2 egg yolks
1 teaspoon vanilla extract
2 ounces dark chocolate, finely chopped

Steps:

  • Put the kettle on, and warm the milk and cream together either in a saucepan or microwave.
  • Put the sugar and cornstarch into another saucepan and sieve in the cocoa. Add the 2 tablespoons of boiling water and whisk to a paste.
  • Then whisk in the egg yolks, 1 at a time, followed by the warmed milk and cream, and then the vanilla extract.
  • Scrape down the sides of your pan and put it on the heat, cooking and whisking for about 3 to 4 minutes until the mixture thickens - if it helps, think of consistency like mayonnaise.
  • Take off the heat and whisk in the finely chopped chocolate, before pouring into 4 small cups or glasses each with a yield of about 2/3 of a cup.
  • Cover the tops of the cups with clingfilm/clingwrap (plastic wrap) to stop them from forming a skin, and then refrigerate once they are cooler. Make sure they are not still fridge-cold when you serve them. You can add a blob of cream on top if you like.

POUND CAKE PETIT FOURS

One 1-pound frozen all-butter pound cake, thawed
Two and a half 16-ounce tubs ready-made classic vanilla frosting (not whipped)
Pink and green gel food coloring, for the frosting
10 whole almonds
10 maraschino cherry halves

Steps:

  • Line a large baking pan with parchment paper, then set a grid cooling rack inside.
  • Cut the top and bottom crusts from the pound cake (to remove any browned edges) using a serrated knife or cake leveler. Cut the cake in half lengthwise into two 1/2-inch-thick slabs. Lay them on a work surface and stamp about ten 2-inch shapes from each slab with a cookie cutter. Arrange on the prepared rack.
  • Remove the lids and foils from the tops of each frosting tub and microwave each in 30-second intervals until melted and pourable, about 1 minute total. Stir pink food coloring into one tub until a vibrant color is achieved; add green color to another tub and stir. (You'll leave one tub untinted.)
  • Liberally pour the pink frosting over 10 pieces of cake until they are completely coated, turning the pan to see if all sides get coated well. Pour the green over 10 more pieces in the same manner. Drizzle the white frosting over the pink and green cakes using a spoon. Let stand for about 2 minutes, then top ten cakes with whole almonds and ten cakes with the cherries.
  • Let stand until set, about 30 minutes, or transfer to the refrigerator to speed the setting, about 15 minutes. Place each petit four inside a cupcake paper and display on a serving tray.
