1 cup flour
1/2 cup butter
1/4 cup sugar
1 cup pecans
1 cup powdered sugar
8 ounces cream cheese
5 ounces Cool Whip
1 (6 ounce) box Jell-O chocolate pudding and pie filling
3 cups milk
7 ounces Cool Whip

Steps:

  • Mix first thee ingredients.
  • Add fine chopped pecans.
  • press into 9x13 pan.
  • Bake shell at 350 for 15 min.
  • Soften cheese, then blend in sugar and Cool whip.
  • Spread over cooled crust.
  • Make pudding as directed.
  • I like cooked pudding best but you can use instant.
  • You can also use 2 small packages.
  • And any other flavor you like.
  • Spread on top.
  • You can sprinkle chopped pecans or chocolate ants on top.
  • Refrigerate.

My aunt has made this for holidays for as long as I can remember. My cousins and I will butt heads for the last piece. Good thing she usually makes two!

1 1/2 cups flour
3/4 cup butter
3/4 cup chopped pecans
2 (8 ounce) packages cream cheese
2 cups powdered sugar
1 teaspoon vanilla
3 cups Cool Whip, divided
3 (4 ounce) packages instant chocolate pudding mix
5 cups cold milk

Steps:

  • Cut the butter into the flour to form crumbs, then add the pecans
  • Press mixture into a greased 9x13 pan.
  • Bake at 375 degress for 15 minutes and set aside to cool.
  • On medium speed, beat the cream cheese, vanilla and powdered sugar until creamy.
  • Change speed on mixer to low, and mix in 2 cups of the Cool Whip.
  • Spread cream cheese mixture over cooled crust.
  • Mix the pudding mix with the milk for 2 minutes.
  • Pour over cream cheese layer.
  • Spread remaining cup of Cool Whip over the top, being sure to spread to the edges to seal.
  • Garnish with additional chopped pecans and/or chocolate shavings, if desired.
  • Refrigerate at least 2 hours or overnight before serving.

This great recipe was my mom's "special" pecan pie for special occasions. I'm not sure where it came from, but since we had our own pecan tree, Mom tried every pecan pie recipe around, and this one stood the test of time.

8 ounces cream cheese, softened
1/3 cup sugar
1 teaspoon vanilla
1 egg
1 1/4 cups pecan pieces
3 eggs
1 cup light corn syrup
1 teaspoon vanilla
1/2 cup sugar
1 unbaked pie shell

Steps:

  • Beat bottom layer ingredients together until smooth.
  • Pour into an unbaked pie shell.
  • Mix top layer ingredients and pour gently over the cream cheese mixture.
  • Bake in preheated 350 degree oven for 50 to 60 minutes.
  • As it bakes, the bottom layer will rise to the top.

Yield Makes one 9-inch pie

Number Of Ingredients 12

All-purpose flour, for dusting
Tart Shell Dough
6 large eggs
1 1/4 cups light corn syrup
1 1/4 cups packed dark-brown sugar
5 tablespoons unsalted butter, melted and cooled
1 tablespoon pure vanilla extract
2 teaspoons fresh lemon juice
1/4 teaspoon salt
2 1/2 cups coarsely chopped toasted pecans (about 10 ounces), for filling
2 cups pecan halves (about 8 ounces), lightly toasted, for topping
Whipped cream, for serving

Steps:

  • Set a 9-inch cake ring (with 1 1/2-inch sides) on a baking sheet lined with parchment paper. On a lightly floured work surface, roll out dough to a 13-inch round. Fit dough into ring; trim edges. Freeze 30 minutes.
  • Preheat oven to 400 degrees. Whisk together eggs, syrup, and sugar in a medium bowl until smooth. Whisk in butter, vanilla, lemon juice, and salt. Stir in chopped pecans. Pour filling into shell. Arrange pecan halves on top in concentric circles.
  • Bake, tenting with foil after 15 minutes, until filling is set, about 1 hour. Let cool at least 2 hours on a wire rack. Serve with whipped cream.
